EASY HOMEMADE OLIVE OIL MAYONNAISE
Have you ever wanted to try homemade olive oil mayonnaise but were afraid it would be a hassle? This recipe uses an immersion blender, but don't worry if you don't have one--I've included instructions to make it without it in the note section of this recipe. You'll never want to buy regular mayonnaise again once you see how easy making it homemade really is!

Steps:
- Pour eggs, olive oil, canola oil, lemon juice, white wine vinegar, dry mustard, and salt into a large mason jar.
- Place the blade of an immersion blender near the bottom of the jar and blend, starting at high speed until combined, about 20 seconds. Raise the blender using an up and down motion and mix until mayonnaise is emulsified, about 1 minute.
- Place a lid on the jar and refrigerate until use, for up to two weeks.

Steps:
- Melt the coconut oil in the micro or on stove top.
- Mix coconut and olive oil.
- Put all but the oils in blender or food processor container.
- Whiz till frothy.
- Slowly, very slowly, pour in the oil mix while the blender or processor is running.
- This thickens quickly; you will have to stop and scrape down, and it may not take all the oil mix.
- Once all is mixed put in covered container in fridge.
- Can be used in any recipe calling for mayo.
- You may like more mustard, more salt, less, etc.
- This is thicker than a typical homemade mayo, more like store bought.
- (Most large Wal-marts and groceries carry coconut oil near the crisco; it is an oil but is solid at room temp.).

- Place all ingredients in the jar that just fits the head of your immersion blender - if your immersion blender came with a jar, that's perfect. The size of the jar is important, though: the circumference of the jar must be only slightly larger than the head of the blender (letting it fit at all) and the mixture must reach the blades. Let ingredients settle for a few seconds.
- Place head of immersion blender down into the mixture, at the bottom of the jar. Turn on high speed. Do not move the head until a white, creamy, thick mayo forms at the bottom by the head - this will take a few seconds. Begin to slowly tilt and lift the immersion blender in order to emulsify all the oil; turn the blender off and use the head to push down the oil at the top if necessary. When all oil is emulsified, remove blender and season with salt to taste.
