MARY JANE'S POTATOES

Our Aunt Mary Jane made these potatoes at a family reunion back in '76 and they have been a family staple ever since! They go great with anything, and are so easy! I recommend any waxy potato, as russets etc. tend to be too dry.

Number Of Ingredients 5

6 -8 large white potatoes or 6 -8 large yukon gold potatoes
1 large sweet onion, diced to about 1/4 inch pieces (Walla Wallas are the best)
1/2 cup butter, one cube
2 cups cream or 2 cups half-and-half
1/2 teaspoon seasoning salt (or to taste)

Steps:

  • Boil potatoes WITH THE SKIN ON until barely fork tender, about 20 minutes.
  • Drain and cool.
  • While potatoes are cooling, saute onion in butter just until opaque. You don't want them browned. Set aside.
  • When cool enough to handle, peel potatoes and grate them into a 9 x 13 casserole.
  • Top potatoes with onions and butter, and sprinkle on seasoning salt to taste.
  • Pour cream over potatoes.
  • Bake in a preheated 350°F oven for about 45 minutes or until golden brown on top and cream has cooked into the potatoes.

1 (32-ounce) package frozen hashbrown potato
1 onion, chopped
1 (10 3/4-ounce) can cream of potato soup
1 (10 3/4-ounce) can cream of mushroom soup
16 ounces sour cream
2 teaspoons seasoned salt
1 sleeve saltine crackers, crushed
1 stick butter, melted

Steps:

  • In a large mixing bowl, combine hash browns, onion, soups, sour cream and salt together. Pour into a lightly greased 13"x9" baking dish. Top with crackers and pour butter over all. I was trying to come up with something different than pizza on football practice nights, so i came up with this quick meal.

½ cup vegetable oil for frying
1 ½ cups milk
1 egg
1 (7.6 ounce) package garlic flavored instant mashed potatoes
2 teaspoons salt
2 teaspoons ground black pepper
1 ½ pounds chicken tenders

Steps:

  • Heat the oil in a large skillet over medium heat.
  • While the oil is heating, beat the milk and egg together in a bowl. In another bowl, stir together the instant mashed potatoes, salt, and pepper.
  • Stir the chicken tenders with the milk mixture to coat thoroughly, then shake off excess milk and dip each tender into the potato flakes. Place the breaded tenders into the hot oil, and fry until golden brown, 7 to 10 minutes. Remove from oil and drain on paper towels.

CREAMED PEAS AND NEW POTATOES



Creamed Peas and New Potatoes image

Just a recipe a local farmer suggested to me to use with his potatoes and peas. I slightly modified it and it's very tasty.

Number Of Ingredients 6

1 pound baby red potatoes, quartered
1 cup shelled English peas
1 tablespoon butter
1 tablespoon all-purpose flour
salt and pepper to taste
1 cup milk

Steps:

  • Bring a large pot of water to a boil over high heat. Boil potatoes for 15 to 20 minutes, or until tender. Drain.
  • In a medium saucepan, bring 1 cup water to a boil. Simmer peas in boiling water for 6 to 7 minutes, or until tender (do NOT overcook). Drain.
  • Using the same saucepan, melt butter over medium heat. Stir in flour to make a thick paste; gradually whisk in milk, stirring constantly until slightly thickened. Season with salt and pepper to taste. Now add potatoes and peas to the sauce; simmer for about 5 minutes, stirring often. Serve immediately.
