Sweet dates stuffed with the tang of Gorgonzola cheese and a walnut piece for some crunch. Mmm!

Steps:
- Mix cream cheese and Gorgonzola cheese together in a bowl.
- Cut a slit into each date so they can be spread flat. Spread cheese mixture into each date; top with a walnut piece.

CHOCOLATE-DIPPED DATES STUFFED WITH SPICED NUTS

Steps:
- Toss 24 almonds, 1 teaspoon orange peel, honey, and spices in small bowl.
- Cut slit in each date and remove pit. Press 2 spice-coated almonds into each slit and enclose nuts in date.
- Line small baking sheet with foil. Melt chocolate in small microwave-safe bowl until melted, about 20 seconds, stopping once to stir. Grasp end of 1 stuffed date and dip 3/4 into melted chocolate. Shake off excess chocolate. Place date on foil. Repeat with remaining dates. Sprinkle remaining orange peel over chocolate-dipped dates. Dip 1 plain almond halfway into chocolate; place atop 1 date. Repeat with remaining almonds and dates. Chill until chocolate sets, 30 minutes.
WALNUT STUFFED DATES
Delicious sweet snack from the Middle East. Recipe from Toronto Star. Orange and rose blossom water may be purchased in Middle East stores Time to cook does not include refrigeration time.

Steps:
- Slit dates on one side and stuff with walnuts.
- Close and set aside.
- In small saucepan, bring cream to boil over medium heat, stirring often.
- Stir in sugar until it melts.
- Stir in orange or rose blossom water and cocoa, reduce heat to medium-low and cook, stirring constantly, for 5 minutes.
- Remove from heat until misture is cool enough to touch.
- Spread coconut on plate.
- Dip dates in cocoa syrup and roll in coconut.
- Place on a plate or tray and refrigerate, covered, for several hours before serving.
SPICED DATES WITH MASCARPONE CHEESE
Fancy shmancy, but very easy to make. Very MiddleEastern/Mediterranean! You can serve it as a fruity appetizer or as a dessert.

Steps:
- In a medium saucepan, bring the wine to a simmer.
- Add the dates and poach until the skins blister.
- With a slotted spoon, lift out the dates and, while warm, remove and discard the skins.
- Cut open the dates on one long side, remove the pits and place two almonds in the center of each date.
- Fold closed.
- To the wine, add the honey, peppercorns, cloves, orange zest, allspice, cinnamon sticks and bay leaf.
- Continue simmering until the wine is reduced by half, about 20 minutes.
- Strain wine into a clean saucepan.
- Add the dates to the wine and heat gently, over a medium low heat, until warmed through, but not hot, then remove from heat.
- To serve, place a dollop of mascarpone in the center of each of four plates.
- Spoon two dates and a little wine sauce on each plate, sprinkle lightly with sea salt and serve.

- Preheat oven to 425 degrees. Stir together mascarpone, cinnamon, and sugar in a small bowl. Cut a slit lengthwise in each date, and remove pit. Fill each date with 1 tablespoon cheese mixture. Refrigerate dates until ready to serve, up to 2 hours.
- Toss almonds with oil on a rimmed baking sheet. Toast in oven until fragrant and deep golden brown, about 10 minutes; sprinkle with salt. Arrange toasted almonds, stuffed dates, and clementine segments on a serving platter.
