MARY JANE'S GREAT CHICKEN RECIPE

This IS the chicken recipe of all chicken recipes. I don't know what makes this recipe so different but it just is so good. My cousin shared this with me years ago and I wanted to post this before it got lost in the shuffle. Might have come from Vincent Price's cookbook.

4 slices white bread
1 tablespoon italian seasoning
1/4 cup grated asiago cheese
1/2 tablespoon garlic salt
4 chicken breasts
2 eggs
1/3 cup milk
1/3 cup oil
2 carrots
2 celery ribs
1/2 cup parsley (or more if you like)

Steps:

  • Mix up the breading ingredients (bread, cheese, garlic salt) and you can put that in the refrigerator and in the meantime, beat up 2 eggs with 1/3 cup milk.
  • Place chicken breasts in the egg and milk mixture and let rest for 10 minutes.
  • Put breading on wax paper and bread the breasts.
  • Fry in skillet on medium heat 5 minutes per side til golden brown.
  • Throw in skillet some carrots, celery, parsley.
  • Dump in 1 cup chicken broth, not covering breasts completely (so the top of the breasts stay breaded and golden brown; you don't want to rinse off the breading with this broth).
  • Simmer breasts for an hour til tender and serve the cooked carrots and celery with breasts.

LEMON CHICKEN III

Chicken breasts marinated in lemon juice, then coated in seasoned flour and fried, and finally baked in chicken broth with brown sugar, fresh parsley and lemon slices. This is the best lemon chicken you will ever taste! It is very good for making for a family dinner.

6 skinless, boneless chicken breast halves
2 cups fresh lemon juice
1 cup all-purpose flour
1 ½ teaspoons salt
2 teaspoons paprika
1 teaspoon ground black pepper
½ cup vegetable oil
⅓ cup light brown sugar
¼ cup chicken broth
6 slices lemon
½ cup finely minced fresh parsley

Steps:

  • To Marinate: Combine chicken and lemon juice in a large resealable plastic bag. Squeeze out air and seal bag. Refrigerate to marinate overnight, turning once.
  • Remove chicken from marinade, reserving 2 tablespoons marinade and disposing of the remainder. Mix together flour, salt, paprika and pepper in a large resealable plastic bag. Add chicken breasts one at a time, seal bag and shake to coat evenly.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat oil in a large skillet over medium high heat. Fry coated chicken until well browned, about 10 to 15 minutes. Arrange browned chicken in a 9x13 inch baking dish and sprinkle with brown sugar. Mix broth with reserved marinade and pour mixture over chicken. Top each breast with a lemon slice and sprinkle all with parsley.
  • Bake in the preheated oven for about 20 to 30 minutes, or until cooked through (juices run clear) and tender.

This family recipe was almost lost. Grandma gave this recipe to Mary S. after the dementia set in. Sarah was at Mary's after Grandma's funeral getting a recipe. This recipe fell out of Mary's box and Sarah picked it up, recognizing her mother's handwriting. Mary pled with Sarah to let her keep it saying that Grandma had given it to her. Sarah made her a copy and the original recipe is in Sarah's recipe box and now here.

1 cup firmly packed brown sugar
1 cup sugar
1 cup margarine (stick margarine, no tub)
1 cup canola oil
1 large egg
1 teaspoon salt
1 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon cream of tartar
1 cup Rice Krispies
1 cup flaked coconut
1 cup rolled oats
1/2 cup nuts
3 1/2 cups flour

Steps:

  • Blend together sugars, margarine, oil, egg and vanilla.
  • Add flour salt, baking soda and cream of tarter.
  • Add remaining ingredients and mix well.
  • Drop on cookie sheet by spoonfull and press down with a fork.
  • Bake at 350° for 12-15 minutes.
