MEAT LOVER'S PIZZA CRESCENT RING
Cheesy and triple-meat-filled, this crescent ring is like a stromboli only flaky, thanks to the crescent dough. Perfect for a large gathering--slice, dip and eat.

Steps:
- Preheat oven to 375 degrees F. Cook the sausage, stirring and breaking up into pieces, in a medium skillet over medium-high heat until browned in some spots and cooked through, 6 to 7 minutes. Transfer to a medium bowl and stir in the pizza sauce. Let cool slightly, about 15 minutes.
- Coat the back of a baking sheet with cooking spray. Unroll both cans of crescent dough and separate unto 16 triangles. Put a 5-inch ramekin in the center of the prepared baking sheet. Arrange the triangles in a ring around the ramekin so the short sides of the dough are touching the ramekin, overlapping slightly, and the pointed ends are facing outward (it should look like a giant sun).
- Spoon the sausage mixture over the short ends of the triangles closest to the ramekin. Cover the sausage with the ham slices. Top the ham with the pepperoni and then cover pepperoni with cheese slices. Remove the ramekin. Take hold of the pointed end of one of the triangles and fold it up and over the filling, tucking the tip under the bottom edge of dough to secure (the dough will not cover the filling completely). Repeat with the remaining triangles (there will be some gaps where you can see the mixture).
- Bake until the dough is golden brown and the cheese is melted, about 25 minutes. Brush the dough with the butter and sprinkle with the Italian seasoning. Let cool for 15 minutes. Use a spatula to slide the ring off the baking sheet onto a platter. Serve with more pizza sauce.

Steps:
- Place a slice of bread on top of a piece of plastic wrap on large cutting board. Brush the right edge of the bread with egg wash and place the left edge of another slice of bread over the brushed edge, pressing together firmly. Repeat with the rest of the bread so you have a rectangle of 4 slices across and 3 slices down.
- Using a rolling pin, roll out the bread so all of the pieces of bread are sealed together.
- Spread mayonnaise over the bread, then arrange the sliced provolone across, starting about ¼ of the way up the bread. Layer on the mortadella, ham, capicola, pepperoni, salami, and peperoncini.
- Starting at the bottom, roll the sandwich tightly, then cover snugly with plastic wrap. Chill in the refrigerator for 30 minutes.
- Preheat the oven to 350˚F (180˚C). Line a baking sheet with parchment paper.
- In a small bowl, melt the butter in the microwave for 1 minute, stirring every 15 seconds, or until fully melted. Mix in the garlic powder and Italian seasoning.
- Transfer the sandwich roll to the baking sheet. Brush the outside with the garlic butter and bake for 18-20 minutes or until golden brown.
- Let the roll sit for 5 minutes before cutting into thick slices.
- Enjoy!

ITALIAN LAYERED MEAT-AND-POTATO LOAF WITH ROASTED TOMATOES
This is a slightly different take on meatloaf, and when you prepare the tomatoes (their garlicy-olive oil taste make a very complementary combination) as well you've got an entire delicious meal. I think the only thing really "Italian" about this dish is the red/white/green color combination (as found in the Italian flag) that you get from the ingredients, but I've left the name as I found it on some now un-remembered website. Warning: this is a recipe for people who don't mind using their hands . . .

Steps:
- Pre-heat oven to 200°C.
- FOR THE MEATLOAF:.
- Boil potatoes till tender; drain.
- Add milk and salt and pepper to taste; potatoes should still be pretty dry, but hold together enough to work with in a later step.
- While the potatoes are boiling, add oil to a frying pan and saute the onion, pepper, and garlic till tender, but not brown (about 3-5 minutes); take off heat and allow to cool.
- In a large bowl, combine the onion mix, minced meat, breadcrumbs, basil and egg; add salt and pepper to taste and mix very well (use your hands).
- Place half of the meat mixture in a baking dish, shaping it into a rather wide loaf with a flattened top (since you will be stacking the other ingredients above).
- Take half of the mashed potatoes, and make a level layer of them above the meat base (once again, hands work best).
- Cover the potato layer with the spinach leaves.
- Cover the spinach with the mozzarella, again making a level layer.
- Cover this with the remaining potatoes, once again leveling.
- Finish off with the remaining meat, molding and shaping it to not only cover the top, but down the sides as needed to keep the stacks together.
- Bake for 20 minutes, glaze the top with honey, and continue baking for 20 to 25 more minutes.
- Allow to rest 5 minutes before slicing.
- FOR THE TOMATOES:.
- Just as you are placing the meatloaf in the oven, wash tomatoes, and slice in half horizontally.
- Remove the pips and juices with your fingers.
- Sprinkle the tomato cavities with salt, then turn them upside down on a paper towel (this will help remove extra juices which would tend to make them mushy when baking).
- After fifteen minutes, place the tomato halves right side up on a non-stick baking sheet.
- Place the garlic slivers in the tomato cavities (at least two per cavity) and drizzle with olive oil (to taste, but I recommend about 1/2 tsp per tomato).
- At the time that you glaze the meatloaf with the honey, place the tomatoes in the oven (thus, bake for 20-25 minutes).

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Place bacon in a skillet over medium heat, and cook until brown and crisp. Remove bacon from skillet and drain on paper towels.
- Return the skillet to the heat and increase the temperature to medium-high. Add the onion and garlic, and stir fry until the onion is soft and the garlic begins to brown. Add the balsamic vinegar, and cook while stirring for one minute. Add the chopped mushrooms, and cook for three additional minutes. Remove pan from heat and set aside.
- Finely chop 4 slices of the bacon (reserving the remaining 4). In a medium bowl, combine the chopped bacon, ground beef, bread crumbs, Italian seasoning, Parmesan cheese, mushroom mixture and egg. Mix well using hands. Season with salt and pepper, and form into two patties.
- Open the two halves of the hamburger bun on an ungreased cookie sheet. Place one beef patty on each half, and cover each with one slice of tomato, 2 slices of the reserved bacon and one slice of Swiss cheese.
- Bake for 25 minutes in the preheated oven, or until meat has cooked through.
