MACAROON APPLE PIE
I found this recipe in a rural newspaper years ago. It's become one of my favorite recipes. I like to serve it warm with vanilla ice cream.

Steps:
- In a large bowl, combine flour and salt; cut in shortening until crumbly. Gradually add cold water, tossing with a fork until a ball forms. , Roll out pastry to fit a 9-in. pie plate; flute edges. Toss apples with sugar and cinnamon; pour into crust. Bake at 375° for 20 minutes. , Meanwhile, in a small bowl, combine the first four topping ingredients. Stir in the egg, butter and vanilla until smooth. Add coconut. Spoon over hot apples, carefully spreading to cover. Bake 30 minutes longer or until apples are tender.

This wonderful pie is a variation of macaroni and cheese.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
- Beat eggs and milk together. Pour half of the cooked macaroni into 9x13 inch baking dish. Cover macaroni with half of the cheese. Pour remaining macaroni into baking dish leaving a little room at the top. Cover with remaining cheese. Pour egg mixture over macaroni. Sprinkle with salt.
- Bake in a preheated over for an hour or until a knife inserted comes out clean.

- Place the apples in an ungreased 9-in. pie plate. Combine sugar and cinnamon; sprinkle over apples. Top with coconut and pecans; set aside., To make topping, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Combine flour and baking powder; gradually add to the creamed mixture until blended. , Drop small spoonfuls over apples. Bake at 350° until top is golden brown and fruit is tender, 25-35 minutes. - Heat oven to 325°F. Spray 9-inch glass pie plate with cooking spray. In small bowl, mix 1/2 cup Bisquick mix, the brown sugar and nuts. Cut in 2 tablespoons butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until crumbly; set aside.
- In medium bowl, mix apples, cinnamon and nutmeg. Spread in pie plate.
- In medium bowl, stir remaining ingredients until blended. Pour into pie plate. Sprinkle with streusel.

- Preheat oven to 425 degrees F (220 degrees C).
- In a bowl combine apples, sugar, flour, cinnamon, nutmeg and salt. Place mixture in a pastry-lined 9 inch pie plate. Dot with butter and adjust top crust that has been vented.
- Place in oven and bake at 425 degrees F (220 degrees C) for 10 minutes. Turn oven temperature down to 275-300 degrees F (135-150 degrees C) and bake 40-50 minutes or until crust is golden brown and apples are tender. Let cool and serve.

MACAROON TOP APPLE PIE RECIPE
Macaroon top apple pie is a delicious dish which can be made at home very easily. The ingredients you will need for making this recipe are readily available and are mostly present at home.

Steps:
- Add 1-1/2 cups all-purpose flour and ½ tsp salt to a large mixing bowl, and stir the contents of the bowl until the ingredients are thoroughly mixed.
- Slowly cut in ½ cup shortening until mixture in the bowl becomes crumbly. Add 2 to 3 tbsp cold water gradually and simultaneously toss the mixture with a fork until it assumes the shape of a ball.
- Preheat an oven at 375 degrees Fahrenheit.
- As the oven preheats, transfer the contents of the mixing bowl onto a flat surface and roll with a rolling pin until the pastry formed is big enough to fit a 9-in. pie plate; flute edges.
- Mix 4 cups tart apples (sliced and peeled) and ¼ tsp ground cinnamon and pour the mixture into the crust. Bake in the preheated oven for about 20 minutes.
- Add ¼ tsp salt to a small mixing bowl. Mix the ingredients and then add 1 egg, 2 tbsp melted butter and ½ teaspoon vanilla extract; simultaneously stirring contents of the small mixing bowl.
- Add in the last ingredient i.e. ¼ cup flaked coconut and carefully spoon mixture in the small mixing bowl over hot apples.
- Your aim should be to cover the entire surface properly.
- To complete the recipe, bake for another 30 minutes and check if the apples are tender. Keep on baking till that happens.
- After the pie is made, let it cool on the rack for 15 minutes.
- After then allow it to reach room temperature. Do not eat it hot, as the fillings can burn your mouth.

- Preheat oven to 375°. Place apples in a 9-inch pie plate. In a small bowl, mix 1/2 cup of the sugar and cinnamon sprinkle over apples. MY GRANDMOTHER'S APPLE MACAROON
A apple cinnamon & pecan filling covered by a crispy crust. This is a farovite of mine that I found in my grandmothers recipe book. When I say recipe book I don't mean a store bought one. This was written in her own hand. I do hope you enjoy as much as I do.

- FILLING:.
- Peel, core & thinly slice the apples. Place in a pie pan or baking pan. (I spray my pan with oil spray before filling however it may not be necessary.)
- Mix together the sugar and cinnamon then sprinkle over the sliced apples.
- Next sprinkle on the chopped pecans.
- BATTER:.
- Mix together the eggs, 1 1/2 cup sugar, 1 1/2 cup flour, 3/4 cup shortening and the 3/4 cup butter. Batter will be thick.
- Spread on top of filling.
- Bake at 300 until crust crisps approximately 45 minutes to 1 hour.

APPLE MACAROON PIE
My husband loves pies better than cakes so I try to find a lot of pie recipes to make for him. This is an interesting combination and he really liked it.

- Preheat oven to 400. Rub a little egg white or milk on bottom of crust to prevent it from being soggy.
- Place apple slices in bottom of pie shell. Combine the flour, sugar & salt then sprinkle over apples. Dot with the tablespoon of butter and bake on 400 for 20 minutes.
- TOPPING: While pie is baking, prepare topping by combining the sugar, melted butter, coconut, egg and milk. Remove pie from oven and reduce temperature to 350.
- Spread topping on hot pie and return to oven. Bake @ 350 an additional 30 minutes or until pie is done.

- Line a cookie sheet with a silicone mat (my favorite baking sheet for macarons and favorite silicone mats for macarons). I highly recommend a silicone mat of some kind, but if you don’t have one then you can also use parchment paper.
- In a medium bowl with a hand mixer, beat the butter until it is very soft and creamy. The butter needs to be really soft or your buttercream won’t be as fluffy as it should be.
