My Mom created this recipe and I really enjoyed it as a child. As an adult, my taste changed just a bit so I modified her recipe to 'kick it up' a bit. It is fabulous even though the ingredients list is quite short! This is a must make with leftover ham and everyone agrees it's absolutely delicious.

1 pound dry great Northern beans
½ pound cooked ham, diced
1 small onion, diced
½ cup brown sugar
salt and pepper to taste
¼ teaspoon cayenne pepper
1 tablespoon dried parsley

Steps:

  • Rinse beans in a large pot; discard shriveled beans and any small stones. Add 8 cups of cold water. Let stand overnight or at least 8 hours. Drain and rinse beans.
  • Return beans to pot and add ham, onion, brown sugar, salt, pepper, cayenne and parsley and water to cover. Bring to a boil; reduce heat and simmer 1 1/2 to 2 hours, until beans are tender. Add more water if necessary during cooking time.

1-1/2 cups chopped onions
1 tablespoon canola oil
4 garlic cloves, minced
1 can (28 ounces) diced tomatoes, drained
3 large carrots, chopped
3 celery ribs, chopped
1-1/4 cups beef broth
1 tablespoon Worcestershire sauce
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1 can (6 ounces) tomato paste
1 tablespoon chili powder
1/4 teaspoon pepper

Steps:

  • In a large saucepan, saute onions in oil until tender; add the garlic, cook 1 minute longer. Add the tomatoes, carrots, celery, broth and Worcestershire sauce. Bring to a boil. Reduce heat; cover and simmer for 15 minutes. , Stir in the beans, tomato paste, chili powder and pepper. Cover and simmer for 30 minutes, stirring occasionally.

If you can't find corona or gigante beans for this stew, use smaller white ones like cannellini. Keep in mind that they'll cook a lot faster, so give the ham a 30-minute head start.

Frizzled shallots:
3 medium shallots, thinly sliced into rings
1/2 cup vegetable oil
Kosher salt
Honey-Mustard Cream:
1/2 cup sour cream
3 Tbsp. Dijon mustard
1 1/2 tsp. honey
Freshly ground black pepper
Stew and assembly:
3 Tbsp. extra-virgin olive oil
2 medium onions, halved through root ends
2 heads of garlic, halved crosswise
2 small carrots, trimmed, scrubbed
1/2 cup dry white wine
2 1/2 lb. smoked ham hocks (about 4 medium)
1 bunch of thyme, stems tied together with kitchen twine
2 cups corona or gigante beans, soaked overnight, drained
Kosher salt, freshly ground pepper
Chopped cornichons and/or dill sprigs (for serving; optional)

Steps:

  • Frizzled Shallots:
  • Heat shallots and oil in a small saucepan over medium, swirling often, until shallots are deep golden brown, 6-8 minutes. Pour into a fine-mesh sieve set over a heatproof measuring glass. Give sieve a good shake, then spread out shallots on a paper towel to drain. Season with salt; let cool.
  • Honey-Mustard Cream:
  • Stir sour cream, mustard, and honey in a small bowl until smooth; season with pepper. Cover and chill.
  • Stew and assembly:
  • Heat oil in a large Dutch oven or other heavy pot over medium-high. Cook onions and garlic, cut side down, and carrots, turning carrots occasionally, until cut sides of onions and garlic are golden, about 4 minutes. Add wine, stirring to release any bits stuck on bottom of pot, and cook until reduced by two-thirds, about 2 minutes. Add ham hocks, thyme, beans, and 9 cups water. Season with several pinches of salt and lots of pepper and bring to a simmer. Cover with a lid, leaving slightly askew so steam can escape, and cook, adjusting heat to maintain a very gentle simmer and skimming foam from surface as needed, until beans are tender and creamy and broth is very flavorful, 2-2 1/2 hours.
  • Remove pot from heat and transfer ham hocks to a cutting board. Let sit until cool enough to handle, then pull meat from bones and tear into bite-size pieces; discard fat, skin, and cartilage. Add meat and knuckle bones back to pot as you go. Let stew cool uncovered until no longer steaming. Cover pot and chill stew at least 12 hours (you can skip this step, but it will dramatically improve the flavor).
  • Gently reheat stew, covered, until barely simmering. Pluck out and discard bones, thyme, and garlic heads (don't worry about any cloves that may have escaped into stew). Season with more salt and pepper if needed. Ladle into bowls and serve with Frizzled Shallots, Honey-Mustard Cream, cornichons, and/or dill as desired.
  • Do Ahead
  • Cream can be made 2 days ahead. Keep chilled. Stew can be made 3 days ahead. Keep chilled.

1 lb ham, diced in ½ inch cubes (ask your deli for ham that is not too salty or too sweet and have them slice it in ½ inch slices so you can dice it easily)
½ white or yellow onion, diced
4 garlic cloves, minced
2 large carrot, sliced into coins
4 stalks celery, chopped
1 green pepper, diced
3 cans beans (pinto, cannellini or great northern, and black), thoroughly rinsed
2 cans diced tomatoes
2-3 cups ham or chicken broth

Steps:

  • 1 Sauté ham in a large soup pot until it starts to turn golden brown. Add onion and garlic, and sauté until the onion is translucent. Add the carrots, celery, and pepper, and sauté until the carrots are beginning to soften. 2 Add the cans of tomatoes with the liquid and bring to a simmer. Add the drained and rinsed cans of beans. There's a great butcher shop down the street from my folks; they always supply the smoked ham for the holidays. I tried this recipe to use up the leftovers---it was soooo good!! It's a take on a Tuscan Bean Stew recipe I had found a while ago. Serve this with a big chunk of rustic bread. (If you didn't want to use dried beans, just use canned beans--drain and rinse.)

1 lb dried beans, any type
1 tablespoon extra virgin olive oil
1 large onions, chopped or 1 1/2 cups chopped onions
2 medium celery ribs, chopped or 3/4 cup chopped celery
2 medium carrots, peeled and chopped or 1 cup chopped carrot
8 medium garlic cloves, peeled and chopped
3 cups smoked ham, cubed (more or less, depending on your leftovers)
4 cups low sodium chicken broth
3 cups water
2 bay leaves
2 cups raw spinach, cut into thin strips
1 (14 1/2 ounce) can diced tomatoes (I didn't drain them, I like it a little soupy)

Steps:

  • Put the dried beans in 4 quarts of water--add 3 tablespoons salt and stir to dissolve. Soak overnight at room temperature. (At least 8 hours and no more than 24.) Drain and rinse well.
  • Heat oven to 250 degrees. Saute onions, celery, and carrots until they are softened and lightly browned. Stir in garlic and cook for about 1 minute. Add ham, broth, water, bay leaves, and beans. Increase heat to high and bring to a simmer. Cover pot and place in oven; cook 45 minutes to an hour.
  • Add spinach and tomatoes to the pot, cover, and return to oven. Cook another 30-40 minutes until beans are fully tender.
  • Remove from oven; take bay leaves out of the stew. Recover the pot and let it stand for 15 minutes before serving.
