MAPO TOFU (MABO DOFU)
Japanese-style Mapo Tofu (Mabo Dofu) is incredibly flavorful but less spicy than the Sichuan version. It's a delicious meal ready in 30 minutes that even children can enjoy!

Steps:
- Gather all the ingredients.
- Combine all the ingredients for the seasonings (the doubanjiang, mirin, miso, oyster sauce, soy sauce, sesame oil, cornstarch, and water) in a bowl and mix well together.
- Mince the garlic cloves and ginger finely.
- Cut the green onions into small pieces. Drain the tofu and cut into 1-inch (2.5 cm) cubes.
- In a large frying pan, heat the vegetable oil on medium heat and sauté the garlic and ginger. Make sure you don't burn them. Once they are fragrant, add the ground pork and break it up with a spatula or wooden spoon.
- When the meat is no longer pink, add the seasonings mixture and stir thoroughly. Bring the sauce to a boil
- Once the sauce is boiling, add the tofu and gently coat it with the sauce. Stir frequently, without mashing the tofu, until it is heated through. Add the green onions and stir to incorporate just before taking the pan off the heat. Serve immediately.

MAPO TOFU
This mapo tofu recipe is the true blue, authentic real deal-the spicy, tongue-numbing, rice-is-absolutely-not-optional mapo tofu that you get in the restaurants!

Steps:
- First, we toast the chilies. If you have homemade toasted chili oil, you can skip this step. Heat your wok or a small saucepan over low heat. Add ¼ cup of the oil and throw in the fresh and dried peppers. Stir occasionally and heat until fragrant, about 5 minutes, ensuring that the peppers don't burn. Remove from heat and set aside.
- Heat the remaining ¼ cup of oil in your wok over medium heat. Add the ginger. After 1 minute, add the garlic. Fry for another minute, and then turn up the heat to high and add the ground pork. Break up the meat and fry it until it's cooked through. Add your ground Sichuan peppercorns and stir for about 15-30 seconds, taking care to not let it burn, as it will turn bitter if it does.
- Add the spicy bean sauce to the mixture and stir it in well. Add ⅔ cups of chicken broth to the wok and stir. Let this simmer for a minute or so. While that's happening, ready your tofu and also put a ¼ cup of water in a small bowl with your cornstarch and mix until thoroughly combined.
- Add the cornstarch mixture to your sauce and stir. Let it bubble away until the sauce starts to thicken. (If it gets too thick, splash in a little more water or chicken stock.)
- Then add your chili oil from before-peppers and all! If you are using homemade chili oil, ONLY use the standing oil, as it's likely that you have salted it and you only want the oil, not additional salt. Stir the oil into the sauce, and add the tofu. Use your spatula to gently toss the tofu in the sauce. Let everything cook for 3-5 minutes. Add the sesame oil and sugar (if using) along with the scallions and stir until the scallions are just wilted.
- Serve with a last sprinkle of Sichuan peppercorn powder as a garnish if desired.

SICHUAN MAPO TOFU
Steps:
- Gather the ingredients.
- Mix the tapioca starch and the soy sauce together.
- Marinate pork for about 20 minutes.
- Cut the tofu ( bean curd ) into 1/2-inch square cubes, and blanch (drop into boiling water) for 2 to 3 minutes.
- Remove from boiling water and drain.
- Chop leek or green onions into short lengths.
- Heat wok and add oil. When the oil is ready, add the marinated pork. Stir-fry pork until the color darkens. Add salt and stir.
- Add the salted black beans. Mash the beans with a cooking ladle until they blend in well with the meat.
- Add the chili bean paste, then the stock, bean curd, and leek or green onions. Turn down the heat. Cook for 3 to 4 minutes.
- While cooking, mix cornstarch , water, and soy sauce together. Add to wok and stir gently.
- Serve with freshly ground Szechuan pepper and enjoy!

- Heat the sesame oil, vegetable oil and soy sauce over high heat in a large saucepan or wok and saute the onion and peppers for 5 minutes.
- Add the garlic and ginger, cooking for 1 more minute.
- Add the pineapple, stock and tofu and simmer for 15 minutes.
- Toss in the shredded cabbage.
- Serve over rice immediately.

ALFREDO MAUI MAUI WITH CRAB
This is so scrumptious and rich you'd think you've gone to EPICUREAN HEAVEN. Basil accents this entrée with a touch of garlic. Lower in fat as it is prepared with nonfat half and half. I serve this with a medley of broccoli, cauliflower and carrots. Times are estimated, as I don't clock myself. You can substitute other fish fillets, but never use imitation crab. This recipe just looks busy, but is step by step and actually not that difficult. So read through first and you'll see how simple it is.

- Prepare Alfredo Sauce.
- Melt butter in sauce pan over medium heat. Gradually whisk in flour. This will create a paste. Gradually add half and half, whisking until incorporated and no lumps are present.
- Continue to whisk until hot, about 3-5 minute. The longer you cook the base (without the cheese) the thicker the sauce will be.
- Add parmesan slowly, whisking until incorporated. Add minced garlic, salt and pepper. Cook for 2 minutes or until cheese is melted. Remove from heat, add half the can of crab. Keep warm on very low heat, stirring occasionally so skin doesn't form.
- Preheat broiler.
- Cut four 6x8-inch pieces of foil.
- Place 1 fish fillet in center of each piece of foil. Fold up foil to form rectangle with 3/4-inch-high sides. Place packets on small baking sheet.
- In small bowl combine olive oil, minced basil leaves, lemon juice minced garlic clove, salt and pepper mixture.
- Drizzle over fish in foil. Broil fish, Turning fillets when opaque in center, about 6 minutes.
- Transfer fillets to 4 plates. Spoon alfredo sauce over fillets. Garnish with fresh julienned cut basil leaves, parmesan cheese and remaining crab meat. Serve.
