3/4 cup (105) grams all-purpose flour
1/2 cup (100) grams granulated sugar
1/2 cup (100) grams light brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon kosher salt
8 tablespoons (114 grams) unsalted butter (room temperature)
5 cups (626 grams) fresh marionberries
3/4 cup (150 grams) granulated sugar
1/4 teaspoon kosher salt
1 tablespoon lemon juice
1/2 teaspoon lemon zest
3 tablespoons (23 grams) tapioca
1 1/2 cups (190 grams) fresh marionberries
4 tablespoons (50 grams) granulated sugar
1/8 teaspoon kosher salt
1 teaspoon lemon juice
4 teaspoons (10 grams) tapioca

Steps:

  • If making less than 6 servings of the dessert I recommend making the full amount of the crisp. It can be stored in the refrigerator and used for other desserts.
  • Preheat the oven to 350°F and butter each of the ramekins. Line a half baking sheet with parchment paper

I've searched long and hard for the perfect marionberry pie recipe and now I've found it. Marionberry pie (also a blackberry pie )is perfectly thickened so it won't run all over the pan.

1 Double Crust [Mom's Magic Pie Crust Recipe]
5 Pints Marionberries (Blackberries work too)
1/2 - 3/4 Cup Sugar
1/4 Cup [Cornaby's Ultra Gel]
1 Egg
1/2 Teaspoon Water or milk
Turbinado or Regular Sugar (about 1-2 Tablespoons)

Steps:

  • Prepare the pie crust and shape half of the dough into a pie plate. Slice the other half into strips and cover both with plastic wrap and place in the fridge.
  • Preheat the oven to 375 degrees. Blind bake the bottom crust (see note).
  • Add the fruit, sugar and pectin into a saucepan and gently, using a rubber spatula, fold the berries in. Start with only 1/2 cup sugar, but if your berries are extra tart you should add more sugar, 1 tablespoon at a time. Turn the heat to medium low and cook until the berries are releasing their juices and beginning to thicken. Only stir occasionally as you don't want to break up the fruit and turn it into jam.
  • Add the hot fruit mixture directly into the pie crust. Place strips across the pie and then lift up one end of every other strip and lay a new strip across the other way. Now, repeat but with the other strips that were not originally lifted up. Continue until you're halfway across the pie then turn the pie around and repeat from the other side to make a lattice across the entire pie.
  • Whisk together the egg and water and then brush the top of the pie and immediately sprinkle with sugar.
  • Bake the pie for 25 minutes then drape with a piece of tin foil and continue to bake for another 20-30 minutes, or until the filling is bubbly and the crust is golden brown.
  • Remove from the oven and cool entirely on the counter. We prefer to let our pie rest over night as the filling will set up and not run. Refrigeration can make the filling sink and pull away from the crust.

5 cups all-purpose flour, plus more for hands and parchment
1 cup sugar, plus more for sprinkling
2 1/2 tablespoons baking powder
1 teaspoon salt
3/4 cup shortening
1/2 cup butter
2 cups milk
1 1/2 to 2 cups Marionberries (or substitute blackberries)
2 cups powdered sugar
2 teaspoons lemon extract
1/4 cup milk

Steps:

  • Preheat oven to 350 degrees F.
  • To make the scones: In a mixer, blend dry ingredients, shortening and butter together thoroughly until mixture looks like bread crumbs. Add most of the milk and mix for about 30 seconds. Scrape down sides and bottom of bowl, adding more milk to completely moisten dough. Be careful not to overmix. Flour hands and divide the dough in half and place on 2 pieces of floured parchment paper. Re-flour hands and shape dough into a large circle about 10 inches in diameter. Place about 3/4 cup Marionberries evenly on each circle, leaving a 2-inch edge. Re-flour the parchment papers. Re-flour hands and fold up edges to completely cover Marionberries. Flatten out scone with floured hands to 10 inches in diameter. Cut into 6 pie shaped pieces and sprinkle with sugar. Bake for 20 minutes, rotating once halfway through the cooking time. Remove from oven and let cool completely.
  • To make the icing: Combine all ingredients in medium bowl. Mix for about 30 seconds or until thick. Drizzle scones with lemon icing. Let icing harden before serving.

NORTHWEST MARIONBERRY PIE

6 cups fresh marionberries
¾ cup white sugar
6 tablespoons all-purpose flour
1 tablespoon lemon juice
1 (15 ounce) package pastry for a 9-inch double crust pie
2 teaspoons water, or as needed
2 teaspoons sugar, or to taste

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Mix marionberries, 3/4 cup sugar, flour, and lemon juice together in a large bowl until well-combined.
  • Fit the bottom of a 9-inch pie plate with 1 pie crust. Pour in marionberry mixture. Cover with second crust; crimp edges to seal. Brush pie lightly with water. Sprinkle 2 teaspoons sugar on top. Cut four to eight 1-inch slits in the top crust with a knife.
  • Bake in the preheated oven for 10 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue baking until crust is golden, 45 to 50 minutes more. Let cool completely before serving, about 1 hour.

