SPICY GRILLED CHICKEN WINGS
We make these all the time! Some marinades need just a short time, but this really tastes amazing if you let it take up space in your fridge for at least 12 hours, preferably up to 48 hours. They taste great at room temperature, so you can even cook them in advance. Prep time, as always, includes marinating time.

Steps:
- Place the pepper and salt in a medium bowl.
- Add the garlic cloves and crush into the salt and pepper to make a thick paste.
- Add the lemon juice, crushed red pepper, and hot sauce.
- Whisk in the olive oil slowly until well combined.
- Place the chicken wings in a large sealable plastic bag.
- Add the marinade and seal the bag tightly.
- Shake the bag well to coat.
- Refrigerate for 12-48 hours.
- Remove the chicken wings from the refrigerator and let sit at room temperature for 25-30 minutes while heating the grill.
- Grill over medium-high heat, flipping frequently and brushing with the marinade for 15-20 minutes or until cooked through.
- Do not brush the wings with the marinade for the last five minutes to make sure the juices all cook thoroughly.
- Throw away the marinade.
- Serve hot, at room temperature, or chilled (see how versatile this is?).
- The wings can be refrigerated for up to 2 days before serving chilled, or reheated.

SPICY GRILLED CHICKEN WINGS
Gochujang and grated fresh ginger give this dish a tasty kick. The honey in the marinade chars a good bit on the grill for a rich, caramelized flavor that balances out the heat.

- Whisk together gochujang, oil, honey, ginger, and garlic in a large bowl. Add chicken wings, and toss well to coat. Let marinate in refrigerator 1 hour.
- Preheat a grill to medium (350°F to 400°F). Remove wings from marinade, letting excess drip off; discard marinade. Arrange wings on oiled grates. Grill, covered, until a thermometer inserted into thickest portion of meat registers 165°F, about 20 minutes, turning wings every 4 to 5 minutes. Arrange wings on a platter, and sprinkle with scallions and sesame seeds.
SPICY GRILLED CHICKEN WINGS RECIPE
These simple chicken wings are rubbed down with spices to give them a kick. You can adjust the amount of cayenne to vary the heat.

- Gather the ingredients.
- Take the whole chicken wings and flip the tips around, tucking them so they don't burn.
- Combine the garlic salt, cayenne, black pepper, and dried oregano in a large resealable bag.
- Toss the chicken wings in the bag with the spices to coat. Let sit in the refrigerator for 15 to 20 minutes.
- Meanwhile, prepare a gas or charcoal grill for indirect heat . Adjust the heat on the active burner to medium-high (400 F to 475 F). When hot, place the chicken wings over the direct heat for 5 minutes, turning frequently. Grill the chicken wings in batches, if necessary.
- Move the wings to the indirect (cooler) side and grill, turning once, and continue grilling until done (you want an internal temperature of 175 F to 180 F). This should take about 20 to 25 minutes. Watch closely to prevent burning.
- Remove the wings from grill and serve immediately.

GRILLED CAJUN LEMON PEPPER CHICKEN WINGS
Grilled chicken wings are the quintessential finger food for a summer cookout with family and friends. Just toss the chicken in a flavorful rub, then grill to golden brown perfection. A final toss with Cajun lemon-pepper seasoning adds a kick of spice and acidity.

- Prepare a grill for medium heat.
- Toss the chicken wings, vegetable oil, 2 teaspoons of the Cajun seasoning, 3/4 teaspoon of the garlic powder, 1 teaspoon salt and several grinds of pepper in a large bowl until evenly combined.
- Brush the grill grates lightly with oil. Place the chicken wings on the grill in an even layer and cover with the lid. Cook, flipping occasionally, until well browned and cooked through, 20 to 25 minutes.
- Meanwhile, stir together the parsley, lemon zest and juice, remaining 1 teaspoon Cajun seasoning, remaining 1/2 teaspoon garlic powder, 1/4 teaspoon salt and 1 teaspoon pepper in another large bowl until combined.
- Transfer the wings to the bowl with the Cajun lemon pepper seasoning and toss until evenly coated. Arrange on a large serving platter.
SPICY GRILLED DR PEPPER CHICKEN WINGS
Steps:
- 1. Place washed / dried drummettes in a large mixing bowl. Add the olive oil and toss to coat. Mix the dry rub ingredients together and add to the wings and toss to coat evenly. Marinate the wings at room temperature for 15 minutes, or over night in the fridge. If overnight, allow the wings to sit at room temperature for 15 -20 minutes before grilling but not any longer. They cook much more evenly at room temperature. 2. Meanwhile, make the sauce. Reduce the 2 remaining cans of Dr Pepper in a medium saucepan over high heat to about 1/2 cup. It will be just a bit syrupy. Remove from heat and stir in the remaining sauce ingredients. 3. Preheat grill to medium high heat and grill wings until done and a bit crispy. Turning them frequently to promote even cooking. Toss wings with sauce and get your hands out of the way because these wings will be devoured quickly.
