MARY BERRY'S CHRISTMAS PAVLOVA
Mary's pavlova is topped with pretty berries, but most fruits work well so feel free to use what's in season. It's a great dessert for Christmas because it can be made well ahead.

- Preheat the oven to 160°C/140°C fan/315°F/Gas 3. Line a baking sheet with baking parchment and draw a 30cm circle on the paper. Draw a 15cm circle in the centre of the 30cm circle.
- Put six egg whites into a mixing bowl and whisk with an electric whisk until they look like clouds. Gradually add the sugar a little at a time, whisking on maximum speed until they are stiff and glossy. Mix the vinegar and cornflour in a cup until smooth, then stir into the bowl.
- Spoon the meringue between the 2 circles on the baking parchment, to make a wreath shape. Using a large spoon, make a trench in the meringue for the cream and fruit to sit in. Slide into the oven, then immediately reduce the temperature to 140°C/120°C fan/275°F/Gas 1 and bake for 1 hour-1 hour 15 minutes. Turn the oven off and leave the pavlova inside for an hour or overnight to dry.
- To assemble, whip the cream, vanilla and icing sugar until just stiff. Spoon the cream into the trench in the meringue. Arrange the strawberries, raspberries, blueberries and pomegranate on top and decorate with a few mint leaves, if using. To serve, dust with icing sugar and cut in wedges.The pavlova can be made up to 1 month ahead and stored: wrap it in clingfilm and then foil and keep in a cool place.

These sweet Christmas buns make a great alternative to mince pies and look really festive on the table.

- Place the flour into a large mixing bowl, add the salt to one side and the yeast to the other side.
- Warm the milk and butter in a small saucepan until the butter is melted and the mixture is lukewarm. Pour into the flour mixture, add the eggs and stir thoroughly until the contents of the bowl come together as a soft dough. The dough will be sticky.
- Tip the dough onto a lightly floured work surface and knead well for 5 minutes, until the dough is smooth and elastic. Alternatively this can be done in a stand mixer using a dough hook.
- Place the dough into an oiled bowl and leave to rise, covered with a damp tea towel, for one hour or until doubled in size.
- Mix the mincemeat with the diced apple, pear, orange zest, candied peel, pistachio nuts and cinnamon.
- Tip the dough out onto a lightly floured work surface. Roll out the dough into a rectangle about 50cm x 45cm.
- Tack down the long side of the dough rectangle nearest to you by pressing it down onto the work surface with your thumb.
- Brush all over with the melted butter. Then spread the mincemeat mixture over the dough, leaving a 2cm border.
- Roll the opposite long side of the dough towards you quite tightly, until the roll is complete and tight. Trim the ends to neaten. With a sharp knife, cut it into 15 thick rounds of about 4cm.
- Line a very large baking tray, or the grill tray from your oven, with baking parchment.
- Arrange the rolls on the prepared tray (cut side up) in a Christmas tree shape: 1 on top, 2 underneath, 3 in the third row, 4 in the fourth row, 5 in the fifth row, and use some of the trimmings to make a trunk. You want the rolls to be close enough so that when they rise further and are baked, they will bake with their sides touching. They can then be pulled apart and you get a lovely soft edge.
- Cover loosely and let rise for 30-45 minutes.
- Pre-heat the oven to 190°C/170°C fan/375°F/Gas 5. When the buns are ready, put them in the oven and bake for 20-25 minutes until golden brown. Check after 15 minutes or so and cover the buns with foil if they are getting too brown.
- Remove the buns from the oven and let them cool slightly before transferring them from the tin to a cooling rack.
- Melt the jam in a small saucepan with a splash of water until smooth. Brush the jam over the buns to glaze and allow to cool.
- Mix together the icing sugar, orange zest and 2 tablespoons of water. Place in a piping bag and pipe on the tree for garlands. Garnish with glace cherries, candied peel and chopped pistachio nibs.
STRAWBERRY PAVLOVA
A beautifully presented strawberry pavlova from Mary Berry. With a crispy outer and soft centre, the pavlova recipe is finished with strawberries and cream.

- Preheat the oven to 160°C/Fan 140°C/gas 3. Lay a sheet of non-stick baking parchment on a baking sheet and mark a 23cm (9in) circle on it. Put the egg whites into a large bowl and whisk until stiff and cloud-like. Add the sugar a teaspoonful at a time, whisking well after each addition, until all the sugar has been added. Blend the cornflour and vinegar together and whisk into the meringue mixture. Spread the meringue out to cover the circle on the non-stick baking parchment, building up the sides so they are higher than the middle. Place in the oven but immediately reduce the temperature to 150°C/300°F/gas 2. Bake for about 1 hour until firm to the touch and a pale beige colour. Turn the oven off and allow the Pavlova to become quite cold while still in the oven. If you keep the oven door closed you will encourage a more marshmallowy meringue. Remove the cold Pavlova from the baking sheet and parchment and slide onto a serving plate. Top with the whipped cream and strawberries, then chill in the fridge for 1 hour before serving.

- Preheat the oven to 160C/140C Fan/Gas 3. Draw a 40x10cm/16x4in rectangle on a sheet of baking paper and place the paper (pencil-side down on a large baking sheet or shallow baking tray.

- Whip the cream until soft peaks form, then lift out 1 heaped tablespoon and set aside. Fold the limoncello and three-quarters of the passion fruit pulp into the whipped cream, then fold in the cubed mango.
- Spoon the cream mixture along the centre of the pavlova. Spoon a little of the reserved cream into each nest and top with the chopped pistachios.

- Whisk the egg whites with an stand mixer – I use my Kitchen Aid until they form stiff peaks – when you reach this stage, start adding the sugar 1tsp at a time. Once all of the sugar is incorporated it should be glossy!

- Measure the sugar out into a small bowl. Keep the mixer running and add the sugar to the eggs one teaspoonful at time until it is all added.
- Measure the cornflour and white wine vinegar out into a small dish and give them a good mix. Pour it slowly into the meringue mixture.
- Pour the meringue out on to your baking tray and spread it out to cover the circle. Build up the sides a bit so they are higher than the middle (to keep your fruit in place later).
