But the French take first prize with their simple recipe for pain perdu, literally "lost bread," which we have come to know as French toast. Once you've mastered the basics-coating slices of bread in an egg-and-milk mixture and sauteeing them-a range of possibilities opens. 6 large eggs
1 1/2 cups milk
Juice of 1 medium orange, (about 1/4 cup)
2 tablespoons pure vanilla extract
2 tablespoons cognac, (optional)
1 tablespoon sugar
Zest of 1 lemon, (about 1 tablespoon)
1/2 teaspoon ground cinnamon
Pinch of freshly grated nutmeg
Pinch of salt
6 slices bread, such as brioche, sliced 1-inch thick, preferably day-old
4 tablespoons unsalted butter
4 tablespoons vegetable oil
Pure maple syrup, (optional)

Steps:

  • Whisk together eggs, milk, juice, vanilla, cognac, sugar, zest, cinnamon, nutmeg, and salt in a bowl; set aside.
  • Place bread in a shallow baking dish large enough to hold bread slices in a single layer. Pour egg mixture over bread; soak 10 minutes. Turn slices over; soak 10 minutes more or until soaked through.
  • Preheat oven to 200 degrees. Place a wire rack on a baking sheet, and set aside. Heat 2 tablespoons butter and 2 tablespoons vegetable oil in a skillet over medium heat. Fry half the bread slices until golden brown, 2 to 3 minutes per side. Transfer to wire rack; place in oven while cooking remaining bread. Wipe skillet, and repeat with remaining butter, oil, and bread. Keep in oven until ready to serve. Serve warm with maple syrup, if desired.

It is the best french toast our family has ever had, and our guests all agreed! I make this on a Sunday morning if we still have extra challah left over.

1 1/2 cups milk
1 orange, juice of
2 tablespoons pure vanilla extract
2 tablespoons liquor (I use almond or orange flavored, Martha's recipe states cognac)
1 tablespoon sugar (splenda works equally well)
1 lemon, zest of
1/2 teaspoon ground cinnamon
1 pinch ground nutmeg
1 pinch salt
6 slices bread, 1-2 days old (1 inch pieces, challah or brioche are best)
canola oil, for frying (any neutral oil will do, may add unsalted butter for more flavor)
powdered sugar
maple syrup
mixed berry

Steps:

  • Whisk together eggs, milk, juice, vanilla, liquor, sugar, zest, cinnamon, nutmeg, and salt in a bowl.
  • Place bread in a shallow baking dish large enough to hold bread slices in a single layer.
  • Pour egg mixture over bread; soak 10 minutes.
  • Turn slices over (Carefully) and soak 5-10minutes more, until soaked through.
  • Preheat oven to 200 deg F. Place a wire rack on a baking sheet, and set aside.
  • Heat canola oil (with some butter if so wish) in a skillet over medium heat.
  • Fry half the bread slices until golden brown, around 3 minutes per side.
  • Transfer to wire rack; place in oven while cooking remaining bread.
  • Wipe skillet and repeat with fresh oil/butter and bread.
  • Keep in oven until ready to serve.
  • Serve with dusted powdered sugar and maple syrup (I like fresh berries on top, too).

  • Preheat the oven to 350 degrees F. Whisk 4 eggs, 1 1/2 cups half-and-half or milk, 1/2 teaspoon nutmeg, 1 teaspoon vanilla extract, 1 teaspoon sugar and a pinch of salt in a shallow bowl. Heat 1/2 tablespoon butter in a nonstick skillet over medium heat. Working in batches, dip 6 thick slices white bread, challah or brioche in the egg mixture and cook in the skillet until golden, 2 to 3 minutes per side, adding more butter as needed. Transfer to a baking sheet and bake until puffed, 8 to 10 minutes. Meanwhile, melt 4 tablespoons butter in the same skillet until browned, about 5 minutes. 2 tablespoons vanilla extract
1/2 teaspoon ground cinnamon
pinch of ground nutmeg
pinch of salt
6 slices thick day or bread or 12 slices of thinner sliced bread ( use gluten free bread for gluten free version )
4 tablespoons butter
4 tablespoons oil for cooking

Steps:

  • In a bowl whisk together eggs, milk, vanilla, cinnamon, nutmeg, and salt.
  • Place bread in a single layer in a shallow baking pan or cookie sheet with sides.
  • Pour egg mixture over bread. Let soak about 10 minutes.
  • Flip bread over and soak for 10 more minutes making sure the bread is coated well.
  • Preaheat oven to 250 degrees. This will keep the French toast warm and not soggy.
  • Place a cooling rack on a baking sheet and set aside.
  • Heat skillet or griddle. Add part of the oil and butter to pan.
  • Cook several slices of bread 2-3 minutes per side.
  • Transfer to wire rack and place in oven to keep warm.
  • Wipe out skillet if needed. Add more oil and butter, cook several more slices of bread 2-3 minutes per side.
  • Repeat until all bread is cooked.

Four 2 1/2-inch-thick slices country bread, such as filone
9 large eggs
1 quart heavy cream
1 cup granulated sugar, plus more for sprinkling
1/4 cup brandy
1 teaspoon kosher salt
4 tablespoons (2 ounces) unsalted butter
All-purpose flour, for dusting
Confectioners' sugar, for serving (optional)
Pure maple syrup, warmed, for serving

Steps:

  • Place the bread in a 2-quart baking dish. Whisk the eggs in a large bowl until combined. Add the cream, granulated sugar, brandy and salt and whisk to combine.
  • Pour the custard over the bread slices and let sit at room temperature for 30 minutes. Flip the bread over, cover with plastic wrap and refrigerate for 24 hours.
  • Position an oven rack in the middle of the oven and preheat to 350 degrees F.
  • Melt the butter in a large ovenproof saute pan over medium-high heat. Lightly sprinkle one side of each slice of the soaked bread with some flour and some granulated sugar. Place the soaked bread floured-side down in the pan and cook until caramelized, about 5 minutes. Flip the bread over, sprinkle the other side with flour and granulated sugar and transfer the pan to the oven.
  • Bake until the toast is cooked through, caramelized on top and custardy in the middle, 18 to 24 minutes.
  • Sprinkle with confectioners' sugar if using and serve immediately with maple syrup.
