MAPLE FUDGE
This is our best maple cream, with or without nuts. It's a decadent dessert that makes a great gift, for others or yourself. A sure bet!

Steps:
- In a large saucepan, bring maple syrup and butter to a boil. Boil for 5 minutes.
- Add cream and continue cooking until the temperature reads 118°C (245°F) on a candy thermometer*.
- Meanwhile, grease and line a square pan with parchment paper and set aside.
- Remove maple syrup and cream mixture from heat and let rest for 5 minutes.
- Using a whisk, beat for 5 minutes until thick.
- Add walnuts and pour into baking pan.
- Let cool before cutting into squares.
SPICY MAPLE FUDGE
Steps:
- Line an 8- by 8-inch baking pan with parchment paper. In a cast-iron pot with a candy thermometer attached, bring the brown sugar, granulated sugar, butter, evaporated milk and salt to a boil over medium heat, stirring constantly. Keep stirring until the thermometer registers 240 degrees F (the soft-ball stage). Remove from the heat and allow to cool to lukewarm.
- Add the maple syrup and vanilla. With a hand mixer on low, mix in the powdered sugar; keep mixing until the white of the powdered sugar is gone. Using a silicone spatula, continue mixing for 5 minutes until the mixture is smooth, creamy and pale. Fold in the pecans. Scrape the mixture into the prepared baking pan. With the silicone spatula, flatten and smooth out the mixture. Lightly dust with cayenne pepper. Set aside and allow to cool for at least 2 hours.
MAPLE FUDGE WITH MAPLE SYRUP
This yummy sweet is one of my childhood favorites... it's the best homemade maple fudge. If you like walnuts, don't forget to add them.

Steps:
- Line an 8x8-inch baking pan with waxed paper. Butter the paper.
- Bring maple syrup, heavy cream, and brown sugar to a boil in a saucepan over medium heat. Continue to boil, without stirring, until mixture starts to bubble and registers 240 degrees F (166 degrees C) on a candy thermometer.
- Remove from heat. Add butter and salt but do not mix. Let sit until mixture reaches 105 degrees F (41 degrees C).
- Add walnuts and vanilla; beat until mixture loses its gloss. Pour into the prepared pan and let cool to room temperature. Cut, wrap, and store in the refrigerator.

- Line an 8-in. square pan with foil; grease foil with 1 teaspoon butter., Cube remaining butter. In a large saucepan, combine cubed butter, brown sugar and milk. Bring to a full boil over medium heat, stirring constantly. Cook 10 minutes, stirring frequently. Remove from heat., Stir in maple flavoring, vanilla and salt. Add confectioners' sugar; beat on medium speed 2 minutes or until smooth. Immediately spread into prepared pan. Cool completely., Using foil, lift fudge out of pan. Remove foil; cut into 1-in. squares. Store in an airtight container.

WORLD'S EASIEST MAPLE WALNUT FUDGE
This has got to be the worlds easiest fudge to make, only 3 ingredients. Make sure to use fresh walnuts and pure maple syrup. The better the quality the better the fudge....Enjoy! Please do not substitute the whipping cream for any other type of cream, it will not work.... it requires heavy cream... to set.

Steps:
- Line a large platter with plastic wrap.
- Pour the maple syrup and whipping cream into a deep pan.
- Properly fix the candy thermometer in the pan so not to touch the sides of the pan, or the bottom of the pan, leave at least a half inch space from the bottom of the pan.
- Cook on medium-high heat.
- Occasionally stir gently until thermometer reads 235 degrees (this will take about 20 - 35 minutes).
- Remove from heat and pour into a large bowl, make sure not to scrap the bottom of the pot.
- Allow the fudge mixture to cool for 5 minutes without stirring.
- With a wooden spoon gently stir the chopped walnuts into the fudge for about 3 - 4 minute.
- When fudge starts to hold its shape without stirring gently scrap onto prepared platter, score into squares and store in a n airtight container.

- Preheat oven to 350°F. Toast pecans on a rimmed baking sheet, tossing once, until fragrant and slightly darkened, 10-15 minutes. Let cool, then coarsely chop.
- Meanwhile, butter loaf pan. Attach candy thermometer to a large heavy-bottomed pot or Dutch oven set over medium heat. Cook maple syrup, cream, and salt, whisking constantly, and bring to a boil. Stop whisking and continue to boil until thermometer registers 238°F, about 40 minutes. Immediately remove from heat and let cool to 130°F, about 40 minutes.Transfer to a stand mixer fitted with the paddle attachment (or use an electric mixer or wooden spoon) and beat on medium speed until fudge is stiff and opaque, about 12 minutes. Fold in pecans. Scrape fudge into prepared pan; smooth surface. Chill until cool and firm, about 2 hours.

MAPLE FUDGE
Just like Mom used to make! This is so easy to make, you won't believe it, but only real maple syrup works here.
