8 large skinless chicken pieces, about 200 g each
4 tablespoons vegetable oil
salad leaves (to garnish)
2 teaspoons salt
2 teaspoons oregano
2 teaspoons dried thyme
1 teaspoon black pepper
1 teaspoon white pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon cayenne pepper

Steps:

  • Preheat the oven to 200C/400 degrees F.
  • In a large bowl, mix together all the blackening spices.
  • Toss the chicken in the spices, making sure that each fillet is evenly coated.
  • Heat a large heavy based frying pan over high heat until very hot.
  • Add the oil and fry chicken fillets on each side.
  • You want the chicken to fry quite fast so that you sear and roast the spices very well.
  • Don't be tempted to add too many pieces to the pan at once or you will not get the desired effect.
  • When the fillet is well seared, place on a roasting tray and bake in preheated oven for 10 minutes.
  • Serve the chicken on a platter garnished with a few salad leaves.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet. Heat a cast iron skillet over high heat for 5 minutes until it is smoking hot.
  • Mix together the paprika, salt, cayenne, cumin, thyme, white pepper, and onion powder. Oil the chicken breasts with cooking spray on both sides, then coat the chicken breasts evenly with the spice mixture.
  • Place the chicken in the hot pan, and cook for 1 minute. Turn, and cook 1 minute on other side. Place the breasts on the prepared baking sheet.
  • Bake in the preheated oven until no longer pink in the center and the juices run clear, about 5 minutes.

1-1/3 cups mayonnaise
2 tablespoons water
2 tablespoons cider vinegar

Steps:

  • In a small bowl, combine the paprika, 1 teaspoon sugar, 1 teaspoon salt, garlic powder, thyme, lemon-pepper, cayenne and 1/2 to 1 teaspoon pepper; sprinkle over both sides of chicken. Set aside. , In another bowl, combine the mayonnaise, water, vinegar and remaining sugar, salt and pepper; cover and refrigerate 1 cup for serving. 4 boneless chicken breasts, flattened to about 1/2 inch thick
1 cup butter, melted
1 1/2 tablespoons salt
1 1/2 teaspoons garlic powder
1 1/2 teaspoons black pepper
1 teaspoon cayenne pepper
1 teaspoon onion powder
1 teaspoon ground cumin
1/2 teaspoon paprika
1/2 teaspoon sugar (If you want to jazz up the butter a bit, add a dash or two of tabasco!=0)

Steps:

  • Let the chicken come to room temperature before using.
  • Cover chicken with butter until well coated.
  • Heat a cast iron skillet over high heat until very hot.
  • Roll each chicken breast into about 1/2 tsp. seasoning mix (I use my hands).
  • Immediately place the chicken pieces skin side down in the skillet to sear.
  • Pour about 1 teaspoon of the butter on top.
  • Cook about 2+ minutes, until a crust forms on the underside.
  • Turn and pour another 1 teaspoon of the butter on each of the chicken pieces.

2 large boneless chicken breast
olive oil
1 tsp paprika, smoked
1/4 tsp cayenne pepper
1/4 tsp thyme, dried
1/4 tsp black pepper
1/2 tsp salt, (i used salt sense)
1/2 tsp onion powder
1/2 tsp black garlic powder
1/2 tsp cumin
1/2 tsp chili powder

Steps:

  • 1. Pull chicken breast from fridge 30 minutes prior to grilling to bring to room temperture.
  • 2. Combine all seasoning and whisk; set aside.
  • 3. Trim any excess fat from chicken and then rub evenly with olive oil. Sprinkle seasoning/rub evenly over chicken; rub to cover entire pieces.
  • 4. Heat grill over medium/high heat until literally smoking. You want to hear the meat sizzle once it hits the grill.
  • 5. Place breast on grill, cover and cook about 3 to 4 minutes on each side. Turn heat off and remove grill from heat. Leave meat in pan (covered) for abour 2 minutes and then remove to plate; cover with foil and let rest for 10 minutes before serving.
  • 6. NOTES: 3 steps to insure a tender moist piece of chicken: 1. Remove chicken from fridge 30 minutes prior to grilling. 2. Make sure the grill is smoking hot before you place the chicken in it. 3. Let the chicken rest (covered) 10 minutes before serving. I used a cast iron grill.

