Steps:

  • Stir shrimp, olive oil, cilantro, lime juice, garlic, tequila, cayenne pepper, and salt together in a bowl. Cover the bowl with plastic wrap and refrigerate shrimp in marinade for 30 minutes.
  • Preheat an outdoor grill for high heat and lightly oil grate.
  • Remove shrimp from bowl and thread onto skewers; discard marinade.
  • Cook on the preheated grill until shrimp turn pink, 2 to 3 minutes per side.

2 tablespoons cider vinegar
2 tablespoons water
1 (1.06 oz) packet mojito lime marinade mix (such as McCormick's® Grill Mates)
2 pounds raw jumbo shrimp, shelled and deveined
1 serving cooking spray
1 large onion, sliced into 1/2-inch rings
2 each yellow bell peppers, quartered
2 each red bell peppers, quartered
1 (8 ounce) package fajita-size flour tortillas

Steps:

  • Combine oil, vinegar, water, and marinade mix in a large bowl. Add shrimp and marinate for 30 minutes.
  • Preheat the grill to 300 degrees F (150 degrees C) and oil the grate with cooking spray.
  • Add onions to the hot grill, keeping rings intact. Add bell peppers. Grill for 3 to 5 minutes per side. Transfer to a cutting board and chop roughly.
  • Grill shrimp until opaque and cooked through, 1 to 2 minutes per side. Transfer shrimp to a bowl covered with aluminum foil to keep warm.
  • Heat tortillas on the hot grill for 1 to 2 minutes. Assemble fajitas with onion, peppers, and 3 to 4 shrimp per tortilla.

1 1/4 lbs medium shrimp, peeled and deveined
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon pure chile powder
1/2 teaspoon chopped oregano
1/4 teaspoon garlic powder
1 lime, juice of
8 -12 flour tortillas or 8 -12 soft corn tortillas, warmed
2 tablespoons vegetable oil
6 green onions, cut into thirds
2 green bell peppers, cut into 1/3 inch strips
sour cream
chopped fresh cilantro
minced red onion

Steps:

  • Add shrimp, salt, cumin, chile powder, oregano, garlic, lime juice to a large bowl or heavy duty zip-top plastic bag.
  • Toss until spices are distributed and shrimp is well coated.
  • Let marinate for 10 minutes.
  • Heat oil in a large skillet (cast-iron is best).
  • Add the green onions and peppers; cook and stir occasionally 2 minutes or until slightly softened.
  • Add the shrimp and marinade; cook and stir constantly about 3 minutes or until the shrimp are pink.
  • Spoon shrimp and vegetables into warmed tortillas; garnish with sour cream, cilantro and onion if desired.
  • Fold up and eat.

  • In small bowl, stir margarita mix and lime peel. Reserve 2 tablespoons mixture. Add shrimp to remaining mixture; toss to coat. Cover and refrigerate 30 minutes.
  • In 10-inch nonstick skillet, melt butter over medium-high heat. Cook green and red bell peppers in butter 2 to 4 minutes, stirring occasionally, until crisp-tender.
  • Remove shrimp from marinade; discard marinade. Stir shrimp into mixture in skillet. Cook 1 to 2 minutes, stirring occasionally, until shrimp are pink and firm. Stir in reserved 2 tablespoons sauce and the cilantro. Cook until heated through.
  • Meanwhile, cook rice in water as directed on package. Serve stir-fry over rice.

½ pound large shrimp, peeled and deveined
1 large onion

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.

1 green bell pepper, sliced

1/4 cup tequila
1/4 cup fresh cilantro, chopped
1/4 cup olive oil

  • Sample the tequila to make sure it has not gone bad! lol.
  • Mix all marinade ingredients in a medium mixing bowl.

1 pound (about 20) medium-size shrimp
1/4 cup fresh lime juice
Salt and freshly ground pepper to taste
1 small ripe avocado
2 tablespoons butter
1 tablespoon finely chopped shallots
1/4 cup tequila
3/4 cup half-and-half
1 tablespoon finely chopped cilantro or Chinese parsley (optional)

Steps:

  • Shell and devein shrimp. Butterfly shrimp by splitting them partly down the back, starting at the head and stopping short of the tail. Flatten them lightly. Place shrimp in a bowl and add lime juice, salt and pepper. Let stand briefly until ready to cook.
  • Peel the avocado, and cut it into half-inch slices. Discard pit. Use as soon as possible or the flesh will discolor.
  • Heat butter in a skillet; when it is quite hot but not smoking add shrimp, stirring rapidly. Cook about two minutes. Sprinkle with shallots and cook, stirring, about 10 seconds. Carefully add the tequila, which may flare up. Add half-and-half and cook over high heat about 1 minute. Add salt and pepper to taste. Add avocado, and cook just until the slices are piping hot.
  • Using a slotted spoon, transfer the shrimp and avocado pieces to hot serving dishes. Bring the sauce to a full rolling boil for about 1 1/2 minutes and add the chopped cilantro. Spoon the sauce over the shrimp and avocado. Serve with rice.

First prepare the Margarita and put in the refrigerator to keep cold, then work on the shrimp. The recipe works best if you sample the margarita as you prepare the spicy shrimp. Be sure to leave at least a 1/4 cup for the shrimp or you will have to make more margaritas. Depending on how much you have sampled you may want someone else to tend to the grill. And, as always, don't skimp on the quality of tequila. Oh, and the shrimp is phenomenal!

3/4-1 lb steak or 3/4-1 lb shrimp, cut in strips against grain
oil (enough to coat meat)
1 (5 g) packet Sazon Goya seasoning
1 1/2 teaspoons salt
2 -3 teaspoons paprika
1 tablespoon garlic powder
1 -2 tablespoon black pepper
1/4-1/2 teaspoon cayenne pepper
1/4 teaspoon cinnamon
1 teaspoon cumin
1 -2 teaspoon oregano
1 1/2 tablespoons sugar
lime juice (just enough to coat meat)
1 dash tequila
1/2 red onion, sliced
1/2 green pepper, sliced

Steps:

  • Cut meat in strips (against the grain) and place in medium sized freezer bag.
  • Drizzle enough oil over the meat to coat and shake bag.
  • Add all all seasonings to bag, shake to coat meat.
  • Add enough lime juice to coat meat, plus dash of tequila.
  • Marinade (ideal time for steak or chicken-- 1 1/2 -2 hours, shrimp-- no more than 30 minutes).
  • Heat cast iron skillet on medium-high until smoking, add approximately 1/4 of the meat plus onion and peppers and sear for approximately 3-5 minutes. If cooking just chicken or shrimp, you may need to add a small amount of oil (1 tsp). Do not overcrowd the skillet or you will not achieve a good sear.
  • Continue cooking the rest of the fajitas in small batches. Serve with tortillas and accompaniments.
