  • If you want to make your own, scare up some marrow bones at a butcher shop, place them upright on a foil-lined baking sheet and roast at 450 for 15 minutes. Scoop out the marrow, spread it on toast and top with sea salt.

That renewal of my acquaintance with marrow led to the invention of a canapé or sandwich filling that I believe to be without a peer as an accompaniment for cocktails. In the beginning I produced small batches, but they vanished with such unbelievable rapidity that I was forced to make them larger and larger. I pass on the recipe willingly, for the good of the human race, which has too long suffered from canapés that either adhere distressingly to the roof of the mouth or result in unsightly toothpicks scattered on the floor.

3 marrowbones
2 cloves garlic, finely chopped
1/2 lb (or 2 large packages) soft, fresh cream cheese
1 tube anchovy paste
Accompaniment: 2 slices bread

Steps:

  • Have the ends sawed from three marrowbones in such a way that the marrow is exposed at both ends. Wrap them in a cloth, lower the cloth into a kettle of boiling water, and boil the bones for 10 minutes.
  • Into a large warmed bowl, put garlic, cream cheese, anchovy paste, and the hot marrow from the three bones. With a fork, mash the ingredients until they are blended, then chill the paste until firm.
  • Spread 1/4 inch of the mixture on a thin slice of bread, place another slice on top and cut the sandwich into four strips. Serve.

4 3-inch beef marrow bones
1/3 cup finely chopped shallots
2/3 cup dry red wine
1 tablespoon finely chopped parsley
1 teaspoon fresh lemon juice
Kosher salt and freshly ground black pepper
1 baguette, about 2 inches in diameter

Steps:

  • Preheat oven to 400 degrees. Wrap the bones individually in a double thickness of cheesecloth, then in foil. Place in a roasting pan, and bake for 30 minutes.
  • While the bones are baking, combine the shallots and wine in a small nonreactive saucepan. Bring to a simmer, and cook until almost all the wine has evaporated, about 20 minutes. Set aside.
  • Allow the roasted bones to cool until they can be handled. Remove the marrow, and discard the bones. Finely chop the marrow, and place in a mixing bowl. Add the shallot mixture, parsley, lemon juice, and salt and pepper to taste.
  • Cut twelve slices, 1/2-inch thick, from the baguette. Toast until golden brown. Mound the marrow mixture on the toasts, and serve as an hors doeuvre. The marrow mixture may also be served without toast as a topping for filet mignon or grilled fish.

Here's what you need: yellow onion, garlic, crushed red pepper flake, tomato paste, whole tomato, red wine, whole milk ricotta cheese, ground pork, ground beef, fresh basil, fresh oregano, fresh sage, fresh rosemary, fresh flat-leaf parsley, extra virgin olive oil, bone marrow, spaghetti, grated parmesan cheese, plain breadcrumbs

1 cup yellow onion, diced
4 cloves garlic, minced
1 teaspoon crushed red pepper flake
2 tablespoons tomato paste
28 oz whole tomato, with juices, 1 can
¼ cup red wine
1 cup whole milk ricotta cheese
8 oz ground pork
8 oz ground beef
3 tablespoons fresh basil, chopped
2 teaspoons fresh oregano, chopped
2 teaspoons fresh sage, chopped
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh flat-leaf parsley, chopped
3 tablespoons extra virgin olive oil
¼ cup bone marrow, chopped
12 oz spaghetti, cooked
½ cup grated parmesan cheese
1 cup plain breadcrumbs, toasted

Steps:

  • In a large pot over medium heat, mix the onion, garlic, and red pepper flakes. Cook until the onions start begin to soften, about 3 minutes.
  • Remove half of the onion/garlic mixture and place in a small bowl to cool. Set aside or refrigerate to cool completely.
  • To the pot with the remaining onions/garlic, add the tomato paste. Cook the tomato paste, about 2-3 minutes, stirring frequently, to caramelize the natural sugars in the paste.
  • Add red wine and canned tomatoes to the pot. Cook wine and tomatoes, stirring constantly, and scraping the bottom of the pan to make sure nothing burns, until the mixture comes to a low simmer.
  • Break apart the whole tomatoes using a wooden spoon or squeezing with tongs. Continue to cook over medium-high heat for about 5 minutes to give the alcohol in the wine a chance to evaporate. Add salt and pepper to taste.
  • Reduce the heat to medium-low and simmer, stirring occasionally, for about 20 minutes longer.
  • In a medium sized mixing bowl, stir the ricotta with the reserved (and cooled) onion-garlic mixture. Add the ground pork, ground beef, basil, oregano, sage, rosemary, parsley, salt, and pepper. Gently mix together first with a spoon then going in with your hands.
  • Shape the meat into ping-pong-sized balls and place on parchment lined baking sheet.
  • Place the meatballs in the fridge if you will not be cooking immediately or if they have warmed from handling (they will keep their shape better if kept cold before cooking!).
  • Heat oil in a large saute pan over medium-high heat. Working in batches, sear the meatballs lightly on all sides until they begin to brown. They will not be fully cooked at this point.
  • Transfer the seared meatballs (and any accumulated juices) to the marinara sauce.
  • Remove the bone marrow from the bone. Add to the meatballs and marinara sauce.
  • Cover and let simmer for an additional 20 minutes to finish cooking the meatballs and allow the bone marrow to render its fat.
  • Add cooked spaghetti to the finished sauce and toss to coat.
  • Serve garnished with toasted breadcrumbs and grated Parmesan cheese.
  • Enjoy!
