1 cup packed brown sugar
1/2 cup maple-flavored syrup
1 can (about 12 ounces) lightly salted mixed nuts (2 cups)
1 tablespoon butter or margarine
1 teaspoon baking soda

Steps:

  • Heat oven to 200°. Generously butter large cookie sheet; keep warm in oven.
  • Mix brown sugar and maple syrup in 8-cup microwavable measure. Microwave uncovered on High 5 minutes. Stir in nuts.
  • Microwave uncovered on High 5 to 7 minutes or until syrup is bubbling and nuts are toasted--syrup will be very hot. Stir in butter.
  • Microwave uncovered 1 minute. Quickly and thoroughly stir in baking soda until mixture is light and foamy. Pour onto cookie sheet; quickly spread candy.
  • Cool 30 to 60 minutes or until hardened. Break into pieces. Store candy in airtight container at room temperature up to 2 weeks.

2 cups chopped walnuts or black walnuts
1 cup sugar
1/2 cup light corn syrup
1/2 teaspoon salt
1 tablespoon butter
1 teaspoon vanilla extract
1 teaspoon baking soda

Steps:

  • In a covered 1-1/2-qt. microwave-safe glass dish, microwave the walnuts, sugar, corn syrup and salt on high for 2-1/2 minutes. Stir; cook 2-1/2 minutes longer. Stir in butter and vanilla. Cover and microwave on high for 1-1/4 minutes. Add baking soda; stir quickly until lightly foamy. Immediately pour onto a lightly buttered baking sheet; spread until very thin. When cool, break into small pieces. Store in an airtight container at room temperature.

This is a recipe that I created, and my husband fell in love with it, as did my father-in-law, so I made 14 batches of this and gave it out as Christmas gifts. I hope you enjoy it.

cooking spray
1 cup almonds, divided
2 cups packed brown sugar
1 cup maple syrup
½ cup cold butter
1 cup chocolate chips

Steps:

  • Line a baking sheet with aluminum foil; spray lightly with cooking spray. Reserve 2 tablespoons of almonds and sprinkle the rest evenly over the foil.
  • Combine brown sugar and maple syrup in a 2-quart saucepan over medium heat. Cook and stir until sugar is dissolved and caramel mixture comes to a full boil, about 10 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Turn oven off once preheated; place prepared baking sheet in the oven to warm.
  • Attach a candy thermometer to the saucepan with the caramel mixture. Add butter. Cook, stirring occasionally, until the mixture reaches 300 degrees F (149 degrees C) or until a small amount dropped into ice water forms a hard, brittle strand, about 20 minutes.
  • Remove baking sheet from the oven and immediately pour the caramel mixture over the almonds. Spread evenly to about 1/4-inch thickness. Sprinkle remaining almonds and chocolate chips over open spaces. Spread chocolate evenly once melted. Let brittle cool completely, at least 30 minutes. Break into pieces.

3 cups maple sugar
1 cup cold water
1 cup molasses
1 tablespoon maple syrup
1 pinch cream of tartar
1/2 cup butter
2 teaspoons baking soda
1 tablespoon boiling water
1 teaspoon lemon extract
1 cup chopped brazil nut

Steps:

  • Cook water,sugar,molasses,syrup& cream of tartar to 300,or hard crack stage.
  • Add in butter,allowing it to boil for 4 minutes.
  • Remove from heat.
  • Add baking soda,that has been dissolved in the boiling water.
  • Then add lemon extract.
  • Combine.
  • As soon as the mixture starts to foam,pour into buttered platters,spread thin.
  • Next,sprinkle the chopped nuts over the candy.
  • Allow to cool before cutting into pieces.

¼ cup real maple syrup
1 cup granulated sugar
1 cup butter
¼ cup water
2 cups toasted walnut pieces

Steps:

  • In heavy bottomed saucepan, over medium heat, stir together syrup, sugar, butter, and water until melted and creamy. Continue to gently boil and do not stir until candy thermometer reaches 300 degrees F "hard crack". Immediately stir in walnuts and carefully pour hot mixture onto an ungreased cookie sheet and spread out to a thin layer with a wooden spoon.
  • Cool completely. Break into large pieces and store in an airtight container.
