This hearty, low-calorie squash recipe is packed with punchy flavours - beef, almonds, olives and Parmesan, topped with a tomato and spinach sauce

2 small squash , such as acorn (each about 300g), halved and deseeded
1 shallot
2 tbsp freshly chopped herbs such as parsley, chives, sage & basil
20g whole almonds , chopped
20g stoned black olives
40g parmesan cheese, grated
250g lean beef mince
1 tsp olive oil
2 garlic cloves , sliced
200g chopped tomatoes (from a can)
200ml hot vegetable stock
100g spinach

Steps:

  • Heat oven to 200C/180C fan/gas 6. Cut the squash in half and remove the seeds. Put the squash halves in a roasting tin, spoon 1 tbsp water into each half and cook them in the oven for about 30 mins.
  • Put the shallot, herbs, almonds, olives and half the Parmesan cheese in a small food processor and whizz until finely chopped. Tip everything into a bowl, add the mince and season. Mix thoroughly, then divide into 12 rough portions.
  • Shape the mixture into six balls and divide between each squash half. Sprinkle with the remaining cheese. Turn the oven down to 180C/160C fan/gas 4 and bake for 20-30 mins until the mince is cooked through.
  • Meanwhile, make the sauce. Heat the oil in a small pan, add the garlic and cook it for 1 min until it's just starting to turn golden. Add the tomatoes and stock and season well. Simmer for 15 mins, then stir in the spinach and allow it to wilt. Spoon the sauce over the squash and serve.

1 medium spaghetti squash (about 4 pounds)
1/2 teaspoon salt, divided
1/2 teaspoon fennel seed
1/4 teaspoon ground coriander
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1 pound lean ground beef (90% lean)
2 teaspoons olive oil
1 medium onion, chopped
1 garlic clove, minced
2 cups chopped collard greens
1 cup chopped fresh spinach
1 cup reduced-fat ricotta cheese
2 plum tomatoes, chopped
1 cup pasta sauce
1 cup shredded part-skim mozzarella cheese

Steps:

  • Cut the squash lengthwise in half; discard seeds. Place halves on a microwave-safe plate, cut side down. Microwave, uncovered, on high until tender, for 15-20 minutes. Cool slightly., Preheat oven to 350°. Mix 1/4 teaspoon salt with remaining seasonings; add to beef, mixing lightly but thoroughly. Shape into 1-1/2-in. balls. In a large skillet, brown meatballs over medium heat; remove from pan., In same pan, heat oil over medium heat; saute onion until tender, 3-4 minutes. Add garlic; cook and stir 1 minute. Stir in collard greens, spinach, ricotta and remaining salt; remove from heat., Using a fork, separate strands of spaghetti squash; stir into greens mixture. Transfer to a greased 13x9-in. or 3-qt. baking dish. Top with the plum tomatoes, meatballs, sauce and cheese. Bake, uncovered, until meatballs are cooked through, 30-35 minutes.

3 tablespoons olive oil, divided, or as needed
1 (2 pound) spaghetti squash, halved and seeded
¼ teaspoon kosher salt, or to taste
⅛ teaspoon freshly ground black pepper, or to taste
4 cloves garlic, unpeeled
1 teaspoon onion powder
½ teaspoon dried basil
½ teaspoon dried oregano
½ teaspoon dried parsley
1 cup chopped fresh spinach
6 tablespoons shredded mozzarella cheese, divided
6 tablespoons grated Parmesan cheese, divided

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Drizzle olive oil over the cut side of the spaghetti squash. Season with salt and black pepper. Place cut-side down on a baking sheet. Place unpeeled garlic on a piece of aluminum foil. Drizzle with olive oil. Wrap aluminum foil around garlic, and place onto baking sheet next to the squash.
  • Bake in the preheated oven until squash is tender and easily pierced with a fork, 40 to 45 minutes. Allow squash and garlic to rest until cool enough to handle. Leave the oven on.
  • Peel garlic and squeeze cloves into a large bowl. Smash with a fork until smooth. Add 1 tablespoon olive oil, onion powder, basil, oregano, and parsley. Mix into a paste.
  • Use a fork to scrape out spaghetti squash strands into the bowl, reserving the shells. Toss spaghetti squash strands with the garlic paste until thoroughly coated. Mix in spinach, 1/4 cup mozzarella cheese, and 1/4 cup Parmesan cheese; toss to combine. Season with salt and pepper.
  • Fill each reserved spaghetti squash shell evenly with the filling. Sprinkle remaining mozzarella and Parmesan over the top. Return the filled shells to the baking sheet.
  • Bake until cheeses melt, 7 to 10 minutes. Turn on broiler and broil until cheeses begin to brown and bubble, 3 to 5 minutes. Serve immediately.

