- In a microwave-safe bowl, combine spinach and water. Cover and microwave on high for 45-60 seconds or until wilted; drain. Cool slightly and squeeze dry. , In a small bowl, combine the water chestnuts, sour cream, mayonnaise, soup mix, onion and spinach. Chill for at least 1 hour. Serve with crackers.

- In a medium bowl, mix together mayonnaise, sour cream, dry leek soup mix, water chestnuts and chopped spinach. Chill in the refrigerator 6 hours, or overnight.
- Remove top and interior of sourdough bread. Fill with mayonnaise mixture. Tear removed bread chunks into pieces for dipping.

- Slice garlic and scallions. Reserve 1 tablespoon scallions for garnish. In a large skillet over medium-low heat, combine olive oil, garlic, and remaining scallions. Saute until tender, about 2 minutes. Add spinach leaves; cover, reduce heat to low, and cook until spinach is just wilted, about 2 minutes. Remove pan from heat, and let the spinach mixture cool.
- Transfer the cooked spinach to the bowl of a food processor, and process until smooth, about 20 seconds. Add sour cream and the lemon juice to the food processor. Pulse to combine. Add salt and pepper. This dip can be kept in an airtight container in the refrigerator for up to 1 week (refrigerate sliced scallions for garnish as well). To serve, pour dip into bowl, and top with reserved sliced scallions.

- Thaw spinach. Squeeze out as much water as you can.
- Mix ingredients starting with the mayo and spinach.
- It's best if you refrigerate the dip overnight and put in the bread bowl just before serving.
- Carve out center of pumpernickel bread. Put dip inside. Make cubes out of the chunk of bread you took from the middle.
- Arrange on a platter with cubed pumpernickel surrounding the bread bowl or you can purchase a small loaf of cocktail pumpernickel.
- You can also use 1/2 lb of well drained, crumbled bacon instead of the bacon bits.
