3/4 cup gluten-free white rice flour cracker crumbs (from 4.4 oz box crackers)
1 can (18 oz) Progresso™ Vegetable Classics French onion soup
1 1/2 lb extra-lean (at least 93%) ground beef
1 teaspoon salt
3/4 teaspoon thyme leaves
1/4 teaspoon pepper
1 egg
6 slices (1 1/2 oz each) provolone cheese
Hot cooked mashed potatoes, if desired

Steps:

  • Heat oven to 350°F. In large bowl, stir cracker crumbs and 1 cup of the soup until well mixed; let stand 10 minutes.
  • Add beef, salt, thyme, pepper and egg to cracker crumb mixture until well mixed. Spread half of beef mixture into ungreased 8x4-or 9x5- inch loaf pan. Cut 3 slices of the cheese into 1/2-inch strips. Arrange strips in center of loaf to within 1/2-inch of sides and ends of pan. Top cheese with remaining beef mixture covering completely to sides of pan.
  • Insert ovenproof meat thermometer so tip is in center of loaf. Bake uncovered 1 hour to 1 hour 15 minutes or until beef is no longer pink in center and thermometer reads 160°F. Arrange remaining cheese slices, overlapping, on top of meatloaf. Top cheese with 1/4 cup of the remaining soup (making sure to get onion pieces). Bake an additional 5 minutes or until cheese is melted. Let stand 5 minutes; remove from pan. Heat remaining soup until hot, serve with meatloaf and potatoes.

1 1/2 lb lean (at least 80%) ground beef
2 cups soft French bread crumbs
1/2 cup shredded Parmesan cheese (2 oz)
1/4 cup chopped fresh basil or 1 1/2 teaspoons dried basil leaves
1/2 teaspoon salt
1/4 teaspoon pepper
4 cloves garlic, minced
1 can (8 oz) pizza sauce
1 1/2 cups shredded provolone cheese (6 oz)
1 jar (7.25 oz) roasted red bell peppers, drained, chopped
1/4 cup chopped ripe olives

Steps:

  • Heat oven to 375°F. Line 15x10x1-inch pan with foil; spray foil with cooking spray. In large bowl, beat eggs. Stir in ground beef, bread crumbs, Parmesan cheese, basil, salt, pepper, garlic and 1/2 cup of the pizza sauce until well combined.
  • On large sheet of foil, shape beef mixture into 12x10-inch rectangle. Top evenly with provolone cheese, roasted peppers and olives to within 1/2 inch of edges. Starting with one 10-inch side, roll up; press seam to seal. Place seam side down in pan.
  • Bake 40 minutes. Remove from oven; spoon remaining pizza sauce over loaf. Insert meat thermometer so bulb reaches center of loaf.
  • Return to oven; bake 15 to 20 minutes longer or until loaf is thoroughly cooked in center and thermometer reads 160°F. Let stand 10 minutes before slicing.

1 ½ pounds ground beef
1 ⅓ cups dry bread crumbs
1 egg, slightly beaten
½ onion, finely chopped
¼ cup milk
1 tablespoon Worcestershire sauce
1 tablespoon chopped fresh garlic

1 teaspoon dry mustard
1 teaspoon salt

1 tablespoon butter
1 yellow onion, chopped
1 (6 ounce) package portobello mushroom caps, chopped
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix together ground beef, bread crumbs, egg, 1/2 a chopped onion, milk, Worcestershire sauce in a bowl; season with garlic, Italian seasoning, dry mustard, salt, and black pepper. Transfer the meat mixture to a piece of waxed paper or aluminum foil and flatten to a 1/2-inch thick rectangle.
  • Melt butter in a skillet over medium heat. Cook and stir yellow onion and mushrooms in melted butter until the onion is translucent and mushrooms soft, about 5 minutes. Remove from heat to cool.
  • Spread filling mixture into center of meat rectangle. Sprinkle Cheddar cheese over filling, leaving a bit of space at one end for easier rolling and sealing. Pick up the edge of the waxed paper or foil to roll the flattened meat into a log around the filling. Seal the ends and seam and place the loaf into a 9x5-inch loaf pan.
  • Bake in the preheated oven until oil from the cheese begins to pool, about 30 minutes. Drain oil and continue baking until the meat is no longer pink in the center, about 30 to 60 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

