ZUCCHINI PIZZA BOATS
Healthy Zucchini Pizza Boats. All the flavor of pizza, stuffed into an easy, filling low carb meal! Add sausage, pepperoni or any of your favorite toppings.

- Place a rack in the center of your oven. Preheat the oven to 375 degrees F. Lightly coat a rimmed baking sheet or 9x13-inch baking dish with nonstick spray.
- Halve each zucchini lengthwise. With a small spoon or melon baller, gently scrape out the center zucchini flesh and pulp, leaving a border of about 1/3 inch on all sides. Arrange the zucchini shells on the baking sheet. Sprinkle the insides of the zucchini with salt.
- Spoon the pizza sauce into each shell, dividing it evenly. You may need a little more or less, depending upon the size of your zucchini. Put a generous amount, but don't feel like you need to fill it all the way to the very top.
- Sprinkle the mozzarella over the top, then evenly sprinkle with Italian seasoning and red pepper flakes (if using). Scatter on the pepperoni and any other desired toppings. Last, sprinkle with Parmesan.
- Bake for 15 to 20 minutes, until the cheese is hot and bubbly and the zucchini is tender. If desired, switch the oven to broil and cook the zucchini for 2 to 3 additional minutes, until the cheese is lightly browned. Remove from the oven and sprinkle with chopped fresh basil. Serve immediately.

- Preheat oven to 450°. In a large bowl, combine first 4 ingredients; stir in 1/2 cup mozzarella cheese and 1/4 cup Parmesan cheese. Transfer to a 12-in. pizza pan coated generously with cooking spray; spread to an 11-in. circle., Bake until golden brown, 13-16 minutes. Reduce oven setting to 400°. Sprinkle with remaining mozzarella cheese; top with tomatoes, onion, pepper, herbs and remaining Parmesan cheese. Bake until edges are golden brown and cheese is melted, 10-15 minutes. Sprinkle with chopped fresh basil, if desired.

- Preheat oven to 450 degrees, with a rack in lower third. Heat 2 tablespoonsoil in a skillet over medium-high. Add onions and garlic;cook, stirring frequently, until onions are soft and golden, about10 minutes. Meanwhile, brush a 13-by-18-inch rimmed bakingsheet with 2 tablespoons oil. MASCARPONE ZUCCHINI PIZZA

- Heat the olive oil in a skillet over medium heat. Fry the zucchini in the oil until golden brown, 5 to 8 minutes on each side. Remove from heat and set aside.
- Preheat oven to 375 degrees F (190 degrees C). Spray an 8-inch pizza pan with cooking spray.
- Combine the flour, yeast, sugar, and salt in a bowl. Slowly stir in the vegetable oil and warm water. Knead the dough until well blended. On a floured surface, roll the dough out with a rolling pin to fit the prepared pizza pan. Roll the crust thin, and fold over the edges to form a rim. Spread the pizza sauce over the dough, and sprinkle the mozzarella cheese on top. Arrange the zucchini slices over the cheese.
- Bake in the preheated oven until the cheese is melted and the crust is browned, about 15 minutes. Spoon dollops of mascarpone cheese over the pizza. The cheese will melt onto the pizza and spread naturally. Allow the pizza to cool for 5 to 10 minutes before slicing and serving.

MARINATED ZUCCHINI PIZZA (PIZZA ALLE ZUCCHINE)
Based on a recipe from Williams-Sonoma Kitchen Library Pizza cookbook. I think this pizza is awesome! For the herb pizza dough, I use recipe #287879, #287879. The intro says, "Cooking thin zucchini slices first in olive oil and then in vinegar creates the delicious illusion that they have marinated in those ingredients. The "marinating" technique also works well with eggplants (aubergines). Covering the pizza with half green zucchini and half yello zucchini, alternating the slices, makes a tantalizing presentation." Prep time doesn't include the time it takes to make the herbed pizza dough.

Steps:
- Have pizza dough at the ready.
- Preheat oven to 450° F (220°C). If using a baking stone or tiles, now the time to place in the oven.
- Pour oil into a deep frying pan and heat to 350°F (170°C). Fry the zucchini slices in the oil, a few at a time, until barely golden, about 2 minutes.
- Using slotted spoon, transfer zucchini slices to paper towels to drain.
- When all of the slices have been fried, pour off all but about 1 tablespoon of the oil. Return the fried zucchini to the pan and pour in the vinegar. Place over medium heat, add the garlic and cook until the vinegar evaporates and the zucchini begins to darken, about 5 minutes. Season to taste with salt and pepper.
- Shape the pizza dough and cover with the zucchini.
- Transfer to oven and bake for 10 minutes. Reduce oven temperature to 400°F (200°C) and bake until the crust is golden, about 10 minutes. Scatter the basil over the top and serve immediately.
