Margarita Chicken with Agave and Tequila image

Easy to make and delicious Margarita Chicken is the perfect summer grill recipe. Your favorite cut of chicken is marinated in lime, tequila, and a little agave syrup then popped on the BBQ. Serve with some grilled peppers and a pot of rice for a healthy and tasty dinner. You will LOVE it!

¼ cup lime juice
¼ cup tequila
2 tablespoons agave syrup
2 tablespoons oil
½ teaspoon sea salt
¼ teaspoon pepper
Optional: ½ jalapeño (sliced)
2 lbs. bone-in chicken thighs (or use your favorite cut of chicken)
Sliced limes (to serve)

Steps:

  • Whisk the lime juice, tequila, agave syrup, oil, salt, pepper, and (if using) the jalapeno in a small bowl. Place the chicken in a container or resealable plastic bag and pour the marinade over top. Let the chicken marinate for at least a half-hour or up to 4 hours.
  • Clean and oil your grill and preheat it to medium heat. Remove the chicken from the marinade and place it on your grill skin side up. Let it cook for 10 minutes then flip it over and cook for another 10 minutes.
  • Serve your margarita chicken with limes on the side.

2 pounds chicken wings, tips removed and wings split
1 cup sliver tequila
1 teaspoon grated lime zest (from 2 limes) plus 6 tablespoons lime juice (from 4 limes)
1 teaspoon grated orange zest (from 1 orange) plus 1/2 cup orange juice (from 1 orange)
1 tablespoon agave nectar
6 to 8 pequin chile peppers, crushed (see Cook's Note)
Kosher salt
Nonstick cooking spray

Steps:

  • Place the chicken wings in a resealable plastic bag. In a small bowl, whisk together the tequila, lime zest and juice, orange zest and juice, agave, crushed peppers and 1/2 teaspoon salt. Pour over the wings and seal the bag. Toss the wings in the marinade to coat. Place in the refrigerator and allow to marinate for 2 hours.
  • Preheat the oven to 450 degrees F.
  • Spray a baking sheet with nonstick cooking spray. Lay the wings out on the tray so they do not touch each other. Bake, flipping the wings halfway through, until cooked through and beginning to brown, about 25 minutes.
  • Meanwhile place the marinade in a small saucepan over medium-high heat and simmer until reduced to 1/2 cup, 8 to 10 minutes.
  • Heat a grill pan over medium-high heat. Grill the wings, turning often and brushing occasionally with the reduced liquid to coat, until golden and crispy, about 4 minutes.

Mastering the margarita requires a certain amount of practice, but once you dial-in your perfect ratio, it's a really easy cocktail to replicate. The classic recipe is 3 parts tequila, 2 parts triple sec, and 1 part freshly squeezed lime juice, and you should probably start off pretty close to that, but my personal favorite proportions are 4-3-2.

1 lime wedge
1 pinch coarse sea salt to taste
1 large ice cube
ice
2 fluid ounces white tequila
1 ½ fluid ounces triple sec
1 fluid ounce freshly squeezed lime juice
1 slice lime

Steps:

  • Moisten the rim of a glass with a lime wedge. Sprinkle salt onto a plate. Lightly dip the moistened rim into the salt. Place a large ice cube in the glass and freeze the prepared glass until ready to serve.
  • Fill a cocktail shaker with fresh ice. Add tequila, triple sec, and lime juice. Cover and shake vigorously until outside of the shaker has frosted. Strain into the prepared glass and garnish with a slice of lime.

kosher salt
2 lime slices
1/4 cup tequila, blanco (silver)
2 tablespoons agave syrup (nectar)
2 tablespoons fresh lime juice

Steps:

  • Pour some kosher salt into a small dish; rub 1 lime slice over half the rim of an Old Fashioned glass (if you prefer your Margarita on the rocks) or a coupe glass (if you prefer it up). Dip rim of glass into salt.
  • Combine tequila, agave syrup, and juice in a cocktail shaker; fill with ice and shake well.
  • Strain into prepared glass. Garnish with second lime slice.
  • DIFFERENT VARIATIONS -.
  • Fruity: Muddle 3 blackberries with agave syrup in a cocktail shaker until berries are lightly crushed and juices are released. Continue with above recipe.
  • Spicy: Muddle 2 thin rounds of jalapeno with agave syrup in a cocktail shaker until peppers begin to fall apart. For a less-spicy version, remove the seeds first. Continue with above recipe.
  • Bright: Steep 1 hibiscus teabag or 1 teaspoons dried hibiscus flowers with 4 oz. of hot water for 10 minutes. Discard tea bag/flowers and let tea cool. Gently spoon some tea OVER margarita, forming a red layer on top. (STUNNING!).