To capture goblins attention before they go on their appointed rounds, serve Great Pumpkin Meatloaf. This fascinating jack-o'-lantern with a meatloaf inside will intrigue goblins, both young and old. Cut the jack-o'-lanterns in wedges and serve as a meat and vegetable in one. To accentuate the bland flavor of the pumpkin, the inside is spread with honey mustard before filling. The meatloaf mixture, enhanced with the zesty flavor of Worcestershire sauce is baked right inside the pumpkin. Complete this nourishing supper with oven roasted potatoes, celery sticks, cucumber slices, whole wheat dinner rolls and milk, plus a crispy apple for desert. 1 (6 -7 inch) sugar baby pumpkin
salt and pepper
3 tablespoons honey mustard (or prepared yellow mustard and 2 tablespoons brown sugar)
1 egg
2 tablespoons Worcestershire sauce
1/2 teaspoon seasoning salt
1 1/2 lbs ground beef
1/2 cup dry Italian breadcrumbs

Steps:

  • Cut top from pumpkin in a zig zag design.
  • Remove seeds and stringy insides.
  • Place pumpkin in a baking pan; add about 1 inch of hot water.
  • Cover pumpkin and pan with foil.
  • Bake at 400 degrees F. for 45 minutes. (Or microwave for about 14 minutes.).
  • Season inside of pumpkin with salt and pepper; brush with honey mustard (or yellow mustard and sprinkle with brown sugar).
  • Combine egg, Worcestershire sauce, 1/2 teaspoon seasoned salt, ground beef and bread crumbs; mix well.
  • Spoon into pumpkin shell, packing down lightly.
  • Return to oven and bake, uncovered, 45 to 60 minutes, until the pumpkin is tender and the meatloaf is cooked. (The internal temperature should reach 160 degrees F.).
  • You may cook the "lid" of the pumpkin along with the meatloaf, however, watch it and remove when it is cooked and still looks attractive.
  • Remove and let rest for 5 -10 minutes.
  • Be creative with garnishes.
  • Cut into 6 wedges to serve.

1 (3-pound) pumpkin
Coarse salt and freshly ground pepper
1/4 pound stale bread, thinly sliced and cut into 1/2-inch cubes
1/4 pound Gruyere, Emmenthal, or cheddar cheese (or a mix of all three), cut into 1/2-inch cubes
2 to 3 cloves garlic, split, germ removed, and coarsely chopped
4 slices bacon, cooked until crisp, drained, and chopped
1/4 cup chopped fresh chives or sliced scallions
1 tablespoon minced fresh thyme
1/2 cup heavy cream
Pinch of freshly grated nutmeg

Steps:

  • Preheat oven to 350 degrees with a rack set in the center of the oven. Line a baking sheet with a nonstick baking mat or use a Dutch oven that is slightly larger in diameter than your pumpkin (in which case, you will need to serve your pumpkin from the Dutch oven, as it may stick, but it will keep its shape better this way).
  • Using a sharp, sturdy knife, cut off top of pumpkin, working around the top with the knife inserted at a 45-degree angle to cut off enough to make it easy to work inside the pumpkin; reserve top. Remove seeds and strings from cap and pumpkin. Season inside of pumpkin generously with salt and pepper. Place on prepared baking sheet or in Dutch oven; set aside.
  • In a large bowl, toss together bread, cheese, garlic, bacon, chives, and thyme until well combined. Pack into pumpkin; it should be well filled but not overstuffed. You may need to add some bread and cheese or some of the filling may not be necessary to use. In a small bowl, stir cream and nutmeg to combine. Pour over filling; filling should be moist but not swimming in cream -- you may need to use more or less accordingly.
  • Place top on pumpkin and transfer to oven; cook until filling is bubbling and pumpkin flesh is tender, about 1 hour and 30 minutes. Remove top and continue baking until liquid is slightly evaporated and top of filling is browned, 20 to 30 minutes more.
  • Carefully transfer pumpkin to a serving platter (or serve in Dutch oven, if using) and serve.

