MAPLE BACON SNACK MIX

Number Of Ingredients 10

6 cups popped popcorn
8 slices peppered bacon, cooked and chopped
3 cups mini pretzel twists
2 cups mixed roasted nuts
1 1/2 cups sugar
1 cup (2 sticks) butter
1/3 cup maple syrup
1/4 cup dark corn syrup
1/4 teaspoon kosher salt
2 teaspoons maple extract

Steps:

  • Line 2 sheet pans with waxed paper, then set aside.
  • Add the popcorn, bacon, pretzels and nuts to a large bowl. Mix and set aside.
  • Add the sugar, butter, maple syrup, corn syrup and salt to a large, heavy-bottomed pot fitted with a candy thermometer and place over a medium-low heat. When the butter has melted, stir together, then turn up the heat to medium-high. Cook, stirring occasionally, until the candy thermometer reads "hard-crack stage" (300 degrees F), 4 to 5 minutes.
  • Remove from the heat and stir in the maple extract. Carefully pour over the snack mix and toss using two wooden spoons. Transfer to the prepared sheet pans and spread out to allow it to cool, about 10 minutes. Break into clusters and transfer to a large serving bowl.

1-1/3 cups sugar
1 cup butter, cubed
1/4 cup maple syrup
1/4 cup corn syrup
1/2 teaspoon salt
1 teaspoon maple flavoring

Steps:

  • Place popcorn and pecans in a large bowl; set aside. In a large heavy saucepan, combine the sugar, butter, maple syrup, corn syrup and salt. Cook and stir over medium heat until a candy thermometer reads 300° (hard-crack stage). Remove from the heat; stir in maple flavoring. Quickly pour over popcorn mixture and mix well., Transfer to baking sheets lined with waxed paper to cool. Break into clusters. Store in airtight containers.

2 cups Rice Chex
2 cups Honey-Nut Cheerios
1 cup miniature pretzels
1/2 cup pecan halves, coarsely chopped
1/3 cup maple syrup
1 tablespoon butter
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 250°. In a large bowl, combine cereals, pretzels and pecans. , In a small microwave-safe dish, combine maple syrup and butter. Cover and microwave on high 45 seconds or until butter is melted. Stir in vanilla. Pour over cereal mixture and toss to coat., Transfer to a 15x10x1-in. baking pan coated with cooking spray. Bake 45 minutes, stirring every 15 minutes. Cool on a wire rack. Store in an airtight container.

This sweet and crunchy snack will last up to two weeks in a tightly covered container, so make a batch to have at the ready-it takes about 20 minutes. Just as in candy making, the success of this maple glaze depends on the accurate temperature of the syrup during cooking. Use a candy thermometer to determine the stage of hardness-don't use guesswork or rely on cold water tests you might find in older cookbooks. If you have an old candy thermometer, check its accuracy by placing it in boiling water for three minutes. If the thermometer reads 212°F it is still fine to use.

Steps:

  • Preheat the oven to 350°F. Toast the almonds in a single layer on a small baking sheet until just golden and fragrant, 4-5 minutes. Transfer the almonds to a plate to cool. Reduce the oven temperature to 250°F.
  • Spray a large baking sheet and a glass baking dish or bowl with non­stick spray. Combine the popcorn and cereal in the baking dish. Place in the oven to warm.
  • Combine the brown sugar, maple syrup, and cinnamon in a small non­stick saucepan. Bring to a boil over medium heat. Cook until the mixture reaches 250°F on a candy thermometer (hard ball stage). Stir in the ­butter and cook until the mixture reaches 280°F (hard crack stage).
  • Remove the popcorn mixture from the oven. Quickly and carefully pour half the glaze over the mix, tossing with a metal spoon. Sprinkle the nuts over the mix and pour on the remaining glaze, tossing to coat evenly. Spoon the mixture onto the sprayed baking sheet, spreading out and breaking into small clumps. Cool completely, then store in an airtight container. Yields 3/4 cup per serving.

1 cup pecans (3 1/2 ounces), coarsely chopped and toasted
3/4 stick unsalted butter
1 1/2 cups pure maple syrup
1/2 teaspoon salt

A candy or deep-fat thermometer

Steps:

  • Toss popcorn and pecans in a large bowl.
  • Line bottom of a 17-by 11-inch 4-sided sheet pan with foil, then lightly oil foil.
  • Melt butter in a small heavy saucepan over medium heat. Add maple syrup and salt and boil (still over medium heat), without stirring, until thermometer registers 300°F, 15 to 20 minutes.
  • Pour syrup over pecans and popcorn, stirring briskly with a lightly oiled spoon or silicone spatula to coat, then immediately spread popcorn in pan in 1 layer. Cool completely, then break into bite-size pieces.
