1/4 cup lemon juice
1 mini corn tortilla
1 tablespoon refried beans, heated
1/8 cup fat-free cheddar cheese, shredded
1 tablespoon old el paso green enchilada sauce, heated (or room temperature)
1/8 cup tomatoes, diced (or chopped)
lettuce, in bits

Steps:

  • Cook chicken in lemon juice until just cooked through.
  • Warm tortilla.
  • Build taco: Place remaining ingredients onto warmed tortilla.
  • Special Notes :.
  • These can be a bit messy to eat, but filling! I make myself 2 for dinner with a salad. Tomato and Lettuce are optional.
  • Since these tacos are built for a single serving, by adjusting the recipe the whole family can enjoy as many as they want! Or, even make theirs on a bigger corn tortilla.

3 uncooked boneless skinless chicken breasts
1 cup canned cannellini beans
2 1/2 cups canned black beans
2 cups canned diced tomatoes
1 cup corn
1 1/2 cups onions
1/8 cup cilantro
2 tablespoons curry powder
1/4 cup honey
1/4 cup Dijon mustard
1/8 teaspoon sweet hot paprika (soudaniya)
1/2 teaspoon ground coriander
1 tablespoon dried parsley
2 garlic cloves
1/4 cup dried green onion flakes

Steps:

  • Dice chicken & mince garlic/onions.
  • Throw everything in pressure cooker with about 2 cups of water on med-low until done (about 20 minute after steam starts escaping quietly). Add dried green onion and other spices to taste (before cooking, so the dried onion rehydrates).

4 (6 inch) fat free tortillas
1/2 lb boneless skinless chicken breast, cut into strips
1 cup canned black beans, rinsed and drained
1/4 cup salsa
2 plum tomatoes, chopped
1 cup shredded lettuce
2 scallions, thinly sliced
1/2 cup shredded sharp cheddar cheese
2 tablespoons nonfat sour cream

Steps:

  • Preheat the oven to 450 degrees F.
  • Spray a nonstick baking sheet with cooking spray.
  • Crumple two large sheets of aluminum foil into two 4-inch high, 12-inch-long rectangles and place on the baking sheet.
  • Drape the tortillas over the foil to form taco shells.
  • Bake until golden, about 8 minutes.
  • Let cool over the foil about 5 minutes.
  • Meanwhile, brown the chicken in a nonstick skillet.
  • Stir in the black beans and salsa and heat to serving temperature.
  • Fill the taco shells with the chicken mixture, then top the tacos with the tomatoes, lettuce, scallions, cheese and sour cream.
  • Serve immediately.

2 large corn tortillas (like Mission Super Size)
1 slice fat-free cheddar cheese, cut in half
2/3 cup enchilada sauce
1/3 cup fat-free refried beans
1/4 cup shredded fat-free cheddar cheese
1/4 cup chopped onion
1 tablespoon taco sauce

Steps:

  • Preheat oven to 400 degrees.
  • In a pan sprayed with nonstick spray, cook onions over medium heat until they begin to brown (about 2 minutes).
  • In a small dish, combine the onions with the refried beans, taco sauce, and taco seasoning. Mix well.
  • Spray a small baking dish with nonstick spray.
  • Heat tortillas in the microwave until slightly warm.
  • Lay the tortillas on a clean, dry surface, and then spread about 2 tablespoons of the enchilada sauce onto each one.
  • Place one half of the cheese slice on each tortilla.
  • Then, evenly distribute the bean mixture into the center of each tortilla.
  • Wrap the tortillas up tightly, and place them in the baking dish seam side down.
  • Pour the rest of the enchilada sauce over the enchiladas.
  • Bake in the oven for about 10 minutes (until the enchiladas are hot).
  • Remove dish from the oven, sprinkle shredded cheese over the enchiladas, and then return it to the oven for about 5 minutes (until the cheese is nice and melty).
  • Top with additional fat free sour cream, salsa or chopped green onions, if desired.

8 ounces tomato sauce
1 (8 ounce) package corn kernels
2 (14 ounce) cans diced tomatoes and green chilies
1 packet , spicy or 1 packet mild taco seasoning
1 tablespoon cumin
1 tablespoon chili powder
24 ounces boneless skinless chicken breasts
chili pepper, chopped (if you want spicy)
cilantro (diced)

Steps:

  • Combine most of the ingredients (the beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning) in a crock pot (also known as a slow cooker).
  • Set the skinned and boned chicken on top & cover it.
  • Cook on low heat for 10 hours, also you could do it quicker on high heat for 6 hours.
  • 30 minutes before serving, remove the chicken and rip it up. Then put the chicken back into the slow cooker and mix inches Top the chili with fresh cilantro. Feel free to utilize low fat cheese and sour cream as a topping.