4 large red bell peppers, cut in half
1 small onion, finely chopped
4 clove garlic, minced
9 oz earth & vine provisions red bell pepper & ancho chili jam
2 large egg, beaten
3/4 lb ground beef
3/4 lb ground pork
1 c stuffing mix
1 c parmesan cheese, grated
salt & pepper
DON'T FORGET THE TINFOIL

Steps:

  • 1. Wash and slice up your peppers that will be used. I sliced just a little of the pepper off the bottom of two so that they would sit flat on the pan.
  • 2. Preheat oven to 350 degrees. Mix together onion, garlic, ½ cup Red Bell Pepper & Ancho Chili Jam and egg.
  • 3. Add bread crumbs, Parmesan cheese and salt and pepper. Mix well.
  • 4. Add your 3 meat combination or whatever meats you want to use at this time. Mix well again.
  • 5. Stuff your peppers with the meatloaf and place them in a baking pan.
  • 6. COVER PEPPERS WITH TINFOIL ---- Bake for 50 - 60 minutes.
  • 7. Remove pan from oven and spoon the remaining Red Bell Pepper & Ancho Chili Jam to the top of peppers; place back in oven and bake for an additional 20 minutes or until meat loaves are done.
  • 8. Remove from oven and let stand for 10 minutes before serving. I sprinkle just a tad more cheese on top right before serving.
  • 9. Serve with mashed potatoes, rice or pasta.
  • 10. Sliced into the pepper so you could see how pretty it is.

1 small pie pumpkin, cleaned, will fit inside a 12", deep, dutch oven
1 1/2 lb ground beef
vegetable oil
1/2 lb italian saausage
1 medium yellow onion, chopped
1/2 tsp kosher salt
1/4 tsp fresh ground black pepper
1 Tbsp gaarlic and onion mrs. dash
2 1/2 c cherios or shredded wheat (unsweetened)
2 eggs
1 can(s) cream of celery soup
1/4 tsp granulated garlic
1 can(s) italian seasoned tomato sauce

Steps:

  • 1. Mix all ingredients in a bowl, except tomato sauce. Warm and oil a 12", deep, Dutch oven.
  • 2. Fill pumpkin with meat mixture and place filled pumpkin inside oven. Pour about 1 ½ c. water in oven and cover.
  • 3. Bake about 1 to 1 ½ hours at 350 degrees F. until done. You can smell the flavors when done.
  • 4. ***Judging temperature is an important skill that needs to be practiced when cooking with a Dutch oven. First off, use only name brands of charcoal. Once you find a brand that you like, stick with that brand. That way you become familiar with how it burns, how long the coals last, etc. When cooking in a Dutch oven, use the 2/3rds rule. The 2/3rds rule is not based on fractions of any number of coals. But, is short hand for figuring out how many coals to use for a 325o to 350o oven. Take the diameter of the oven for the bottom coals and subtract 2. So, if you have a 12" oven, take the diameter (12"), subtract 2 (10 coals). That's the 2 in the 2/3rds rule. For figuring the number of coals for the top heat, again take the diameter of the oven and add 3. So, if you have a 12" oven, take the diameter (12") and add 3 (15 coals). That's the 3 in the 2/3rds rule. This rule works for any sized oven from 8" to 16". To increase or decrease the temperature add or subtract 2 briquettes for a change of 25°. It is however, very important to know that coals should be placed around the circumference of the bottom and top of the Dutch oven so there are no hot spots and burning of food is kept to a minimum.