2 cups all-purpose flour
1 tablespoon sugar
1 teaspoon salt
1/2 cup cold butter, cubed
5 tablespoons shortening
4 tablespoons ice water
2 tablespoons lemon juice
FILLING:
1 cup plus 1 teaspoon sugar, divided
2 tablespoons plus 2 teaspoons quick-cooking tapioca
1 tablespoon lemon juice
4 cups fresh marionberries or blackberries
1 package (8 ounces) cream cheese, softened
1/2 cup confectioners' sugar
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
1 tablespoon heavy whipping cream

Steps:

  • In a large bowl, mix flour, sugar and salt; cut in butter and shortening until crumbly. Gradually add ice water and lemon juice, tossing with a fork until dough holds together when pressed. Divide dough in half. Shape each into a disk; wrap and refrigerate 10 minutes., Meanwhile, in a large bowl, mix 1 cup sugar, tapioca and lemon juice. Add berries; toss to coat. Let stand 15 minutes. Preheat oven to 425°. On a lightly floured surface, roll 1 half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate., In a small bowl, beat cream cheese, confectioners' sugar and extracts; spread over prepared crust. Top with berry mixture., Roll out remaining dough to a 1/8-in.-thick circle; cut into 1/2-in.-wide strips. Arrange over filling in a lattice pattern. Trim and seal strips to edge of bottom crust; flute edge. Brush lattice strips with cream; sprinkle with remaining sugar., Bake 15 minutes. Reduce oven setting to 350°; bake 50-60 minutes longer or until crust is golden brown and filling is bubbly. (Cover edges with foil during the last 15 minutes to prevent overbrowning if necessary.) 1 (15 ounce) package pastry for a 9-inch double-crust pie
8 cups frozen mixed berries
½ cup white sugar
¼ cup cornstarch
¼ cup berry-flavored liqueur (such as Whidbey)
1 tablespoon lemon juice
1 tablespoon half-and-half
1 large egg yolk

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a 9-inch pie plate with 1 of the pie crusts.
  • Combine berries, sugar, cornstarch, liqueur, and lemon juice in a large saucepan over medium heat. Stir occasionally as berries thaw and the mixture thickens, 10 to 15 minutes. Remove from heat when it reaches the consistency of a runny jam or a sundae fruit topping.
  • Pour the mixture into the pie crust. Moisten the edge of the crust with cold water, top with the second crust, and seal by pinching. Poke at least 3 holes in the top crust.
  • Whip half-and-half and egg yolk together in a bowl with a fork. Brush over pie crust. Place pie on a baking sheet.
  • Bake in the preheated oven until crust is golden, 20 to 25 minutes. Allow to cool so filling becomes solid, about 1 hour.

1 cup (about 10 ounces) marionberry jam (preferably Clearbrook Farms Marion Blackberry Preserves)
3 strips (2 inches long) fresh lemon zest, plus 1 teaspoon fresh lemon juice
3 teaspoons water, divided
1 tablespoon cornstarch
Cream Cheese Pie Dough
All-purpose flour, for surface
1 large egg

Steps:

  • Filling:Bring jam and lemon zest to a boil in a small saucepan, and cook, stirring, until jam is dissolved, about 5 minutes. Remove from heat, and stir in lemon juice. Whisk 2 teaspoons water into cornstarch in a small bowl, and stir into hot jam mixture. Let cool to room temperature, about 1 hour. Discard zest.
  • Preheat oven to 400 degrees. Roll out 1 disk of dough into a 12-inch round on a lightly floured surface. Fit into a 9-inch pie plate, and trim edge of dough to rim. Roll out remaining disk of dough into a 12-inch round. Using a 3/4-inch round cookie cutter (from a cookie cutter set), cut out circles from dough, leaving about 1 inch between each hole and a 3-inch border of solid dough around perimeter. Transfer dough to a parchment-lined baking sheet, and refrigerate, along with dough in pie plate, until firm, about 1 hour.
  • Pour filling into crust. Place top crust over filling, and trim excess, leaving a 1/2-inch overhang. Fold under bottom crust. Press to seal, and crimp to form a scalloped edge. Beat together egg and remaining teaspoon water, and brush top of pie with egg wash. Bake pie 15 minutes. Reduce oven temperature to 350 degrees, and bake until golden brown and bubbling through holes, 25 to 30 minutes. Let cool completely on a wire rack, about 2 hours.

  • Preheat oven to 350°F and prepare baking pan(s) with non-stick spray or butter and parchment paper. I used two 6" round pans.
  • Add all ingredients to a pan and bring to a boil while stirring and mashing. Boil for about 1 minute and remove from heat to cool. Continue to mash the berries as the mixture cools.
  • Place butter and shortening in mixer and cream together on medium speed. Add in vanilla and salt and continue mixing.
  • Take one layer of the cake and place it on a cake stand or frosting stand. Keep in place with a small dollop of frosting on the bottom. Don't worry about making wither cake layer level, the jam and flipping the second layer will take care of this. Add a thick layer of marionberry jam leaving about ¼ inch around the edge.