1 (10 ounce) frozen chopped spinach, thawed and drained
1 egg, beaten
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/3 cup Italian seasoned breadcrumbs
1/2 teaspoon salt
1/2 teaspoon pepper
1 (10 1/2 ounce) jar prepared spaghetti sauce
8 ounces uncooked pasta
grated parmesan cheese (optional)

Steps:

  • Preheat oven to 350°F.
  • In a medium bowl, combine ground beef, spinach, egg, onion powder, garlic powder, bread crumbs, salt & pepper.
  • Mix all ingredients well and form into small meatballs.
  • Place meatballs on jelly roll pan and place into preheated oven; bake for 40-50 minutes (depending on size of meatballs).
  • While meatballs are cooking, prepare pasta according to package directions, drain and keep warm.
  • In a large skillet or sauce pan, pour jar of prepared spaghetti sauce.
  • When meatballs are fully cooked, remove from oven and place in sauce.
  • Simmer on medium heat 6-8 minutes.
  • Serve meatballs and sauce over cooked pasta.
  • Top with grated Parmesan cheese.

2 tablespoons olive oil
1 lb bulk mild Italian sausage
1 cup chopped onions
3 cloves garlic, finely chopped
2 tablespoons Gold Medal™ all-purpose flour
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon ground nutmeg
1 bag (5 oz) baby spinach
1 cup heavy whipping cream
1 1/2 cups shredded mozzarella cheese (6 oz)
3/4 cup grated Parmesan cheese (3 oz)
1/2 cup Progresso™ plain panko crispy bread crumbs

Steps:

  • Heat oven to 400°F. Line large rimmed baking sheet with cooking parchment paper; spray with cooking spray.
  • Place both squash halves cut side down on baking sheet. Bake 45 to 50 minutes or until tender.
  • In 12-inch nonstick skillet, heat 1 tablespoon of the oil over medium-high heat. Add sausage, onions and garlic; cook and stir 5 to 7 minutes or until sausage is no longer pink. Reduce heat to medium; add flour, salt, pepper, pepper flakes and nutmeg. Cook and stir 1 minute. Gradually add spinach. Cook and stir just until spinach is wilted. Stir in whipping cream. Heat to boiling; cook and stir 1 to 2 minutes or just until thickened. Remove from heat; stir in mozzarella and 1/2 cup of the Parmesan cheese until melted.
  • When squash is cool enough to handle, use fork to remove squash strands from shells, leaving shells intact. Mix squash strands into sausage mixture. Spoon filling into both squash shell halves.
  • Arrange filled squash halves on same baking sheet. Bake 35 to 40 minutes or until bubbly around edges and heated through. Let stand 10 minutes.
  • Meanwhile, in 8-inch skillet, heat remaining 1 tablespoon oil over medium heat. Add bread crumbs; stir to coat. Cook and stir about 3 minutes or until lightly browned. Transfer to small bowl; mix with remaining 1/4 cup Parmesan cheese.
  • Sprinkle bread crumb mixture over squash halves, and serve.

1 jar marinara sauce
1 lb ground turkey
⅓ cup parsley, chopped, plus more for garnish
¼ cup white onion, finely diced
1 clove garlic cloves, minced
½ cup parmesan cheese, grated
¼ teaspoon salt
½ teaspoon black pepper

Steps:

  • Use a fork to pierce holes down the side of the spaghetti squash. Microwave for 5 minutes.
  • Preheat oven to 400°F (200°C).
  • When the squash is cool enough to touch (5-10 minutes), slice the squash open, length-wise, with a sharp knife.
  • Scoop out the seeds and drizzle the squash with oil. Season with salt and pepper.
  • Roast the squash cut-side down for 40 minutes, until easily pierced with a knife.
  • In a large bowl, gently mix together the ground turkey, onion, parsley, parmesan cheese, salt, and pepper. Form meatballs, and transfer to a greased baking sheet.
  • Bake in the oven at 400°F (200°C) for 20 minutes, until fully cooked.
  • Using a fork, pull the strands from the cooled spaghetti squash and transfer to serving dish.
  • Top with hot marinara sauce, and a sprinkle of chopped parsley.

1 onion, finely chopped
1/2 cup pine nuts, chopped
3 garlic cloves, crushed
500 g veal mince
2 tablespoons finely chopped basil
1 cup fresh breadcrumb
1 tablespoon finely grated lemon rind
1/4 cup finely grated parmesan cheese
100 g feta, crumbled
1 egg, lightly beaten
250 g frozen spinach, thawed, drained, squeezed dry, chopped
25 g butter
4 green onions, finely chopped
2 cups cream
fresh ground black pepper

Steps:

  • Heat 1 tablespoon oil in a large frying pan over medium heat. Add the onion, pine nuts and garlic. Cook stirring often, until the onion is soft. Transfer to a bowl and allow to cool slightly.
  • Add the mince, basil, breadcrumbs, lemon rind cheeses and egg.
  • Mix (with your hands) until well combined.
  • Roll 2 tablespoons mixture into balls, place on a tray, cover and refrigerate for 30 minutes.
  • Heat the remaining oil in the pan, add the meatballs and cook turning gently occasionally until browned all over and cooked through.
  • To make the spinach sauce, melt the butter in a pan, add the green onions and cook, stirring for 1 minute.
  • Add the spinach and cream and bring to the boil. Cook for 10 minutes or until slightly thickened then transfer to a blender and puree until smooth.
  • Season to taste with black pepper.
  • Serve the meatballs on mash or egg noodles with spinach sauce spooned over.
