1 tablespoon butter
1/2 cup finely chopped onion
1/2 cup finely chopped celery
1 medium jalapeno pepper, (seeded and minced)
2 tablespoons all purpose flour
3 cups 2% milk
2 cups chopped roasted skinless, boneless chicken breasts
One 14.75-ounce can cream style corn
1½ cups frozen corn kernels ((or 3 ears of fresh corn))
1½ teaspoons chopped fresh thyme
1/2 teaspoon salt
1/8 teaspoon ground red pepper

Steps:

  • Melt the butter in a large pot over medium heat. Add the onion, celery, and jalapeño; cook for 3 minutes or until tender, stirring frequently.
  • Add in the flour; cook 1 minute, stirring constantly. Stir in the milk and remaining ingredients.
  • Bring to a boil, and cook until thickened (about 5 minutes.)

2 tablespoons butter
1 small onion, finely chopped
1 celery rib, finely chopped
1 small sweet red pepper, finely chopped
2 cans (14-3/4 ounces each) cream-style corn
1-1/2 cups chopped cooked chicken
1 can (12 ounces) reduced-fat evaporated milk
1 teaspoon chicken bouillon granules
1/2 teaspoon pepper
8 bacon strips, cooked and crumbled

Steps:

  • In a large saucepan, heat butter over medium-high heat. Add onion, celery and red pepper; cook and stir 6-8 minutes or until tender., Stir in corn, chicken, milk, bouillon and pepper; heat through, stirring occasionally (do not boil). Top servings with bacon.

8 ounces skinless, boneless chicken breast halves, cut into bite-size pieces
½ cup chopped onion
½ cup chopped red bell pepper
1 clove garlic, minced
4 cups low-sodium chicken broth
1 ½ cups frozen corn
1 cup skim milk
1 tablespoon cornstarch, or more as needed
1 cup white beans, drained and rinsed
1 cup shredded Cheddar cheese
½ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Heat olive oil in a saucepan over medium heat; saute chicken, onion, red bell pepper, and garlic until chicken is no longer pink in the center and onion is tender, 3 to 5 minutes. Add chicken broth and corn to chicken mixture.

1 tablespoon bacon drippings
1 cup chopped deli-style ham
10 ounces diced cooked chicken
1 cup peeled and diced potatoes
½ teaspoon dried thyme
½ teaspoon dried marjoram

1 (15.25 ounce) can whole kernel corn, undrained
1 (15 ounce) can cream-style corn
1 (10.75 ounce) can low-sodium chicken broth
