- In a large bowl, combine butter and sugar. Combine flour and baking powder; add to butter mixture. Add egg; mix until well blended and crumbly. Add milk and blend until dough forms a soft ball., Pat dough onto bottom and 1-1/2 in. up sides of a greased 13-in. x 9-in. baking dish. - Preheat the oven to 325 degrees F (165 degrees C). In a medium bowl, mix together the flour, brown sugar and butter until crumbly and well blended. Press the mixture into the bottom of an ungreased 9x9 inch baking pan.
- Bake for 20 minutes in the preheated oven, until firm and golden. Set aside to cool.
- Pour cold water into a medium saucepan and sprinkle the gelatin over it. Let stand 5 minutes. Stir in the white sugar and salt. Cook over medium heat, stirring to dissolve sugar and gelatin. When the mixture is clear, remove from heat and stir in the confectioners' sugar. Set aside until cool.
- When the mixture has cooled to luke warm, stir in the baking powder, vanilla and almond extracts and any color of food coloring. Beat at high speed with an electric mixer until the mixture can hold a peak. Pour over the shortbread base and cool until the gloss disappears. Cut into 36 squares and enjoy!

COCONUT-PINEAPPLE SKEWERS WITH MARSHMALLOWS
Grilling does great things to chunks of fresh, sweet pineapple, condensing and caramelizing their fruity, sugary juices. In this fun, kid-approved dessert, the pineapple is given a double dose of coconut - a slick of coconut oil before grilling and a shower of shredded coconut afterward. Then, the hot, singed pineapple is laid on a bed of mini marshmallows, which get a little gooey from coming in contact with the heat. Eat this in bowls as is, or add some chopped pecans and coconut ice cream or sorbet for contrasting textures and temperatures.

- Heat the grill to high. As the grill is heating, thread pineapple chunks onto metal or pre-soaked wooden skewers (see Tip), leaving space in between each piece for maximum browning. Brush all sides of the pineapple chunks with coconut oil and dust with cinnamon.
- When the grill is hot, lightly brush the grates with oil, and add the pineapple skewers. Cook, rotating them carefully every few minutes, until they are evenly browned and slightly charred in places, about 4 to 8 minutes.
- While the pineapple is grilling, divide marshmallows across 4 bowls. Remove pineapple from the grill and, using a fork, immediately slide the pineapple off the skewers and onto the marshmallows. Let sit for a few minutes for the hot pineapple to soften the marshmallows.
- Sprinkle each serving with shredded coconut, and top with pecans and small scoops of coconut sorbet or ice cream, if using.
PINEAPPLE SQUARES
These squares are so popular in our N. E. Pa. area and are often requested for bake sales. At times more flour, little at a time, may have to be added to make it easier to roll without the dough falling apart. It is a very forgiving dough, though. If you seem to have extra filling left over it may be used to make small tarts using pie crust dough.

- Place filling ingredients in a large saucepot. Allow to reach boiling point. Reduce heat and let simmer 5 minutes, mixing often. Remove from heat and let cool completely. May be done earlier in the day or day before.
- Dough:.
- In a large bowl work the flour and the butter (or margarine) as you would for pie crust.
- Add the sugar, salt, baking powder, baking soda and mix well.
- Add vanilla, eggs and milk, adding a little at a time until dough comes together. Depending on the flour you may have to add a little more.
- Dough should be pliable enough to be able to roll out on a floured surface. Divide into 2 pieces.
- Take one piece and roll out dusting with sufficient flour to prevent sticking. Using a 12x17 cookie sheet with sides, place dough into ungreased pan allowing the sides to come up the sides. Don't cut off excess dough.
- Pour in filling and even out making sure the corners are evenly filled inches (Filling recipe follows).
- Again, flour surface and roll out other piece of dough and place on top.
- Press dough around the edges to seal in pineapple filling. Then cut around to remove excess dough. Brush top with well beaten egg. Bake 350 deg. for 45 minutes.
- Let cool. Cut into desired squares. May be dusted with confectioners sugar.
MARSHMALLOW SQUARES
You actually make the pink marshmallow topping. It is very easy. The flavor and texture of this is delicious. They are among the first to disappear on a plate of dainties.

- FIRST LAYER: Combine first 3 ingredients together. Mix to crumble. Press into ungreased 9 x 9 inch pan. Bake in 325 degrees F. oven for 20 minutes until set and golden. COOL.
- SECOND LAYER: Put water in saucepan. Sprinkle gelatin over and let stand for 5 minutes. Add granulated sugar and salt. Heat over medium heat stirring to dissolve gelatin and sugar. Remove from heat. Stir in icing sugar. COOL.
- When cool, beat until foamy. Add baking powder, vanilla and almond. Add food coloring to tint a pretty pink. Beat at high speed until thick enough to stand in peaks.
- Pour soft pink mixture over shortbread base. COOL until gloss disappears.
- Additions to be tried if you care to---1/2 cup of chopped cherries or 1/2 cup toasted chopped almonds.
- Cut into 36 pretty squares.
