2 unbaked deep dish pie shells
1 (8 ounce) package frozen mixed vegetables
1 (16 ounce) can cream of chicken soup
1 (12 ounce) package Simply Potatoes Diced Potatoes with Onion
1 cooked chicken breast

Steps:

  • In large bowl mix together potatoes, frozen vegetables,cream soup & chicken. Pour mixture into frozen deep dish pie crust.
  • Invert 2nd pie crust over the top--cut a couple holes to vent.
  • Bake 350 degrees for about 45 minutes or until crust is golden brown.
  • ENJOY!

5-Ingredient Fix Contest Entry. My Grandmother used to make this for us when we were little. The combination of the onion and the pumpkin pie spices is really yummy but if you want you could use plain pumpkin puree'.

1 (20 ounce) bag Simply Potatoes Diced Potatoes with Onion
1 cup canned pumpkin puree (with or without spice)
1 large onion, sliced thin
3 tablespoons butter, melted
1/2 teaspoon pepper

Steps:

  • Preheat oven to 350.
  • Coat an 8x8 glass baker with 1T of the melted butter.
  • Sprinkle 1c of the potatoes in the dish.
  • Layer the onion to cover the potatoes.
  • Sprinkle the pepper over the onions.
  • Take a 1/2c of the puree' and drop dollops of the pumpkin on top of the onions, and spread with the back of a spoon.
  • Repeat for a second layer.
  • Add the remaining potatoes to the top, pushing down slightly to ensure no gaps, and drizzle with the remaining 2T of butter.
  • Cover with foil and bake for 30 minutes, removing the foil for the last 10 minutes to crisp the top.

Very quick to make, came up with this recipe when I had a last minute group drop in for dinner...no time to run to the store, so used ingredients I had on hand..fed 6 people easily and was filling..they loved it! Added a salad and the meal was complete.

1 (20 ounce) bag Simply Potatoes (cubed potatoes)
1 lb bacon, cooked and crumbled
2 large chicken breasts
1 1/2 cups shredded cheese (i used pepper jack and colby)
1 1/2 cups sweet corn (I used frozen and cooked according to package directions)

Steps:

  • Preheat oven to 350 degrees.
  • Cut chicken breast into small cubes, cook on stove top in frying pan until done and no longer pink. I added a little olive oil to keep chicken from sticking to the pan.
  • Fry bacon and crumble.
  • In a 9 x 13 baking dish spray with non stick spray, add potatoes, chicken, bacon and corn, mix all together.
  • bake uncovered for 30 minutes, when finished sprinkle cheese on top and pop back in oven until cheese is melted.

1 (10 1/2 ounce) can tomato soup
2 (16 ounce) cans green beans
2 cups shredded cheddar cheese or 2 cups colby-monterey jack cheese
3 cups Simply Potatoes Traditional Mashed Potatoes

Steps:

  • Heat oven to 350.
  • Place al dente green beans in bottom of glass casserole pan.
  • Mix browned ground beef with tomato soup.
  • Pour over green beans.
  • Plop potatoes on top.
  • Cover with cheese.
  • Bake for 60 minutes.