1/4 cup orange juice
1 lime, juice of
1 lemon, juice of
1 cup tomato puree
1/8 teaspoon salt

1/8 teaspoon cinnamon
1/8 teaspoon garlic powder
1/8 teaspoon jalapeno powder (if not available use crushed red pepper)
1 lb boneless chicken thighs

Steps:

  • mix all ingredients except chicken in a bowl.
  • add chicken and let marinate 24 - 48 hours.
  • take chicken out of marinade and place in a 9x13 baking dish.
  • bake uncovered in a 425 degree F oven for 30 minutes.
  • cover and bake at 325 degrees F for 30 more minutes.
  • while still warm place in a mixer and slowly beat with paddle to shred or shred by hand when cool enough to do so.
  • serve over rice or wrapped in a tortilla.
  • Alternate cooking method using a grill.
  • reserve 1/3 of marinade.
  • mix chicken into the rest of marinade.
  • marinate 24 - 48 hours.
  • cook the chicken on a grill until outside is slightly blackened.
  • put in a 9x13 pan
  • add the reserved marinade.
  • cover and bake at 325 degrees F for 30 minutes.
  • shred as described above.

Steps:

  • Trim tenderloins of any weird stuff and pat dry. Combine all spices in a small bowl.
  • Heat a large cast iron pan (or grill) over high heat. Spray with a mist of olive oil and let it get nice and hot. Sprinkle the rub liberally over the tops of the tenderloins and place in a single layer in the hot pan, seasoned side down. Let them sit, undisturbed for 2 minutes. Sprinkle remaining seasoning over the unseasoned side. It should be a liberal coating of spices!
  • Flip chicken and cook for just one minute or until done. Turn off the heat and remove chicken and place on a plate tented with foil. Let it rest for 5 minutes and then enjoy!

2 cups white wine
2 tablespoons soy sauce
1 tablespoon lime juice
1 tablespoon Worcestershire sauce
4 skinless, boneless chicken breast halves, each cut into 4 pieces
Blackened seasoning:
1 tablespoon salt
2 teaspoons onion powder
2 teaspoons white sugar
1 teaspoon ground black pepper

2 teaspoons cayenne pepper

Chipotle aioli:
½ cup mayonnaise
1 tablespoon chopped fresh chives

1 tablespoon butter
1 large onion, cut into thin rings

Steps:

  • Mix white wine, soy sauce, 1 tablespoon lime juice, and Worcestershire sauce together in a resealable bag; add chicken and seal bag. Marinate chicken in the refrigerator for 8 to 24 hours.
  • Mix 1 tablespoon salt, onion powder, sugar, 1 teaspoon ground black pepper, white pepper, cayenne pepper, garlic powder, and oregano together in a bowl for the blackened seasoning; transfer to a shaker or an air-tight container.
  • Place mayonnaise, chives, garlic, 1 teaspoon lime juice, ground chipotle pepper, salt, and black pepper in a food processor; pulse together until chives are minced and aioli is smooth and evenly mixed. Transfer to an air-tight container and store in the refrigerator.
  • Heat 1 tablespoon olive oil and 1 tablespoon butter together in a skillet over medium heat; cook and stir onion until softened and translucent, about 5 minutes. Reduce heat to medium-low, and continue cooking and stirring until onion is very tender and dark brown, about 30 minutes more. Remove from heat.
  • Remove chicken from marinade and pat dry with paper towels. Spray chicken pieces with cooking spray and sprinkle all sides with blackened seasoning.
  • Heat 1 tablespoon butter and 1 tablespoon olive oil in a skillet; cook chicken until no longer pink in the center and the juices run clear, about 5 minutes per side.
  • Assemble sliders by layering a piece of chicken, a strip of Cheddar cheese, and a spoonful of caramelized onion onto the bottom of each bun. Place a dollop of aioli on the top portion of bun before placing atop onion layer, forming a sandwich.
