3 tablespoons butter
1 loaf thin white bread
1 bag semi sweet chocolate chips

Steps:

  • Preheat oven to 300 degrees F.
  • In a shallow pan, melt butter slowly. Using your preferred cookie cutter, cut shapes from the white bread and brown in the butter. Be sure to lightly brown both sides. Remove and place croutons on a cookie sheet. Once all shapes are done, place cookie sheet into oven and "dry" thoroughly, making sure that the croutons are no longer soft in the middle. Melt the chocolate in the microwave, according to package instructions, and dip shapes into the chocolate. Place them on a piece of waxed paper to dry.

I make this often, I believe it came from an old Good Housekeeping magazine, judging from the cliping. Original recipe called for maple syrup or maple-flavor syrup. I've tried both. Use the real thing, the maple-flavored gives it hardly any flavor at all. Also, the cookies seem to "ripen" after a couple of days. These are very good.

4 cups all-purpose flour
1 cup butter or 1 cup margarine, softened
3/4 cup packed light brown sugar
1/2 cup maple syrup (the real thing!)
2 eggs
2 teaspoons cream of tartar
1 teaspoon baking soda
3/4 teaspoon salt

Steps:

  • Into large bowl, measure all ingredients.
  • With mixer on low speed, beat ingredients until well mixed, occasionally scraping bowl with rubber spatula.
  • Shape dough into ball; wrap with plastic wrap.
  • Refrigerate dough 1 hour or until easy to handle.
  • Preheat oven to 350*F.
  • Grease large cookie sheet.
  • On lightly floured surface, with lightly floured rolling pin, roll 1/3 of the dough at a time 1/8 inch thick, keeping remaining dough refrigerated.
  • With floured 3 1/2 inch maple leaf shaped cookie cutter, cut dough into leaves.
  • Place cookies 1 inch apart on greased cookie sheet (or use parchment lined sheets.) Bake 10 minutes or until golden.
  • With pancake turner, carefully remove to wire racks to cool.
  • Repeat until all dough is used, greasing cookie sheet each time.
  • (If not using parchment).
  • Store cookies in tightly covered container.

1 cup shortening
1 cup butter, softened
2 cups sugar
2 eggs
1 1/2 teaspoons vanilla extract
4 2/3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup butter, softened
1/4 cup pure maple syrup
1 teaspoon maple extract
3 -3 1/2 cups powdered sugar, sifted

Steps:

  • Beat shortening, 1 cup butter and sugar in a large bowl at medium speed for 2 to 3 minutes or until smooth and fluffy. Beat in eggs and vanilla.
  • Whisk all remaining cookie ingredients in large bowl. Beat into butter mixture at low speed just until blended. Shape into flat round; refrigerate 30 minute.
  • Heat oven to 375°F Divide dough into 4 pieces. On lightly floured surface roll out each piece into 1/8" thick round. With 3" leaf shaped cookie cutter, cut out leaf shapes. Repeat with remaining dough. Reroll scraps (refrigerate dough if it gets soft). Place on baking sheet; bake 7 to 9 min or until light golden brown around edges. Cool on wire rock.
  • Meanwhile, beat 1 cup butter, maple syrup and maple extract in medium bowl at medium speed until smooth. At low speed, beat in 3 cups of the powdered sugar adding additional sugar if necessary to achieve spreadable consistency. Spread half of cookies with about 1 tbsp frosting; top with remaining cookies.

1 can (14 ounces) sweetened condensed milk
1/2 cup butter, cubed
7-1/2 cups confectioners' sugar
2 cups chopped walnuts
2 teaspoons maple flavoring

4 cups semisweet chocolate chips
2 ounces bittersweet chocolate, chopped
2 teaspoons shortening

Steps:

  • In a small saucepan, combine milk and butter. Cook and stir over low heat until butter is melted. Place the confectioners' sugar in a large bowl; add milk mixture and beat until smooth. Stir in the walnuts, maple flavoring and vanilla. Roll into 3/4-in. balls; place on waxed paper-lined baking sheets. Refrigerate until firm, about 1 hour., In a microwave, melt the chips, bittersweet chocolate and shortening; stir until smooth. Dip balls into chocolate; allow excess to drip off. These are great to bake in the fall, but they are delicious anytime. I use a maple leaf cutter. Prep time includes 2 hours chill time.

1 cup butter, softened
2/3 cup sugar
1/2 cup maple syrup
1/3 cup milk
3 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon ground ginger
3 tablespoons pure maple syrup
1/2 cup powdered sugar, sifted

Steps:

  • In medium pan, combine butter, sugar and syrup. Bring to a boil, then immediately remove from heat and cool to room temperature.
  • Add milk.
  • In a separate bowl, combine dry ingredients.
  • Add cooled syrup mix; mix well to combine.
  • Divide dough in half; wrap in plastic wrap and refrigerate 2 hours.
  • Roll on lightly floured surface to 1/4-inch thickness.
  • Cut with maple leaf cutters.
  • Bake on ungreased cookie sheet at 375°F for 8-10 minutes or until golden. (Do not overbake.).
  • Immediately remove cookies to wire rack.
  • Combine glaze ingredients well; brush cookies with glaze immediately.
  • Cool completely.
