This is a simple mead recipe that is very easy to put together. Learn how to make mead using this beginner's recipe!

water (non-chlorinated or filtered)
2-3 pounds honey (depending on how sweet you want to end product to be.)
berries or fruit of any kind (fresh or frozen, about a cup)
1 orange
10 raisins
1/2 package champagne yeast (or other wine yeast)

Steps:

  • Sanitize everything that will be used in the brewing process.
  • Heat about 1/2 gallon of non chlorinated water in the pot on medium heat. Once it's warm, but not boiling, add the honey and stir it so it all dissolves. Turn off the heat.
  • Put the berries or other fruit, orange slices (skin and all), and raisins into the one gallon jug.
  • Use the funnel and carefully pour the honey water mixture into the jug.
  • Top off the jug with cold (preferably filtered) water, leaving at least 2 inches of head space on top. Put the lid on the jug and gently mix everything around a bit.
  • Make sure that the temperature of the must is below 90°F, then add 1/2 packet of champagne yeast. Put the lid back on tightly and this time shake the jug for a minute or two to distribute the yeast.
  • Put a little water in the airlock to the line, then put the rubber stopper end into the jug. Put the jug in a dark place. It should start bubbling within 12-24 hours.
  • After about 4-6 weeks of fermenting, once all bubbles have stopped rising in the jug and airlock, the mead can be bottled and aged.

How to Make Mead: A Homemade Honey Mead Recipe image

Homemade mead is a fermented beverage made of honey, water, and yeast. Make our honey mead recipe sweet or dry with flavoring suggestions.

filtered water ((or distilled))
2-3 pounds honey ((local raw honey is best))
2 g champagne yeast

Steps:

  • Simmer ½ gallon of water until warm.
  • Add honey: 2 pounds for a dry mead or 3 pounds for a sweet mead. Stir until dissolved.
  • Simmer (don't boil) for about 30 minutes, skimming off any scum that forms. Remove from heat and let cool to about 100°F and pour into 1 gallon carboy.
  • Add any extra ingredients you may want. See below for ideas.
  • When the temperature is below 90°F, add the yeast. One package will make 5 gallons of mead, so use between ⅕ of a package and ½ a package. I typically make two gallons at a time and divide the package between the two.
  • Cap the bottle and shake well. Add more water to fill the bottle, making sure to leave 3-4 inches of headroom at the top. Take the top off and add an airlock. These are available at your local homebrew store or online here.
  • Once the airlock is in place, set the bottle in a cool spot for about 6 weeks.

This easy honey mead recipe takes just a few steps to complete. The honey is the star of the show in this recipe. It is essential to use high-quality honey that will produce a great flavor.

2 1/2 to 3 lbs. raw unprocessed honey
12 cups water
Optional fruit: berries or fruit of any kind, fresh or frozen, and raisins
Optional Spices: cloves, cardamom, nutmeg, etc
1/2 package champagne yeast or wine yeast

Steps:

  • Sanitize all the equipment you will use: pot, jug, funnel, airlocks, spoon, etc. Follow the directions on the sanitizer package.
  • Heat 1/2 gallon of non-chlorinated water in the large pot on medium heat, do not boil. Add the honey and stir until it fully dissolves. Remove from heat.
  • Add the optional berries, fruit, raisins, and herbs to the one-gallon jug.
  • Using a funnel, pour the honey-water mixture into the jug.
  • Leave at least 2 inches of headspace at the top. Add additional cold water if needed.
  • Secure the lid and shake well.
  • When the temperature drops below 90°F, add 1/2 package of the yeast.
  • Again, cap the bottle and shake well.
  • You should see bubbles within the first 48 hours.
  • Store the jug in a dark and cool place, or cover it with a towel. It will take about 4-6 weeks to ferment.
  • It is ready when the bubbling has stopped or slowed to once every minute instead of every few seconds as it did initially.
  • The liquid will be clear, and the yeast will settle to the jug's bottom.
  • Do a taste test. Use a clean straw for tasting but be careful not to backwash into the mead.
  • If you like the flavor, it is ready to bottle the mead.
  • If it is too dry and you prefer a little sweeter, you can back sweeten the mead.

  • Things You'll Need. Not all of these materials will be needed initially; they will be used in later steps. I will specify which items won't be used right away which will give you time to get them if you do not already have them.
  • Sanitizing 1. Start by pouring 1 gallon of warm water into your one gallon carboy and 1 gallon of water into your large bucket. Do not use your spring water for this; it will be used later for mixing with the honey and cherries.It is fine to use tap water or drinking water.
  • Add the Honey 1. Now that your one gallon carboy is clean and your honey is warmed up, you are ready to pour the honey into the one gallon carboy.
  • Crush the Cherries 1. As I stated in the first step, make sure that your cherries are thawed for this section otherwise it will be rather difficult to crush the cherries.
  • Mix the Cherry Juice With the Water and Honey Mixture 1. Now use the funnel to pour the cherry juice into the carboy with the honey and water mixture.
  • Pitch Your Yeast. There are several ways to pitch yeast. I use the dry pitching method but others like to prepare their yeast a day before hand. Either method works, but I will be talking about how to dry pitch your yeast.
  • Waiting. You have now completed the first part of making your mead. Now comes the hard part, waiting for the mead to ferment. 1. Put your mead in a room where you won't be tempted to touch it.
  • Cold Crashing. After your airlock has slowed down to 1 bob per 30 seconds, it is ready to cold crash. Cold crashing basically kills or stops yeast.
  • Racking Mead Over to Another Carboy (Optional) Racking your mead over to another carboy is an optional step. Some people would beg to differ, but I generally go without racking my mead.
  • Bottling and Aging. After you have cold crashed your mead, it is time to bottle and age. This step varies with the size of mead you are making, but since we are just making a 1 gallon batch the mead will be ready to be bottled in under 2 months.

  • What You'll Need! I'll put in links, in case you don't have a local home brew shop near you, or just like buying online. I hope links are okay!
  • Sterilize. Again, I'm not going to get into the details of how to sterilize. Why steal jobs away from perfectly good Google engineers? :) I use C-Brite, but there's a lot of different ways.
  • Add Delicious Honey. The general Mead rule is 3 pounds of honey per gallon. So whatever size you're making, just scale it up. 1 pound of honey is approximately 1 1/3 cups.
  • Get Strawberries Ready. Take your strawberries out of the freezer and let them thaw out. To move this along, I put them in a sanitized pot, added a little water and heated them.
  • Mix! Before you fill the rest of your carboy up with water, now is a good and easy time to mix everything you have together. I used the super awesome mixer that attaches to a drill.
  • Fill With Water. Fill the rest of your carboy up with water. Not all the way to the top, however. You've going to need to leave room for the yeast.
  • Take a Hydrometer Reading. This is optional. You only need to do this if you want to know the final alcohol content. Also, it's helpful to know if something goes wrong and you need help, or want to stop fermenting at a certain gravity.
  • Add the Yeast. Follow the directions on whatever yeast you have. I make a starter using Go-Ferm and follow those directions. If you don't use Go-Ferm, adding a tsp of yeast nutrient will work as well.
  • Play the Waiting Game! Most of the fermentation should be done within the first couple of weeks. That's no guarantee, it may have gotten off to a slow start, it may have finished in a week.
  • Cold Crashing! When it hits the ABV% you're shooting for, throw it in the fridge for a few days. The longer the better. It also helps with clearing.
