MUMBO SAUCE - D.C.'S FAMOUS SWEET & SOUR SAUCE



Mumbo Sauce - D.C.'s Famous Sweet & Sour Sauce image

Apparently, this sweet-and-sour condiment came to Washington D.C. via Chicago, where it somehow became a staple in Chinese take-out restaurants served as a condiment with fried chicken wings, among other things. This is my version.

1 (6 ounce) can tomato paste
⅔ cup ketchup
⅔ cup white sugar
1 cup pineapple juice
1 cup distilled white vinegar
1 lemon, juiced
¼ cup honey
2 tablespoons soy sauce
1 ½ tablespoons freshly grated ginger
1 teaspoon cayenne pepper

Steps:

  • Place tomato paste, ketchup, sugar in a saucepan. Pour in pineapple juice, white vinegar, lemon juice, and honey into the pan. Add soy sauce, grated ginger, and cayenne pepper. Whisk together thoroughly. Place pan over medium-high heat. As soon as mixture starts to bubble, reduce heat to medium-low and simmer, whisking occasionally, until mixture has thickened slightly, about 10 minutes.
  • Remove pan from heat; allow to cool about 10 minutes or so. Pour sauce through a fine strainer to eliminate solids.

Manuka Mumble image

A unique topping for hot cereal (like oatmeal) and other hot dishes. Or serve for snacking with nuts and dried fruit (excellent with walnuts and dried black mission figs)... a snackin' mumble (manuka plus jumble). A chilled, glass quart measuring cup is a good container for hand mixing these thick ingredients.

1 ½ cups extra-virgin coconut oil
½ cup manuka honey
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg

Steps:

  • Combine coconut oil and honey in a chilled bowl.
  • Line a small tray with a sheet of plastic wrap; evenly spoon oil-honey mixture on top. Cover with another sheet of plastic wrap and press down to a 1/2-inch thickness using a tray of similar size. Refrigerate for 8 hours to overnight.
  • Remove top layer of plastic wrap and cut hardened mixture into bite-size squares. Place squares in the bottom of a large, chilled bowl. Sprinkle 1 1/2 teaspoons cinnamon and 1/2 teaspoon nutmeg over squares, stir lightly. Sprinkle remaining 1 1/2 teaspoons cinnamon and 1/2 teaspoon nutmeg on top. Refrigerate.

  • Bruise mint with lime juice.

  • Add mint and lime.
  • Pour over vodka.
  • Stir well.
  • Top with ginger beer.
