These Salted Caramel Blondies truly are the best ever. Not only do they taste amazing, but the recipe is incredibly easy (no need to soften butter or use a stand mixer). I've yet to meet someone that didn't like them!

1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
1 1/2 cups light brown sugar,, packed
12 tbsp unsalted butter,, melted and cooled
2 large eggs
1 1/2 tsps vanilla extract
1/2 cup white chocolate chips
1/2 cup caramel bits (or 12 unwrapped caramel squares)
2 tbsp heavy cream
flaky sea salt for topping

Steps:

  • Preheat oven to 350 degrees. Prepare a parchment paper sling (see notes) for a 13x9 baking pan and spray with non-stick baking spray.
  • Whisk flour, baking powder, and salt together in a bowl.
  • In a medium bowl, whisk sugar and melted butter together until fully combined. Whisk in the eggs and vanilla.
  • Using a rubber spatula, gently fold in the flour mixture.
  • Once the mixture is fully combined, fold in the white chocolate chips and set aside.
  • Add the caramel bits and heavy cream to a microwave safe bowl. Microwave at 50% power in 30 second increments, stirring after each time, until smooth and fully combined. Allow the caramel mixture to cool slightly- not so much that it becomes thick and hard, but you don't want it piping hot either.
  • While the caramel is cooling, scrape the batter into the prepared pan and smooth the top.
  • After the caramel has cooled slightly, carefully drizzle it over the batter. Use a knife to create a marbled swirl by running the knife in the opposite direction of the drizzle. (If you drizzled the caramel horizontally, use the knife to make vertical strokes.)
  • Bake until the top is shiny and cracked slightly, it should feel slightly firm to the touch (not jiggly), about 30-35 minutes, rotating the pan halfway through baking.
  • Immediately after removing from the oven, top with flaky sea salt. (Just a generous pinch across the top.)
  • Let the blondies cool in the baking pan for 10 minutes. Remove the blondies from the baking pan and cool completely on a wire rack before cutting into bars.

Steps:

  • Heat the oven to 350 degrees. Grease an 8-by-8-inch pan with butter and line with parchment paper, leaving overhang on two sides.
  • Make the optional maple nuts: In a small sauté pan, heat the walnuts, 1 tablespoon maple syrup and a pinch of salt over medium heat. Cook, tossing often, until the nuts are lightly toasted and the bottom of the pan looks dry, about 3 to 4 minutes. Transfer the walnuts to a cutting board to cool, roughly chop, and set aside.
  • In a large bowl, combine the 1/2 cup butter, brown sugar, 2 tablespoons maple syrup, egg, vanilla and bourbon, if using, and whisk until smooth. Add the flour, salt, baking powder and nutmeg, and stir with a wooden spoon until just combined.
  • Transfer the batter to the prepared pan and smooth with a spatula. Sprinkle the walnuts, if using, evenly on top. Bake for 21 to 23 minutes, until the bars are just starting to brown at the edges. They should seem slightly underbaked and will firm up as they cool.
  • Sprinkle the blondies lightly with salt, allow to cool to room temperature in the pan. When completely cool, remove from the pan using the parchment paper, then cut into squares and serve.

2 teaspoons McCormick® vanilla extract
2 teaspoons McCormick® maple extract
2 ½ cups all purpose flour

¼ cup heavy cream

8 oz white chocolate, chopped

Steps:

  • Make the blondies: Preheat the oven to 250°F (120°C).
  • Spread the white chocolate in a single layer in a large glass baking dish. Bake, stirring with a rubber spatula every 10 minutes, until the chocolate is caramelized, 30-40 minutes total. Remove the chocolate from the oven and let sit while you make the brown butter.
  • Increase the oven temperature to 350°F (180°C). Line a 9 x 13 x 2-inch baking pan with 2 sheets of aluminum foil, leaving a bit of overhang around all of the edges. Grease the foil lightly with nonstick spray.

Remove the pot from the heat and add the butter. Swirl the pan until the butter melts completely, then slowly pour in the heavy cream and sprinkle in the flaky sea salt. Use a heat-safe spatula to stir until just combined. Let the caramel cool until thickened slightly, about 15 minutes.
  • Make the ganache: Fill a small pot with 1 inch of water and bring to a boil over medium-high heat. Add the white chocolate to a medium glass bowl and set over the boiling water, making sure the water is not touching the bottom of the bowl. Pour in the heavy cream and stir with a small rubber spatula until completely melted and smooth, about 5 minutes.
  • Lift the blondies from the pan, remove and discard the foil, and place the blondies on a wire rack set over a baking sheet. Pour the ganache over the blondies and use an offset spatula to cover completely. Sprinkle the flaky sea salt on top, then use a spoon to drizzle the caramel over the ganache to create a marbled effect.

1 teaspoon baking powder
1 teaspoon baking soda

6 ounces firm silken tofu (half a package of the vacuum-packed kind)
1/4 cup rice or 1/4 cup soymilk
1/3 cup canola oil
2 cups sugar (very strict vegans will want to mind your sugar)
2 tablespoons vanilla extract
1 1/4 cups macadamias, partially chopped & partially ground (a few pulses in a food processor for chopped, remove some for this & below, then a few more for grou)
1/4 cup nonhydrogenated margarine (no whey, mind you)
2 tablespoons turbinado sugar or 2 tablespoons other brown sugar
1/4 cup pure maple syrup
1 cup raw macadamias, coarsely chopped (either from first round in the food processor or chopped by hand on a cutting board with a large kni)

Steps:

  • Preheat the oven to 350. Lightly grease a 9x13-inch baking pan.
  • To prepare the dough:.
  • In a large bowl, sift together the flour, baking powder, baking soda, and salt.
  • In a blender, whiz the tofu with rice milk until smooth.
  • Add the oil, sugar, and vanilla, and blend again.
  • Pour the tofu mixture into the flour mixture and use a firm wooden spoon to combine everything well.
  • Fold in the macadamias. The batter will be thick and have a cookie dough consistency.
  • Spread in the baking pan and bake for 25 minutes. Meanwhile, prepare the topping.
  • To prepare the topping:.
  • In a saucepan over medium heat, combine the margarine, turbinado sugar, and maple syrup, and heat until the sugar dissolves.
  • Increase the heat to bring to a boil for 1 minute.
  • Stir in the nuts. Remove from heat.
  • Finally:.
  • Remove the blondies from the oven and pour the topping over them.
  • Return to oven, and let bake for 10 more minutes.
  • Let cool completely before serving. The topping should harden to a caramel-like consistency.
  • The cookbook says to cut them into 16 squares or triangles. I got 20 out of the recipe. ENJOY!
