A simple and delicious recipe for making corned beef from start to finish.

Categories     Curing

Time P7DT3h10m

Number Of Ingredients 8

1 x 1.8kg / 4lb Brisket or other cut of lean Beef (needs to be unrolled and around 2 inches thick)
3 litres water
165 grams / 6 oz of non-iodized salt
2 tsp of Prague Powder #1
3 tbsp of pickling spice
2 bay leaves
4 cloves garlic
200g / 7oz dark brown sugar

Steps:

  • Take 2 litres of the water and in a pan combine it with the salt, prague powder #1, sugar, pickling spice, bay leaves and garlic. Heat and stir to dissolve the salt and bring to a simmer. Once all the salt and sugar has dissolved remove from the heat and add 1 litres of cool water to bring the temperature down. Let the brine cool and put in the fridge to chill, I usually leave it, covered, in the fridge overnight.
  • Trim the brisket or whatever cut of beef you have chosen. Remove most of the fat from the outside and any sinew. Place the beef in a non- reactive container such as plastic or glass that will hold the meat as well as all 3 litres of brine. Cover the beef with the cold brine and make sure it is fully submerged. Cover and place in the fridge.
  • Leave the beef in the fridge for 7 days. Make sure the meat is submerged and give the brine a stir once a day to ensure the brine has an even concentration of both salt and flavourings. During these 7 days the salt will slowly work it way to the center of the meat.
  • After 7 days remove the corned beef from the refrigerator and give it a rinse under cool running water, discard the brine. Place in a pot and submerge in water, bring to the boil and simmer. You may wish to add a few vegetables and herbs to flavour the cooking stock such as carrots, celery and onions. Boil for around 3 hours until the meat is nice and tender.

CORNED BEEF

Corned Beef image

For flavorful, tender meat, make Alton Brown's Corned Beef recipe from Good Eats on Food Network by beginning the salt-curing process 10 days ahead of cooking.

Provided by Alton Brown

Categories     main-dish

Time P10DT3h20m

Yield 6 to 8 servings

Number Of Ingredients 17

2 quarts water
1 cup kosher salt
1/2 cup brown sugar
2 tablespoons saltpeter
1 cinnamon stick, broken into several pieces
1 teaspoon mustard seeds
1 teaspoon black peppercorns
8 whole cloves
8 whole allspice berries
12 whole juniper berries
2 bay leaves, crumbled
1/2 teaspoon ground ginger
2 pounds ice
1 (4 to 5 pound) beef brisket, trimmed
1 small onion, quartered
1 large carrot, coarsely chopped
1 stalk celery, coarsely chopped

Steps:

  • Place the water into a large 6 to 8 quart stockpot along with salt, sugar, saltpeter, cinnamon stick, mustard seeds, peppercorns, cloves, allspice, juniper berries, bay leaves and ginger. Cook over high heat until the salt and sugar have dissolved. Remove from the heat and add the ice. Stir until the ice has melted. If necessary, place the brine into the refrigerator until it reaches a temperature of 45 degrees F. Once it has cooled, place the brisket in a 2-gallon zip top bag and add the brine. Seal and lay flat inside a container, cover and place in the refrigerator for 10 days. Check daily to make sure the beef is completely submerged and stir the brine.
  • After 10 days, remove from the brine and rinse well under cool water. Place the brisket into a pot just large enough to hold the meat, add the onion, carrot and celery and cover with water by 1-inch. Set over high heat and bring to a boil. Reduce the heat to low, cover and gently simmer for 2 1/2 to 3 hours or until the meat is fork tender. Remove from the pot and thinly slice across the grain.

With Gold Medal™ flour and 10 minutes of prep time, you'll be pulling a golden brown cornbread out of the oven before you know it.

CORNED BEEF BRISKET - FROM SCRATCH

Corned Beef Brisket - from Scratch image

Plan ahead about a week ... you won't be sorry. This from-scratch corned beef is better than any commercial corned beef you could ever eat, and you'll wonder why you never tried doing it yourself before. I do not add salt and peter to my corned beef, so this is not going to have that familiar pink color, but you won't care -- and it's healthier this way.

Time P7DT4h

Yield 6-8 serving(s)

Number Of Ingredients 16

1 (8 -10 lb) beef brisket
4 garlic cloves, peeled and cut in thirds
2 quarts water
1 cup kosher salt
1/2 cup white vinegar
4 tablespoons sugar
3 bay leaves
1 teaspoon peppercorn
1/2 teaspoon mustard seeds
1 pinch ground cloves
water, to come up 3/4 to side of brisket
1 teaspoon peppercorn
1/2 teaspoon mustard seeds
1/2 teaspoon whole allspice
1/4 teaspoon whole cloves
4 garlic cloves, sliced

Steps:

  • Combine all of the brine ingredients and bring to a boil, then cool.
  • In a huge plastic roasting bag (do NOT use a garbage bag), place the beef brisket, the cooled brine, and the 4 garlic cloves.
  • Make sure that all of the meat is covered by the brine (cutting the brisket in pieces if you need to), tie off tightly, place in a pot large enough to hold it all, and refrigerate for 6 to 7 days, turning occasionally.
  • After the 6 to 7 days, remove brisket from the brine and discard the brine.
  • Rinse the meat thoroughly, then place in a Dutch oven or other large pot and add enough water to come up 2/3 to 3/4 of the way up the side of the meat.
  • Add the rest of the Simmering Liquid ingredients (peppercorns, mustard seeds, allspice, cloves and garlic), bring to a boil and skim off any foam.
  • Reduce heat to a low simmer and cook, covered, for at least 3 hours, but 4 hours doesn't hurt anything. Meat will be SO tender and delicious!
