1 cup vegetable oil
½ cup butter, softened
1 ½ cups white sugar
3 eggs
3 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon vanilla extract
2 cups diced apple without peel
1 cup flaked coconut
1 cup raisins
1 cup chopped walnuts
1 cup brown sugar
½ cup butter
¼ cup milk

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour one 10 inch tube pan.
  • Combine oil, butter or margarine, and sugar together. Beat well with a mixer. Add eggs, flour, baking soda, salt, and vanilla; mix well. Stir in apples, coconut, raisins, and walnuts. Pour batter in prepared pan.
  • Bake for 90 minutes. Remove cake from oven. Let it cool in the pan for a few minutes, and then remove from pan.
  • If desired, make glaze. In a small saucepan, heat brown sugar, butter or margarine, and milk. Bring mixture to boil, and stir for 1 minute. Pour over warm cake.

3 eggs
1 1/4 cups vegetable oil
1 2/3 cups sugar
1 1/2 cups pecans, chopped
3 cups tart apples, chopped
3 cups plain flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
1 cup brown sugar
4 tablespoons butter
1/4 cup milk

Steps:

  • Beat eggs and mix with sugar, oil and vanilla.
  • Combine flour, salt and baking soda and add to egg mixture.
  • Fold in apples and pecans. Pour into greased and floured tube cake pan.
  • Bake at 350 degrees for 1 hour.
  • For Frosting: Bring brown sugar, butter and milk to a boil. Boil only 2 1/2 minutes. Cool and spread on cake.

This is an award-winning recipe from the VA Tech Home Sweet Home Contest that I made up. It's a truly wonderful, rich, and delightful dessert. It's a small personal apple pie with a great crumb topping, a scoop of vanilla ice cream, and warm caramel sauce. It's a nice way to end a lovely dinner.

cooking spray
1 (8 ounce) tube refrigerated flaky biscuits (such as Pillsbury Grands!®)
1 (21 ounce) can apple pie filling
1 teaspoon vanilla extract
1 teaspoon ground cinnamon, divided
½ cup all-purpose flour
½ cup brown sugar
¼ teaspoon ground nutmeg
¼ cup butter
16 scoops vanilla ice cream
½ cup caramel ice cream topping, warmed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 16 individual muffin cups with cooking spray. Place on a baking sheet lined with parchment paper.
  • Split biscuits in half. Place 1 half in each muffin cup; press biscuit dough to cover the bottom and sides of each cup.
  • Place apple pie filling in a bowl; cut up larger pieces of apples. Mix in vanilla extract and 1/2 teaspoon cinnamon. Divide filling among dough-lined cups.
  • Combine remaining 1/2 teaspoon cinnamon, flour, brown sugar, and nutmeg in a bowl. Cut in butter with a pastry cutter until mixture is crumbly. Sprinkle over pie filling and gently press down.
  • Bake in the preheated oven until edges are golden brown and filling is bubbly, about 13 minutes. Cool for 5 minutes on the baking sheet. Carefully transfer to serving plates; cool for 5 minutes more. Top with a scoop of vanilla ice cream and a drizzle of caramel topping.

Steps:

  • TO PREPARE CAKE:
  • Preheat oven to 350*. Spray a 13x9 baking pan with nonstick cooking spray. Set aside.
  • Beat together sugar, oil, eggs and vanilla until light.
  • Sift together flour, baking soda, baking powder, salt and cinnamon.
  • Stir flour mixture into egg mixture until well-combined.
  • Stir in apple and walnuts.
  • Spread in prepared pan and bake for 1 hour and 15 minutes or toothpick clean inserted in center.
  • TO PREPARE TOPPING:.
  • Combine buter, half and half and brown sugar in a medium saucepan and bring to a boil.
  • Boil 3 minutes, stirring occasionally.
  • Cool slightly and Pierce cake with a knife a few times so topping will penetrate.
  • spread on warm cake.
  • Serve with whipped cream if want.

This moist and crumbly pie has a consistency almost like a coffee cake. As a result, unlike most pies, it's safe to cut into this one when it's slightly warm. As with all prebaked pastry crusts, it's important to cover the edges with foil or crust shields while the filling bakes, so it doesn't burn. Walnuts, almonds, or pecans work nicely with this pie.

Yield makes two 9-inch pies

Number Of Ingredients 14

1 recipe Plain Pie Pastry (page 17) or Vinegar Pie Crust (page 19), prebaked
3 eggs
2 cups sugar
1 1/2 cups light vegetable oil
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon salt
3 cups diced apples
1 cup chopped raw or toasted nuts
1/2 cup unsalted butter, melted
1 cup brown sugar
1/4 cup milk

Steps:

  • Preheat the oven to 350°F.
  • Beat the eggs, sugar, oil, and vanilla in a large bowl until thoroughly combined. Add the flour, baking soda, cinnamon, and salt and mix thoroughly. Stir in the apples and nuts until evenly combined, then spoon the mixture into the 2 crusts.
  • Bake for 45 to 50 minutes, until a toothpick inserted in the center comes out almost clean, then transfer to wire racks to cool.
  • As soon as the pies are out of the oven, prepare the topping by mixing the butter, sugar, and milk in a small bowl until thoroughly combined. After the pies have cooled for about 10 minutes, pour 3/4 of the topping over the pies, then cool the pies completely (for about 1 hour), or enjoy them warm. Serve the leftover topping on the side for people who want extra on their slice.
