RAW CRANBERRY JELLO SALAD



Raw Cranberry Jello Salad image

My mother-in-law gave me this recipe years ago. My family insist on having this cranberry salad every Thanksgiving. I usually make it the day before Thanksgiving.

1 quart cranberries
2 -4 red apples
2 oranges, juice of
1 cup crushed pineapple
1 (6 ounce) box cherry Jell-O
2 cups sugar
2 cups boiling water

Steps:

  • Grind cranberries and apples, mix together.
  • Add orange juice, pineapple and sugar, let sit until sugar dissolves.
  • Pour water over Jello, stir until dissolved, let cool.
  • Add Jello to cranberry mixture. Place in refrigerator.

A "...luscious fruit-and-gelatin dish," shared by Constance Fennell in the June/July 2008 issue of Country magazine. I did not include refrigeration time. Prepare this the day before you would like to serve it.

1/2 cup sugar
2 (1/4 ounce) envelopes unflavored gelatin
4 cups white cranberry-peach juice
1 tablespoon lemon juice
2 cups fresh strawberries
2 cups fresh blueberries

Steps:

  • Combine sugar and gelatin in a large saucepan.
  • Add 1 cup of the juice and cook and stir over low heat until gelatin is completely dissolved, about 5 minutes.
  • Remove from heat and stir in remain juice, and lemon juice.
  • Halve strawberries and place in an 8 cup ring mold, coated with cooking spray.
  • Add 2 cups of the gelatin and refrigerate until set, but not firm, about 30 minutes.
  • Stir blueberries into remaining gelatin and spoon over strawberry layer.
  • Refrigerate overnight.
  • Unmold onto a serving platter.

1 (16 ounce) container frozen whipped topping, thawed
1 (6 ounce) package strawberry flavored Jell-O®
3 (15.25 ounce) cans fruit cocktail, drained
1 (11 ounce) can mandarin oranges, drained
2 cups grapes
2 cups miniature marshmallows

Steps:

  • In a large bowl, combine the thawed whipped topping, gelatin, fruit cocktail, oranges, grapes and marshmallows. Mix together well and refrigerate until chilled. Stir again before serving.

2 (3 ounce) packages cherry flavored Jell-O® mix
1 (16 ounce) can whole cranberry sauce
1 (20 ounce) can crushed pineapple with juice
1 (8 ounce) package cream cheese
1 cup chopped pecans
1 tablespoon mayonnaise

Steps:

  • Drain crushed pineapple and save 1/4 cup of the juice. Dissolve gelatin in 2 cups of hot water. Stir in cranberries and crushed pineapple. Pour 1/2 of the mixture in a bowl and leave at room temperature, set the other 1/2 in the refrigerator until firm.
  • In a separate bowl mix together the cream cheese, mayonnaise, reserved pineapple juice and chopped pecans. Spread mixture over chilled gelatin. Place in refrigerator for 10 minutes. Pour the room temperature gelatin over the top of the cream cheese layer and refrigerate until set.

This is a very elegant looking but extremely easy to make salad. Beautiful colors.

1 red bell pepper, chopped
2 teaspoons vegetable oil
1 head romaine lettuce, torn
½ bunch fresh spinach, stems removed and chopped
3 roma (plum) tomatoes, chopped
8 ounces fresh mushrooms, sliced
1 cup alfalfa sprouts
1 cup raspberry vinaigrette salad dressing

Steps:

  • Preheat the oven broiler.
  • Brush the pepper with the oil, and place on a baking sheet. Broil, turning occasionally, until black splotches appear on all sides. Remove from heat, and wrap tightly in plastic. Set aside for 15 minutes. Remove seeds and pulp, and chop.
  • In a large bowl, toss together the roasted red pepper, romaine lettuce, spinach, tomatoes, mushrooms, sprouts, and raspberry vinaigrette.

6 - oz raspberry jello
1 1/2 - C boiling water
20 - oz undrained crushed pineapple
16 - oz cranberry sauce
3/4 - C orange juice
1 - C chopped pecans(I omit)
8 - oz cream cheese
1 - C sour cream (I use non-fat)

Steps:

  • Dissolve jello in water. Add next three ingredients. Chill until thickens. Fold in pecans(I omit) and place in a 9x13 dish. Chill. Whip cheese and sour cream. Spread over the top. Serves 10
