BLACK-EYED PEA DIP

Black-Eyed Pea Dip will be the star of your next party and is the ultimate New Year's Eve appetizer. This EASY Black-Eyed Pea Dip recipe is loaded with black-eyed peas (for good luck!), Rotel, green chiles and cheesy deliciousness! Serve with tortilla chips for a crowd pleasing appetizer!

1/2 cup butter
1 small onion (chopped)
1 teaspoon minced garlic
3 (15-ounce) cans black eyed peas (rinsed & drained)
2 (10-ounce) cans mild Rotel (drained (any brand diced tomatoes and green chiles))
1 (4-ounce) can chopped green chiles (drained)
16 ounces Velveeta cheese*

Steps:

  • Melt butter in a medium to large skillet over medium heat. Add onion and sauté until soft and translucent. Add garlic and continue to sauté for about 1 minute more. Stir in all other ingredients. Continue to cook and stir until cheese melts and mixture becomes smooth, about 5 minutes.
  • Transfer dip to a serving dish or small crockpot to keep the dip warm. Garnish with fresh cilantro, diced tomato and green onion, if you'd like. Serve with tortilla chips and enjoy!

Three 15-ounce cans black-eyed peas, rinsed
10 ounces sharp Cheddar, grated
1/2 cup finely chopped canned pickled jalapenos, juices reserved
1/2 stick (4 tablespoons) unsalted butter, softened
1/4 teaspoon garlic powder
1 medium sweet onion, finely chopped
Salt and freshly ground pepper
Salt and freshly ground pepper
Corn chips, for serving

Steps:

  • In an electric mixer or large mixing bowl, mix together the peas, Cheddar, jalapenos, 3 tablespoons of the reserved jalapeno juice, butter, garlic powder and onion until blended. Season with salt and pepper. Heat the dip in a medium slow cooker and serve it warm with corn chips.

I'm sort of a snob when it comes to trying new recipes. I just seem to like my old tried and true ones best, and it takes a lot for something new to grab my attention. I had to have the recipe for this dip after I tried it on Super Bowl Sunday 2006. Garth is a die-hard Steelers fan, so it was an exciting day. Everybody always brings something for the party, and this was my friend Kim's contribution. Being a good southern girl, I love anything with black-eyed peas in it, but for you folks who are right now turning up your noses at the idea of eating black-eyed peas, all I can say is just try it. In fact, maybe I should name it something else for those skeptics. How about Pea Dippy?

3 (15-ounce) cans black-eyed peas, rinsed and drained

Steps:

MINTY PEA DIP

3 cups frozen green peas
1/4 cup fresh mint leaves
Zest and juice of 1 lemon
1 clove garlic
2 tablespoons olive oil, plus more for drizzling
1 tablespoons tahini
Coarse salt and pepper

Steps:

  • Cook peas in salted boiling water until tender, 1 minute. Transfer to an ice-water bath; drain.
  • Pulse peas in a food processor with mint, lemon zest and juice, garlic, 2 tablespoons olive oil, and tahini.
  • Season with salt and pepper; drizzle with oil.

Smoked ham hock adds undeniable flavor to this delicious black-eyed peas recipe.

1 pound dried black-eyed peas
1 meaty smoked ham hock
1 large yellow onion, chopped
3 cloves garlic, smashed
1 tablespoon coarse salt
2 bay leaves

Steps:

  • In a large bowl, soak beans overnight covered by at least 2 inches of water. Drain and rinse beans.
  • Place beans, ham hock, onions, garlic, salt, and bay leaves in a large pot and add water to pot just to cover beans. Bring to a boil, reduce heat, and simmer, stirring occasionally, until beans are tender, 45 minutes to 1 hour.
  • Remove from heat. Transfer ham hock to a cutting board. When cool enough to handle, discard skin and bones, chop meat, and return meat to the pot. Serve beans directly from the pot using a slotted spoon.

1 small onion, finely chopped
Coarse salt and ground pepper
1/2 teaspoon dried oregano
2 cans (15 ounces each) black-eyed peas, drained and rinsed
1 can (14 1/2 ounces) reduced-sodium chicken broth
1/4 cup fresh flat-leaf parsley, chopped
1/4 teaspoon hot sauce, such as Tabasco

Steps:

  • In a large saucepan, heat oil over medium. Add onion; season with salt and pepper, and cook until softened, 3 to 5 minutes.
  • Add oregano, black-eyed peas, and broth. Bring to a boil, reduce to a simmer, and cook until liquid is thick and peas are tender, 15 to 20 minutes. Stir in parsley and hot sauce; season with salt and pepper. Serve.
