MEATBALLS WITH MARINARA

Steps:
- For the marinara sauce: Coat a large saucepot with olive oil and add the pancetta. Bring the pot to a medium-high heat and cook the pancetta for 4 to 5 minutes. Add the onions, season generously with salt and stir to coat with olive oil. Cook the onions for 6 to 7 minutes, stirring frequently. The onions should become very soft and aromatic but have no color. Add the garlic and crushed red pepper and cook for another 2 to 3 minutes, stirring frequently.
- Pulse to combine the tomatoes in a food processor. Add the tomatoes to the pot and rinse out 1 of the empty tomato cans with water and add that water to the pot (about 2 to 3 cups). Season generously with salt and TASTE IT!!!! Tomatoes take a lot of salt. Season in baby steps and taste every step of the way. Cook the sauce for 2 to 3 hours, stirring occasionally and tasting frequently.
- Use the sauce right away on pasta or for any other tomato sauce need. This sauce can also be cooled and stored in the refrigerator for a few days and freezes really well.

Test the seasoning of the mix by making a mini hamburger size patty and cooking it. The mixture should taste really good! If it doesn't it is probably missing salt. Add more. Add more anyway.
- Preheat the oven to 500 degrees F.
- Shape the meat into desired size. Some people like 'em big and some people like 'em small. I prefer meatballs slightly larger than a golf ball. Place them on a cookie sheet and bake them for about 15 minutes or until the meatballs are cooked all the way through. If using right away, add them to your big pot of marinara sauce. If not using right away, they can be frozen for later use. Serve with pasta and sauce or just eat them straight out of the pot! Top with fresh ricotta cheese, garnish with chopped pickles and chives and serve with grilled garlic bread. YUM!

ENCHILADA MEATBALLS
These are a tasty change from the usual since they use cornbread crumbs instead of crackers or regular bread. They're always a hit at parties! A friend shared this recipe with me ages ago and I've tweaked it to come up with this.

- Preheat the oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the cornbread, half of the enchilada sauce, half of the cheese, and the salt. Crumble the beef into the mixture, and blend well using your hands. Shape meat into 1 inch balls, and place on a 10x15 inch jellyroll pan, or any cookie sheet with sides to catch the grease.
- Bake for 18 to 22 minutes in the preheated oven, until the meat is cooked through.
- While the meatballs are cooking, warm the tomato sauce and remaining enchilada sauce in a saucepan. Remove the meatballs from the pan using a slotted spoon, and place in a serving dish. Pour the heated sauce over them, and sprinkle the rest of the cheese on top. Provide toothpicks for serving.

- Preheat oven to 425°F (220°C).
- In a medium-size bowl mix together the beef, pork, bread crumbs, onion, parsley, garlic, eggs, salt, and pepper until just combined.
- Take a walnut size of the meat mixture and roll into a ball. Repeat with remaining meat and transfer to an oiled rack on a sheet tray.
- Bake meatballs for 15 minutes, until golden brown. Set aside.
- Add a little oil to a pan on medium-high heat and cook the onions and garlic until they are deeply caramelized.
- Add in the oregano, parsley, basil, red pepper flakes, tomato paste, and tomato sauce.
- Stir the mixture and bring to a simmer for 5 minutes.
- Add the meatballs and coat them with the sauce.
- Sprinkle with Parmesan cheese, poke with toothpicks, and serve!

MEATBALLS WITH ELEANORA
Eleanora Scarpetta, a friend of Martha's, makes a delicious southern Italian-style tomato sauce, which she serves alongside a generous portion of savory meatballs. While it simmers, this sauce gets a distinctive, hearty taste from the addition of various meats, including beef cutlets, pancetta (the Italian version of bacon), spare ribs, and sweet sausage; in turn, the process of slow simmering infuses the meats with a deep, rich flavor. Although Eleanora uses tomatoes she has canned herself, you can use the store-bought variety in this recipe.

- Line a baking sheet with paper towels; set aside.
- In a large bowl, combine top sirloin, pork, veal, extra-virgin olive oil, garlic, salt, and pepper. Add cheese, parsley, and eggs. Squeeze water from bread. Tear into small pieces, and add to meat mixture. Add 3/4 cup bread crumbs; stir to combine.
- With damp hands, form 1/4 cup mixture into a ball. Repeat with remaining mixture.
- Heat light olive oil in a large nonstick skillet over medium-high heat. When oil is very hot, add meatballs in one layer. Cook until golden brown all over, about 2 minutes per side. Transfer to prepared baking sheet to drain.
TRADITIONAL ITALIAN SAUCE AND MEATBALLS WITH ELEANORA

- In a large saucepan, heat 1/4 c. oil over medium heat. Add in onion, pancetta, pressed garlic, and salt; saute/fry 2 min. Stir in pureed tomatoes, tomato puree, and basil. Bring to a simmer, and cook for 45 min. Remove and throw away onion halves. Place beef cutlets on work surface. Sprinkle each piece with 2 tsp. extra virgin olive oil, 1 clove finely minced garlic, 1 tsp. parsley, and 1 tsp. cheese. Season with salt and pepper. Roll beef, and tie with kitchen twine. Heat remaining 1/4 c. oil in a large cast-iron skillet over medium heat. Add in cracked garlic, and cook for 2 min. Place rolled beef, sausage, and spare ribs in skillet and cook till golden, 8 to 10 min. Add in wine, and cook for 2 min. Remove browned meat from pan, and add in to sauce along with meatballs. Add in 2 c. water, and return to a simmer. Cook, stirring frequently, over medium heat for 1 hour and 15 min. Prepare the meatballs. Line a baking sheet with paper towels; set aside. In a large bowl, combine top sirloin, pork, veal, extra-virgin extra virgin olive oil, garlic, salt, and pepper. Add in cheese, parsley, and Large eggs. Squeeze water from bread. Tear into small pcs, and add in to meat mix. Add in 3/4 c. bread crumbs; stir to combine. With damp hands, form 1/4 c. mix into a ball. Repeat with remaining mix. Heat light extra virgin olive oil in a large nonstick skillet over medium-high heat. When oil is very warm, add in meatballs in one layer. Cook till golden all over, about 2 min per side. Transfer to prepared baking sheet to drain. (Makes 20) Just before sauce is finished bring a large pot of salted water to a boil. Add in pasta, and cook till al dente, following package instructions. Drain, and transfer to a large serving platter. Stir sauce to combine, and ladle sauce over pasta. Serve meats on a separate platter. Sprinkle cheese over pasta and meats. This recipe yields 6 to 8 servings.
