This recipe has been passed all around in my extended family, and we don't even have an Aunt Winnie. I wish we did though because she must be a good cook. You're sure to love this Thanksgiving tradition. It's simple and super tasty!

1 (3 cup) box chicken rice-a-roni
1 (11 ounce) can mexicorn
1 (8 ounce) jar jalapeno Cheez Whiz
1 (10 3/4 ounce) can cream of mushroom soup
1/4 cup milk
2 tablespoons butter
2 1/2 cups water

Steps:

  • Cook Rice-a-roni according to directions on box.
  • Add corn, cream of mushroom soup, Cheez Whiz and milk.
  • Place in casserole dish and bake at 375 degrees for 20 minutes.

I detested this stuff growing up...it was bland sometimes bitter & always the dish that MANY at my family gatherings would pass on over the years. Some years ago I became intrigued by wanting to make this traditional holiday fare into something that would be scrumptious to taste and be eaten up, so I worked and experimented. Finally I came up with this recipe. My family really LOVES it and often friends and family go back for 2nd and 3rd helpings. Without further ado.. here is Sweet Potato/Yam casserole.

7 yams or 7 sweet potatoes
1/2 cup butter
1 1/2 teaspoons cinnamon
2 teaspoons vanilla extract
1 cup dark brown sugar
1/4 cup caramel sauce
white miniature marshmallow

Steps:

  • Preheat oven at 400°F.
  • Take washed yams/sweet potatoes and wrap in foil.
  • Place wrapped yam/sweet potatoes in oven with seam of foil up.
  • Bake for 1 1/2 hours or till done.
  • Take foil off and let cool for 10 - 15 minutes.
  • Peel skin off of each potato, which comes off super easy, and put each potato in a large mixing bowl.
  • Add butter, cinnamon, vanilla, brown sugar to sweet potatoes and mix with an electric mixer. Make sure it is mixed well with no clumps.
  • Take mixture and add to a 2 1/2 quart or 13x9 bake dish which has been buttered or sprayed with cooking spray.
  • Spoon over the top the caramel sauce.
  • Return to oven at 375°F for 20 minutes
  • Cover top with mini marshmallows--enough to cover the whole top of dish. Return to oven for 10 more minutes. The marshmallows should be melted and crispy but not dark browned.
  • Take out and let sit for 10- 20 minutes.
  • Serve and enjoy.

1/4 lb margarine
1 onion, minced
1/2 green pepper, chopped
1 garlic clove, crushed
4 (6 1/2 ounce) cans minced clams, reserving juice
1 cup clam juice, use reserved and add more if needed for a total of 1 cup
1 tablespoon lemon juice
1/2 teaspoon oregano
1/4 teaspoon pepper
1 pinch parsley flakes
1 dash Tabasco sauce
8 ounces seasoned stuffing mix, Pepperidge Farm is good
parmesan cheese, for the top

Steps:

  • Saute first 4 ingredients in a large skillet, simmering for a few minutes.
  • Combine and add the next 7 ingredients and then add the stuffing slowly until you have an oatmeal consistency.
  • Place in a casserole dish and sprinkle with Parmesan cheese.
  • Bake at 325 degrees F. for 20-30 minutes.

1 (6 ounce) box long grain and wild rice blend, Uncle Ben's broccoli flavored
1 (8 ounce) package frozen broccoli
1 (8 ounce) package frozen cauliflower
1/2 lb brick cheese, cubed
1/2 lb havarti cheese, cubed
1/2 lb cheddar cheese, cubed
1 (10 3/4 ounce) can cream of mushroom soup

Steps:

  • Make rice as directed on box.
  • Steam the cauliflower and broccoli.
  • While the rice and veggies are cooking, go ahead and cube the cheese. Save a few cubes for the top of the casserole.
  • When rice is done place in a large casserole dish, add veggies, cubed cheese, and soup. Mix together.
  • Place saved cubed cheese on top of casserole and cook at 350 degrees for 45 minutes.

1 (10 ounce) can diced tomatoes with green chile peppers
1 (8.5 ounce) package dry corn muffin mix
1 (8 ounce) container sour cream
1 cup shredded Cheddar cheese
1 small onion, diced
1 large egg
2 teaspoons salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 13x9x2-inch baking pan or a large covered casserole dish.
  • Combine both types of corn, tomatoes, corn muffin mix, sour cream, Cheddar cheese, onion, egg, and salt in a very large bowl and mix well. Pour into the prepared pan.
  • Bake in the preheated oven until firm in the center, about 50 minutes.

1 ½ cups cornmeal
1 teaspoon baking soda
4 eggs
1 (15.25 ounce) can whole kernel corn, drained
1 (14.75 ounce) can cream-style corn
1 ¼ cups buttermilk
1 cup margarine, melted
2 (4 ounce) cans chopped green chilies
2 onions, chopped
3 cups shredded Cheddar cheese, divided

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C). Grease a 9x13 inch baking dish.
  • Whisk together the cornmeal and baking soda in a small bowl; set aside. Beat the eggs in a mixing bowl; stir in the whole kernel corn, cream-style corn, buttermilk, melted margarine, green chiles, and onion. Stir in the cornmeal mixture and 2 cups of the Cheddar cheese until only slight lumps of cornmeal remain; pour into the prepared baking dish.
  • Bake uncovered in the preheated oven until firmed and lightly browned, about 1 hour. Remove from the oven, and sprinkle with the remaining cheese; let stand 15 minutes before serving.

My Aunt Louise in Tennessee shared this recipe with me, it has been a dear family favorite for years. This is a VERY moist, sweet, sticky, and EASY to make crowd pleasing dessert! This cake is so cherished in our home, that it has its very own Fleur-de-lis Bundt Pan!

1 (18 ounce) box butter recipe cake mix
1 (3 1/2 ounce) box instant vanilla pudding
1/4 cup Crisco cooking oil
4 whole eggs
1 cup water
1 teaspoon rum flavoring
1/2 cup margarine
1 cup sugar
1/3 cup water
1/2 teaspoon rum flavoring

Steps:

  • FOR CAKE: Mix all ingredients well and pour into a greased and floured tube or bundt pan.
  • Bake @ 350 for 45 to 50 minutes.
  • Let stand for about 30 minutes to cool.
  • FOR SAUCE: Put all ingredients except flavoring in a saucepan and bring to a boil.
  • Cook until butter is just melted and sugar is dissolved.
  • Add flavoring and pour hot sauce over cake.
  • Let stand 30 minutes and turn out of pan.
  • Try to bake a day ahead of time.
  • I serve with rum infused whipped cream or Crème Fraîche.
  • Freezes well.
  • Note: You can use a lemon cake mix and lemon flavoring for a GREAT lemon cake (I like to add poppy seeds to). I serve with Lemon Curd.

1/2 C green pepper, chpd
8 oz can water chestnuts

paprika
season salt

Steps:

  • Beat eggs. Add other ingred except pimentos paprika and salt. Pour in greased 1 1/2 qt baking dish and sprinkle with seasonings. Bake 350 for 45 - 60 min.
