FUDGY CHOCOLATE BROWNIES
This decadent fudgy chocolate brownies recipe is from "Martha Stewart's Baking Handbook." It makes for a delicious dessert or afternoon snack.

Steps:
- Preheat oven to 350 degrees. Butter an 8-inch square baking pan or heatproof glass dish. Line pan with parchment paper, leaving a 1-inch overhang on 2 sides. Set aside. Place butter and chocolate in a large heatproof bowl set over (but not touching) simmering water; stir frequently until chocolate and butter are melted, about 7 minutes. Remove bowl from heat; let cool to room temperature, 10 to 15 minutes.
- Stir sugar into cooled chocolate mixture until combined. Whisk in eggs one at a time, whisking until smooth after each addition. Whisk in vanilla. Gently fold in flour and salt.
- Pour batter into prepared pan, and smooth top with an offset spatula. Bake until cake tester inserted in the center comes out with only a few moist crumbs attached, 40 to 45 minutes. Transfer pan to a wire rack to cool completely.
- Run a knife or offset spatula around the edges of the pan. Using parchment, lift brownies out of pan and onto the rack. Transfer to a cutting board; cut into 2-inch squares.
PERFECT BROWNIES
Martha came across the recipe for these incredibly moist and delicious brownies in a cookbook. As it turns out, the recipe was developed by Elisabeth Luard, who happens to be the mother-in-law of Frances Boswell, food editor at Martha Stewart Living.

- Preheat oven to 325 degrees. Butter a 7-by-11 1/2-by-2-inch baking pan. Line pan with parchment paper; set aside.
- Combine butter and chocolate in a heat-proof bowl set over a pan of simmering water, and melt. Remove from heat, and let stand until cool. Sift flour and baking powder together into a medium bowl; set aside.
- In the bowl of an electric mixer fitted with the whisk attachment, beat eggs until thick and creamy, about 5 minutes. Gradually beat in sugar. Continue beating until mixture is thick and mousse-like and a trail is left on the surface when the whisk is lifted, about 3 minutes more. Gradually fold in the chocolate mixture, alternating with the dry ingredients. Fold in nuts.
- Pour batter into prepared pan, and bake until top is cracked and center is just firm to the touch, 40 to 45 minutes. (The brownies should not have a cakelike consistency). Remove from oven, and let cool in pan.
- Cut into squares in the pan before turning out onto a board.

- 1. Preheat oven to 350˚F. Butter a 9" x 13" baking pan; set aside.
- 2. In the bowl of an electric mixer fitted with the paddle attachment, beat eggs on low speed. Add cannaoil and sugar, beating for 10 minutes.
- 3. Meanwhile, sift together flour, cocoa, baking powder, and salt. Gradually add egg mixture, beating just until combined. Stir in pecans and vanilla.
- 4. Pour batter into prepared baking dish. Bake until edges just start to pull away from pan, about 35 minutes. Transfer to a wire rack to cool. Spread icing over brownies; allow to set before serving.
- 5. Icing Directions: In the bowl of an electric mixer fitted with the paddle attachment, beat 1 large egg with 1 cup confectioners' sugar on low speed. With mixer running, add another 1/2 cup confectioners' sugar and 2 tsp cocoa powder into egg mixture; mix well. Add remaining 1 cup confectioners' sugar, 1 tsp pure vanilla extract, and 2 tbsp melted butter (use cannabutter if greater potency is desired); beat to combine.

- Preheat oven to 350 degrees. Line an 8-by-8-inch baking pan with parchment paper, leaving an overhang on all sides; set aside.
- In a medium bowl, combine butter and chocolate and place over (but not touching) simmering water; stir occasionally until melted and smooth. Remove bowl from heat and whisk in sugar. Add eggs, one at a time, until incorporated. Add cocoa powder and salt. Fold in flour and mix until combined.
- Pour batter into prepared baking pan and transfer to oven; bake until set and a cake tester inserted into the center comes out with crumbs but is not wet, 35 to 40 minutes. Remove from oven and let cool for 15 minutes before removing brownies from pan. Let cool completely on a wire rack before cutting. Brownies can be stored in an airtight container for up to 3 days.
TO DIE FOR BROWNIES
No other recipe I've found compares. The ultimate cake-like brownie. After many years this recipe still holds strong in our family.

Steps:
- Combine flour, baking powder and salt (set aside).
- Combine melted butter, cocoa, sugar, eggs and vanilla.
- Blend dry mix into moist mixture.
- Add nuts and pour batter into a greased 9x13-inch pan.
- Bake at 350°F degrees for 35 minutes or until it just starts to pull away from sides.
- ICING: Melt butter in saucepan with milk on medium/low.
- Combine cocoa with sugar and stir into milk mixture.
- Add vanilla and let cool till spreading consistency (will be runny at first).
- Sprinkle with more nuts if desired.
