5 minute Candied Walnuts image

Toss these caramelized walnuts into your salad, over popcorn, or straight into your mouth. Crunch. Crunch. I love this easy method of making the candied nuts where everything goes into the pan at once. Other methods I've tried left me with globs of candy on the nuts rather than a more even coating. It also roasts the nuts at the same time so you don't have to pre-toast them, then add them back to the pan to be coated, blah, blah. Who needs extra steps? It seriously takes about 5 minutes on the stove and 5 minutes to cool. P.S. This recipe can easily be doubled.

1 cup walnut halves/pieces (you can also use this recipe for candied pecans)
1/4 cup white granulated sugar ((not coarse sugar))
1 Tbsp unsalted butter

Steps:

  • Heat a medium non-stick skillet over medium heat, add 1 cup walnuts, 1/4 cup granulated sugar and 1 Tbsp butter.
  • Heat over medium heat for 5 minutes, stirring frequently so your mixture doesn't burn (especially towards the end). When the sugar mixture starts melting, stir constantly until all sugar is melted and nuts are coated.
  • Transfer immediately onto a sheet of parchment paper and separate the nuts right away. Using two spatulas will make this task go faster. You don't want to give the nuts a chance to turn into a wad of inseparable delicious goodness unless you are the only person who will be enjoying the wad ;). Seriously, move quickly from the time the nuts are coated until they are separated out on the parchment paper.
  • Once the coating hardens (5-7 minutes), you can transfer them to a bowl and enjoy!

2 cups walnuts
1/2 cup Canadian Maple Syrup

Steps:

  • Pre-heat your oven to 325F and line a baking sheet with parchment paper.
  • Mix the walnuts and maple syrup in a small bowl.
  • Spread the maple coated nuts on the parchment paper and bake in the pre-heated oven for 10 minutes.
  • Once the 10 minutes are up, stir the nuts with a wooden spoon. Return to the oven and bake for another 3-5 minutes.
  • Once the maple syrup starts to lightly 'foam' remove the entire sheet from the oven and cool on a wire rack until the nuts can be easily handled and broken apart.
  • Store the maple candied walnuts in a glass mason jar or other air tight container for best results.

3 Tbsp. pure maple syrup
1/3 cup packed brown sugar
1/4 tsp. cayenne pepper
1/4 tsp. ground ginger
1/4 tsp. ground cinnamon
1/2 tsp. kosher salt
1/4 tsp. black pepper

Steps:

  • Preheat the oven to 350 degrees F. Spread the walnuts in an even layer onto a rimmed baking sheet. Place in the oven and roast for 5 minutes. Shake the pan to redistribute the walnuts and return to the oven for 3 minutes longer. Alternatively, in a large non-stick skillet over medium heat, toast the walnuts, stirring constantly, until they are hot and lightly toasted, about 5 minutes.
  • While the walnuts are roasting, pour maple syrup into a large bowl and set aside.
  • Whisk together the sugar, cayenne pepper, ginger, cinnamon, salt, and black pepper. Set aside.
  • Immediately add the hot walnuts to the maple syrup and toss to coat. Stir in the spice mixture until the walnuts are evenly coated.
  • Spread the walnuts on a baking sheet in a single layer and cool completely before serving.

2 tbsp yellow mustard seeds
150ml cider vinegar
6 tbsp golden caster sugar
½ celeriac , peeled and julienned
½ white cabbage , thinly shredded
1 red onion , thinly sliced
3 large carrots , peeled and julienned
400g mixed shelled nut (we used cashews, almonds, pecans and peanuts)
2 tbsp brown sugar
2 tbsp maple syrup
heaped ½ tsp cayenne pepper
pinch of cinnamon
1 tbsp vegetable oil
1 tbsp chopped rosemary leaves

Steps:

  • Heat oven to 200C/180C fan/gas 6. Toast the mustard seeds in a dry pan on the hob for a few mins until they begin to pop. Carefully (as it will spit) add the vinegar, sugar and seasoning, then stir to dissolve. Leave to cool, then drizzle the dressing over the vegetables and give everything a stir. Can be stored in an airtight container in the fridge for up to 7 days.
  • Toss the nuts with the rest of the ingredients, except the rosemary, and season generously. Spread out on a baking tray and roast for 15 mins, stirring once. Add the rosemary and roast for 5-10 mins more until the nuts are golden - keep an eye on them as they burn easily.
  • Allow to cool completely, stirring occasionally to stop them from sticking. Can be stored in an airtight container in the fridge for up to 7 days. Sprinkle over the slaw before serving.

6 cups walnut halves (about 1 1/4 pounds)
1/2 cup maple sugar
1 tablespoon plus 1 1/2 teaspoons coarse salt
1/2 teaspoon ground cinnamon
1/4 cup brandy
2 tablespoons pure vanilla extract
1 1/3 cups pure maple syrup
2 tablespoons unsalted butter

Steps:

  • Preheat oven to 350 degrees. Spread walnuts in a single layer on a rimmed baking sheet; toast in oven, stirring occasionally, until fragrant, about 10 minutes. Let cool completely.
  • Meanwhile, combine maple sugar, salt, and cinnamon in a medium bowl; set aside. In a large, deep skillet, combine brandy, vanilla, maple syrup, and butter. Bring to a boil over medium heat, and cook until liquid is reduced by half, about 5 minutes. Stir in nuts, and continue cooking, stirring, until skillet is almost dry, about 3 minutes more.
  • Remove from heat, and immediately add reserved sugar mixture to hot nut mixture; toss until well coated. Spread out coated nuts on a baking sheet lined with parchment paper, and let cool completely, 6 hours or overnight.
