Interesting combination of seeds, fruits and vegetables with a wonderful vinaigrette dressing.

1 cup vegetable oil
¾ cup cider vinegar
½ cup packed light brown sugar
½ teaspoon dried tarragon
½ teaspoon dried oregano
½ teaspoon salt
¼ teaspoon garlic powder
¼ teaspoon dried dill weed
1 teaspoon ground dry mustard
8 ounces broccoli, chopped
1 small head cabbage, chopped
1 ½ cups raisins
1 ½ cups peanuts
¼ cup sesame seeds
¼ cup poppy seeds
¼ cup sunflower seeds
2 stalks celery, diced
2 carrots, diced
1 banana, diced
3 green onions, chopped
1 green bell pepper, seeded and diced

Steps:

  • In a jar with a tight fitting lid, combine the oil, vinegar, brown sugar, tarragon, oregano, salt, garlic powder, dill weed and mustard. Cover and shake vigorously. Chill for one hour.
  • In a large bowl, combine the broccoli, cabbage, raisins, peanuts, sesame seeds, poppy seeds, sunflower seeds, celery, carrots, banana, green onion and green bell pepper. Pour dressing over salad and toss. Serve immediately.

3/4 cup packed fresh parsley
1/2 cup packed fresh basil leaves
2 packed tablespoons roughly chopped fresh tarragon
1/4 cup roughly chopped fresh chives
2 teaspoons capers
2 anchovy fillets
1 small clove garlic
Pinch of sugar
2 tablespoons fresh lemon juice
4 teaspoons white wine vinegar
1 1/2 teaspoons Dijon mustard
1 1/2 teaspoons Worcestershire sauce
1 cup mayonnaise
Kosher salt and freshly ground pepper
1 1/4 pounds heirloom tomatoes (2 large or 3 medium), sliced 1/4-inch-thick
1 pound fresh mozzarella, sliced 1/4-inch-thick
Flaky sea salt and freshly ground pepper
1/4 cup fresh basil leaves, cut into ribbons

Steps:

  • Make the dressing: Combine the spinach, parsley, basil, tarragon, chives, capers, anchovies, garlic and sugar in a blender or food processor.
  • Add the lemon juice, vinegar, mustard, Worcestershire sauce and mayonnaise and puree until pale green and very smooth. Season with salt and pepper as needed.
  • Make the salad: Spread 1/4 cup dressing on a large platter. Top with the tomatoes and mozzarella, alternating. Season with flaky salt and pepper. Drizzle with more dressing and top with the sliced basil. Serve with more dressing on the side.

Great for those hot summer nights when it's too hot to cook, this is a very versatile recipe. We like it served with crisp breadsticks. Best if made a day or two before serving but can be served after 3 hours of chilling. Amount of salt to use will depend on type of meat used.

1 cup macaroni
1/2 cup sliced celery
1/2 cup chopped green pepper
1/2 lb smoked sausage or 1/2 lb sliced pepperoni
1/2 cup pimento stuffed olive, sliced
1 cup mayonnaise
2 tablespoons cider vinegar
1/4 cup chopped onion
1/2 teaspoon hickory smoke salt (optional) or 3/4 teaspoon salt (optional)
1 1/4 teaspoons dried dill weed
2 medium tomatoes, chopped
1 cup cubed American cheese or 1 cup cheddar cheese

Steps:

  • Cook macaroni, drain well. Combine macaroni, celery, green pepper, meat, olives and onion in large bowl.
  • In separate small bowl, blend together mayonnaise, vinegar, salt and dill weed. Add to macaroni mix and toss lightly. Cover and chill at least 3 hours. Just before serving, add tomatoes and cheese, tossing lightly.
