Bake a batch of Ree Drummond's Brown Sugar Oatmeal Cookies from Food Network.

Provided by Ree Drummond : Food Network

Categories     dessert

Time 30m

Yield 24 cookies

Number Of Ingredients 8

2 cups packed dark brown sugar
1 cup (2 sticks) salted butter, softened
2 teaspoons vanilla extract
2 eggs
1 1/2 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
3 cups old-fashioned oats

Steps:

  • Preheat the oven to 350 degrees F.
  • In the bowl of an electric mixer (or using a hand mixer), beat together the brown sugar and butter until fluffy. Beat in the vanilla. Add the eggs one at a time, scraping the bowl after each one.
  • Mix together the flour, salt and baking soda in a medium bowl. Add it into the creamed mixture in 2 to 3 batches, mixing until just combined. Mix in the oats until just combined.
  • Use your preferred size cookie scoop (or a regular spoon) to drop portions of dough onto baking sheets, spacing them a couple inches apart. Bake until dark and chewy, 12 to 13 minutes. If you'd like a crispier cookie, just cook a little longer!
  • Let the cookies cool slightly on the baking sheets, then transfer onto a plate for serving.

MAPLE BROWN SUGAR OATMEAL COOKIES

MAPLE BROWN SUGAR OATMEAL COOKIES image

I chose these as a last-minute addition to my Thanskgiving 2015 menu after seeing a recipe online and remembering that a friend had never tried maple syrup before. Turns out, they were even more popular than the store-bought dessert and went like hotcakes! Even my significant other, who doesn't like maple syrup and isn't a big fan of oatmeal, couldn't stop eating them! I found the original oatmeal amount a bit much, so I've reduced it here. I also found these cookies were better the day after being baked. I also left the batter to sit in the fridge overnight, although the original recipes says to let it sit for at least 3 hours to allow the oatmeal to soften up and absorb the flavors.

Time 35m

Yield 40 cookies (approx)

Number Of Ingredients 10

3/4 cup all-purpose flour
3/4 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon baking soda
8 tablespoons unsalted butter, melted
3/4 cup packed brown sugar
1/4 cup plus 1 tablespoon grade b maple syrup
3/4 teaspoon vanilla extract
1 large egg
1 1/4 cups old fashioned oats (you can adjust this quantity to make the cookies thicker, the original recipe called for 1 3/4 cups)

Steps:

  • In a medium bowl, whisk together flour, cinnamon, salt, and baking soda; set aside.
  • In a large bowl, whisk together melted butter, brown sugar, maple syrup, and vanilla. Let butter cool for 1 minute, then whisk in egg. Add dry ingredients to bowl and stir until combined. Stir in oats. Press plastic wrap over dough in bowl and let chill in refrigerator from 3 hours to overnight to allow oats to soften up and soak up flavors.
  • Place oven racks in upper and lower thirds of oven. Preheat oven to 350°F. Line two baking sheets with parchment paper. Drop dough by rounded tablespoon onto prepared baking sheet. Bake until almost golden, about 13-15. Let cool on sheet for 5 minutes then transfer to a wire rack to finish cooling. Cookies can be stored in a sealed container at room temperature for up to a week.

INSTANT OATMEAL PACKET COOKIES

Instant Oatmeal Packet Cookies image

Everyone seems to have a box of instant oatmeal packets hiding in their pantry or kitchen, sadly forgotten. While they make a quick breakfast, a lot of people get tired of the same old flavors of everyday oatmeal. Rather than throwing away money and letting oatmeal packets become trashcan bound, I try to re-purpose them. Instant oatmeal packets aren't just for breakfast, they also make wonderful, chewy oatmeal cookies unlike any other. This recipe is great because you can mix and match different combinations of oatmeal packet flavors together to create a different cookie every time. My favorites are the Maple & Brown Sugar mixed with Apples and Cinnamon, or Strawberries and Cream with Blueberries and Cream.

Yield 15 serving(s)

Number Of Ingredients 12

1 teaspoon honey (optional)

1 egg
1/4 teaspoon baking powder
1/2 teaspoon baking soda
1 cup all-purpose flour
1/2 cup raisins (optional) or 1/2 cup nuts (optional)

  • Preheat oven to 350°. Beat softened butter with the white sugar and brown butter until smooth and creamy, then beat in the milk and egg until smooth. Meanwhile, stir the dry ingredients together in a separate bowl. Gently mix in the dry ingredients into the wet ingredients until evenly blended. Mix in the nuts or raisins (if using).
  • Drop by rounded tablespoonfuls about 2-inches apart on prepared baking sheets, flattening the tops of the cookie dough until they're about 1/4 inch thick.
  • Bake for about 8-10 minutes, or until the cookies are light brown and crispy on the edges. Cool on baking sheets 2 minutes. Place on cooling rack to cool completely.
  • Makes about 15-18 cookies.

BACON OATMEAL BREAKFAST COOKIES WITH MAPLE GLAZE

Bacon Oatmeal Breakfast Cookies With Maple Glaze image

All the flavors that make up the perfect breakfast in one cookie!

Provided by Moonsinger38

Categories     Breakfast and Brunch     Meat and Seafood     Bacon

Time 1h15m

Yield 18

Number Of Ingredients 14

½ pound bacon
½ cup butter, softened
½ cup white sugar
½ cup packed brown sugar
1 egg
½ teaspoon vanilla extract
1 cup all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
1 ½ cups quick cooking oats
⅞ cup confectioners' sugar
1 ½ tablespoons water, or as needed
1 ½ tablespoons real maple syrup

Steps:

  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. When cool, chop the bacon, and set aside.
  • Beat the butter, white sugar, and brown sugar together in a large mixing bowl until fluffy with an electric mixer on medium speed, then mix in egg, and vanilla extract until thoroughly combined. Whisk the flour, baking soda, salt, and cinnamon together in a bowl, and stir the flour mixture into the butter mixture. Gradually stir in the oats and bacon, about 1/3 cup of oats at a time, and cover the dough. Refrigerate at least 1 hour.
  • Preheat oven to 375 degrees F (190 degrees C). Thoroughly grease baking sheets.
  • Scoop about 1/3 cup of dough per cookie, roll into balls, and place the balls at least 3 inches apart on the greased baking sheets. Use a fork dipped in water to flatten the balls slightly.
  • Bake in the preheated oven until the cookies are golden brown with slightly browner edges, 10 to 12 minutes. Allow to cool on baking sheets 3 to 5 minutes before removing to finish cooling on racks.
  • To make glaze, whisk confectioners' sugar, water, and maple syrup together in a bowl until smooth. Let the glaze stand about 5 minutes to slightly thicken; drizzle onto the tops of the cookies. Allow glazed cookies to stand about 20 minutes to set up before storing.

COOKIE MONSTER: MAPLE BROWN SUGAR OATMEAL COOKIES
2020-08-25 Oatmeal cookies generally fall into three categories: chewy, crispy, and soft. These are in the latter category. I typically like raisins or chocolate chips in my oatmeal cookies, but these are pleasantly uniform in flavor and texture.
