Yield Makes 10-12 servings

Number Of Ingredients 16

Ranch dressing:
1/2 cup buttermilk
1/2 cup mayonnaise
3 tablespoons finely chopped fresh chives
3 tablespoons finely chopped fresh Italian parsley
1/2 teaspoon garlic salt
1/2 teaspoon onion powder
1/4 teaspoon freshly ground black pepper
Potatoes:
5 3/4 to 6 pounds russet potatoes, peeled, cut into 11/2-inch chunks
1 tablespoon (or more) coarse kosher salt
3/4 cup heavy whipping cream
1/2 cup whole milk
1/4 cup (1/2 stick) butter
Special Equipment
Potato ricer

Steps:

  • For ranch dressing:
  • Whisk all ingredients in small bowl to blend. DO AHEAD: Can be made 2 days ahead. Cover and chill.
  • For potatoes:
  • Place potatoes in large ovenproof pot. Pour enough cold water over to cover and add 1 tablespoon coarse salt. Bring to boil over high heat.
