- In a large bowl, combine the flour, sugar, orange zest, baking powder and baking soda. In a small bowl, whisk water, orange juice, egg, butter and vanilla. Stir into dry ingredients just until moistened. Fold in walnuts., Transfer to greased 9x5-in. loaf pan. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely., In a small bowl, combine icing ingredients. Drizzle over bread.

- Melt 1 tablespoon butter in a small skillet over medium heat.
- Using a glass or cookie cutter, create a hole in the middle of the bread, removing the center so it is perfectly circular. Be careful that the bread does not burn. Serve warm.

- In bread machine pan, place the first seven ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). , Meanwhile, in a small bowl, beat the cream cheese, sugar and vanilla until smooth; set aside. In a microwave-safe bowl, combine the pudding mix, baby food and cinnamon until smooth. Cover and microwave on high for 2 minutes; stir., When cycle is completed, turn dough onto a lightly floured surface. Divide in half; shape each portion into a ball. Roll each into a 9-in. x 8-in. rectangle. Spread cream cheese mixture to within 1/2 in. of edges; top with carrot mixture. Roll up jelly-roll style, starting with a long side; pinch seam to seal. , Cut each into six rolls. Place cut side up in two greased 9-in. square baking pans. Cover and let rise in a warm place until doubled, about 30 minutes. , Bake at 350° for 25-30 minutes or until golden brown. Cool on wire racks for 5 minutes. SUNSHINE BREAD
This is made into the shape of a sun and is so cute! I've used it a kid's parties in the summertime and for a brunch and everyone loved the novelty of it!

Steps:
- Spray baking sheet with nonstick cooking spray.
- Working on the baking sheet roll out crescent rolls and take each triangular piece and form a sunshine.
- You may cut more rays from each piece if you would like.
- Beat 4 oz of the cream cheese and add the sugar and egg yolk.
- Cream the cheese and the added ingredients until well blended.
- Spread the cream cheese mixture on each point.
- Once the cream cheese has been spread on the points start twisting each point.
- Alternate twisting the points by twisting one towards the center and then the next one away from the center and so forth until all have been twisted.
- Place the softened remaining 4 oz of cream cheese in the center of the sunshine.
- Bake on a baking sheet sprayed with nonstick cooking spray at 375 degrees for 20 minutes or until golden brown.
- Be sure that the center of the sunshine is done and not doughy.
- Heat the marmalade over medium heat until melted and drizzle over the baked sunshine before serving.
