This creamy Cajun-inspired casserole gets its irresistible flavor from smoky Andouille sausage, shrimp and fresh okra.

6 oz andouille sausage, chopped
2 lb uncooked large shrimp, thawed if frozen, peeled and deveined
2 tablespoons olive oil
1 bag (10 oz) frozen diced celery, onion, and red and green bell peppers, thawed
3 teaspoons finely chopped garlic
2 cups sliced fresh okra
1 can (10 3/4 oz) condensed cream of shrimp soup
1/2 cup dry white wine
1/2 teaspoon freshly ground black pepper
1/4 to 1/2 teaspoon ground red pepper (cayenne)
3 cups cooked long-grain rice
Chopped fresh parsley, if desired

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In nonstick 4-quart Dutch oven, cook sausage over medium-high heat 6 minutes, stirring frequently, until browned. Add shrimp; cook 3 minutes, stirring frequently, until shrimp are pink. Remove sausage and shrimp to bowl; set aside.
  • In Dutch oven, heat oil over medium heat. Add thawed vegetables, garlic and okra; cook 3 to 5 minutes, stirring constantly, until okra begins to soften. Reduce heat to low. Stir in soup, wine, black pepper, red pepper and rice. Stir in sausage mixture. Spoon into baking dish.
  • Bake uncovered 15 to 20 minutes or until bubbly and lightly browned. Garnish with parsley.

1 small red onion chopped*
1/2 cup chopped red bell pepper*

2 cups fresh or frozen sliced okra
1 tablespoon lemon juice
1 1/2 teaspoons salt
10 3/4 ounces cream of shrimp soup**
1/2 cup dry white wine
1 tablespoon soy sauce
1/2 teaspoon cayenne pepper
3 cups cooked long-grain rice
1/4 cup grated Parmesan cheese

Steps:

  • *(10-ounce) package frozen onions and peppers may be substituted for fresh onion and bell peppers. **(10 3/4-ounce) can cream of mushroom soup may be substituted for cream of shrimp soup. Peel shrimp; devein, if desired. Melt 1/4 cup butter in large skillet over medium-high heat. Add onion and next 3 ingredients; saute 7 minutes or until tender. Add garlic, and saut? 1 minute. Stir in okra, lemon juice, and salt; saute 5 minutes. Add shrimp, and cook 3 minutes or until shrimp turn pink. Stir in soup and next 4 ingredients until blended. Pour into a lightly greased 11- x 7-inch baking dish. Sprinkle evenly with Parmesan cheese. Bake at 350F for 15 to 20 minutes or until casserole is bubbly and cheese is lightly browned. This is a recipe I was given when I first got married 25 years ago, and it has remained a favorite. Maybe because it's simple to make (don't let the long list of ingredients fool you). It also freezes well if made with fresh (not frozen or previously frozen) shrimp. It's great served with rice, salad, and some nice hot biscuits.

1 1/4 lbs large shrimp, peeled and deveined
2 tablespoons butter
3/4 cup celery, chopped
1/2 cup green pepper, diced
4 scallions, sliced
3 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon mace
1/4 teaspoon curry powder
1/4 teaspoon hot pepper sauce (or more to your taste)
2 teaspoons Worcestershire sauce
13 ounces can evaporated milk, warmed
1/4 cup parmesan cheese, grated
1/4 teaspoon paprika

Steps:

  • Preheat oven to 425 degrees.
  • In a large skillet, melt butter over medium heat.
  • Add celery, green pepper, and scallions. Saute about 7 minutes, stirring frequently.
  • Add flour, salt, mace, curry powder, hot pepper sauce, and Worcestershire sauce, stirring until smooth and well blended.
  • Stir in warmed evaporated milk. Cook, stirring, until sauce is smooth and thickened.
  • Add shrimp. Cook about 3 minutes. Taste and adjust seasoning to taste.
  • Pour into a buttered casserole dish. Sprinkle top with Parmesan cheese and paprika.
  • Bake at 425 degrees for 20 minutes.

4 red potatoes, quartered
2 pieces corn, quartered
2 tablespoons oil, divided
1 tablespoon butter, cubed
4 cloves garlic, minced
2 teaspoons garlic powder
2 ½ teaspoons paprika
1 ¼ teaspoons dried oregano
1 teaspoon onion powder
1 ¼ teaspoons dried thyme

This is from Southern Living. So good. I posted as written. However, if you can actually find "cream of shrimp soup" send me some as I have never seen it. NOTE: I sub 1 can cheese soup & 1 can cream of celery for the two cans of cream of shrimp and add some extra shrimp and I think it is good! Prep time includes time to cook rice and shrimp in skillet. :) Also, I will separate this into TWO casserole dishes, then cook one all the way (follow recipe through to the end) and the other I freeze right before sprinkling with cheese. I am jsut careful to eat it within about one month since there is seafood in the casserole. Also, sometimes I make half chicken/half shrimp or one of each. When I add chicken instead of the cream of celery soup I use cream of chicken. I always use the cheese soup. Really the possibilities are endless :) Also, add some cayenne pepper if you like it spicy! We ALWAYS add cayenne!

7 medium mirliton (also called chayotes; 5 lb)
2 medium onions, chopped
2 green bell peppers, chopped
1 stick unsalted butter
3 large garlic cloves, minced
24 saltines, finely ground (3/4 cup)
2 lb large shrimp, shelled, deveined, and cut into 1/2-inch pieces
1/4 teaspoon cayenne, or to taste
2 tablespoons fine dry bread crumbs

Steps:

  • Simmer mirlitons in water to cover by 2 inches in an 8-quart pot, partially covered, until very tender, about 1 hour. Drain mirlitons, then halve and peel, discarding pits. Coarsely chop in a food processor.
  • Preheat oven to 400°F.
  • Cook onions and bell peppers in 6 tablespoons butter in a 6- to 7-quart wide heavy pot over moderately low heat, stirring occasionally, until softened. Add garlic and cook, stirring, 1 minute. Add mirlitons and cook, stirring occasionally, until most of liquid is evaporated, about 5 minutes. (Do not let vegetables brown.)
