1 cup flour
1/2 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 medium egg
1 cup milk
2 teaspoon butter, melted
1 cup oil
6 ripe but firm saba bananas, peeled and sliced lengthwise into about 1/4 inch-thick pieces
sugar, for sprinkling

Steps:

  • Mix the flour, sugar, baking powder, salt, egg, milk and butter in a bowl. Then add the bananas and mix well. In a preheated pan with oil, using a ladle, scoop the batter with bananas into the oil and fry until golden brown. Remove from pan and drain on paper towels. Dust with sugar before serving.

2 tablespoons sugar
1 egg, beaten
1/4 cup milk
1 pinch salt
4 medium bananas (the firmer they are, the better)
peanut oil (for frying)

Steps:

  • Mix together the flour, sugar, egg, milk and salt to make a smooth, paste-like batter.
  • Leave to rest for one hour.
  • Peel the bananas and slice each one in half lengthwise, then across into chunks about three inches long.
  • Dip the banana pieces into the batter and shallow fry in hot oil for a few minutes or until golden brown all over.
  • Drain quickly on a wire rack or paper towel, and serve warm.
  • If you like, serve them with real maple syrup, powdered sugar, or honey, for extra sweetness.
