MARSHA'S CARROT CAKE



Marsha's Carrot Cake image

A favorite in our family for years - no nuts, raisins, or pineapple to get in the way of the tasty carrots!

2 1/4 cups flour
2 1/2 teaspoons ground cinnamon
1 1/2 teaspoons baking soda
1 teaspoon salt
4 eggs
2 cups sugar
3 cups freshly grated carrots
1 1/2 cups vegetable oil
6 ounces cream cheese
1/4 cup softened butter
2 1/4 cups powdered sugar (possibly more)
1 lemon, zest of

Steps:

  • Mix flour, cinnamon, soda, and salt and set aside.
  • In a large bowl or mixer beat eggs with sugar until fluffy and lemon colored.
  • Mix in oil and freshly grated carrots (best to buy whole carrots and grate them in food processor - the store-bought pre-shredded carrots don't integrate well into the rest of the cake like freshly-grated ones do).
  • Add flour mixture and stir to mix well.
  • Pour into well greased and floured bundt pan.
  • Bake in pre-heated 350 degree oven for 1 hr 15 minutes, or until prick inserted in center comes out clean.
  • Cool in pan on rack.
  • Make frosting by beating the cream cheese with the softened butter, then add lemon zest. From there gradually add the powdered sugar, adding more/less based on the feel. Note that as you make the frosting, it'll seem like it will never soften but it does!
  • Spread icing on the cooled cake. Be sure to store in the refrigerator if you're not going to eat right away, but do set it at room temperature about 30-60 minutes before serving.

This is a much loved recipe that my mother made often when I was growing up. It tastes great served with pinto or red kidney beans.

¼ cup vegetable oil
1 small onion, diced
1 tablespoon minced garlic
1 pound smoked sausage, cut into bite-sized pieces
1 ½ cups uncooked white rice
2 cups water
¾ (8 ounce) can tomato sauce, or to taste
1 teaspoon adobo seasoning
salt and ground black pepper to taste

Steps:

  • Heat the vegetable oil in a skillet over medium heat. Stir in the onion and garlic; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the sausage; cook and stir until the sausage is crisp. Mix in the rice, water, tomato sauce, adobo seasoning, salt, and black pepper. Bring to a boil, then reduce heat to low. Simmer until the rice is tender and the liquid has been absorbed, about 20 minutes.

1 (7.25 ounce) package macaroni and cheese mix
1 (.75 ounce) packet dry brown gravy mix

Steps:

  • Prepare macaroni and cheese mix according to package directions. In a separate pan, prepare brown gravy mix according to package directions. Place bologna slices in a skillet over medium-high heat, and fry until the edges are crispy. Cut bologna into small pieces. Mix brown gravy and bologna into macaroni and cheese, and serve immediately.

MARSHA'S PEANUT BUTTER COOKIES

I got this recipe from a woman I worked with. These are by far the best peanut butter cookies I've ever eaten. They're amazingly fluffy, and the PB chips take them to a whole other level of peanut buttery goodness. I like to make them large.

1 cup shortening
1 cup white sugar
1 cup brown sugar
2 eggs
1 cup peanut butter
2 cups all-purpose flour
2 teaspoons baking soda
1/4 teaspoon salt
1 (270 g) package peanut butter chips

Steps:

  • Preheat the oven to 375°F.
  • Cream softened shortening until fluffy. Add sugar gradually, mixing until creamy. Beat in eggs, one at a time and mix well. Add peanut butter and blend well.
  • In another bowl, measure flour. Add soda and salt and stir thoroughly to blend. Add to peanut butter mixture and mix thoroughly. Add peanut butter chips and stir.
  • Drop dough from spoon onto ungreased baking sheet. Bake in a 375 F oven for 12-15 minutes. Makes about 3 dozen large cookies.

I was cleaning out my pantry and had some baked beans I needed to use up and I also had a few other things in the ref. that I needed to use too, so I came up with this recipe and my husband just LOVED it :)

28 ounces of bush's original baked beans
1/4 cup pure maple syrup
1/4 cup molasses
1/3 cup ketchup
3 tablespoons spicy brown mustard
1/3 cup pineapple juice
1/2 lb Italian sausage
1/2 lb ground beef
1/4 cup brown sugar
3 tablespoons chopped onions
3 tablespoons chopped green bell peppers
1 -2 teaspoon Worcestershire sauce
brown sugar (for topping)

Steps:

  • Preheat oven to 350'.
  • In a frying pan fry hamburger and Italian sausage together. Fry til no longer pink in color. Drain
  • In a large bowl combine remaining ingredients together and add the meat.
  • Stir all together.
  • Spray a 2 quart baking dish with cooking spray ( I use Pam)
  • Add mixture into baking dish.
  • Sprinkle with more brown sugar over top and bake 20 to 30 minutes. Until bubbly.
  • Remove from oven and let cool down before serving.

1 tablespoon melted butter, plus more for baking dishes
1/4 cup store-bought or 3/4 cup homemade breadcrumbs
1 pound grated white cheddar cheese (4 cups)
Salt and pepper
8 ounces elbow macaroni
1 1/4 cups whole milk
8 ounces cream cheese

Steps:

  • Preheat oven to 400 degrees. Butter four 14-ounce ovenproof dishes. In a small bowl, toss 1 tablespoon melted butter with breadcrumbs and 1/4 cup cheddar.
  • In a large pot of boiling salted water, cook macaroni until al dente, according to package instructions; drain.
  • In a large saucepan over medium heat, bring milk to a boil. Reduce heat to medium-low; add cream cheese, cut into cubes, stir until melted, 2 minutes. Gradually stir in remaining cheddar until melted, 5 minutes. Add cooked pasta, 1/4 teaspoon salt, and 1/8 teaspoon pepper; toss to combine.
  • Divide the mixture among prepared dishes. Bake until bubbling, 10 minutes. Remove from the oven; sprinkle with the breadcrumb mixture. Bake until golden, 10 minutes more.
