1 PKG (300 G) CATELLI SuperGreens Rotini -
Cauliflower florets - 2 cups (500 mL)
White kidney or cannellini beans, drained and rinsed - 1 can (19 oz/540 mL)
Each chopped bell pepper and diced tomatoes - 1 cup (250 mL)
Each diced red onion and crumbled feta cheese - 1/2 cup (125 mL)
Redwine vinegar - 1/4 cup (60 mL)
Very finely chopped black olives - 1 tbsp (15 mL)/td>
Large clove garlic, minced - 1
Each dried oregano and Dijon mustard - 1 tsp (5 mL)
Each salt and pepper - 1/2 tsp (2 mL)
Extra virgin olive oil - 1/3 cup (75 mL)

Steps:

  • Prepare rotini according to package directions. Add cauliflower during last 4 minutes of cooking. Drain and rinse rotini and cauliflower under cold, running water; drain well.
  • Toss cooled rotini and cauliflower with beans, bell pepper, tomatoes, red onion and feta cheese in a large bowl.
  • Whisk vinegar with black olives, garlic, oregano, mustard, salt and pepper. Whisk in olive oil until combined. Drizzle over rotini mixture and toss to coat.

1 (16 ounce) package colored rotini pasta
2 tomatoes, chopped
1 green bell pepper, chopped
1 onion, chopped
1 large cucumber, chopped
1 cup broccoli florets
1 cup fresh sliced mushrooms
1 (8 ounce) bottle Italian-style salad dressing
1 cup black olives, pitted and sliced

Steps:

  • Bring 4 quarts of water to a rapid boil (2 teaspoons of salt can be added, optional). Add rotini. Return water to rapid boil and cook uncovered, stirring frequently, for about 10 to 12 minutes. Drain. Rinse in cold water.
  • Combine cooked pasta with tomatoes, green bell pepper, onion, cucumber, broccoli, mushrooms, olives and Italian salad dressing. Cover and chill. Toss salad before serving.

3/4 cup KRAFT Real Mayo Mayonnaise or MIRACLE WHIP Dressing
3/4 cup KRAFT Grated Parmesan Cheese, divided
1 cup sliced black olives
1 pkg. (6 oz.) OSCAR MAYER Pepperoni
1 zucchini, sliced

Steps:

  • Cook pasta as directed on package, omitting salt; drain.
  • Mix tomatoes and mayo in large bowl. Add pasta; toss to coat. Reserve 1/4 cup cheese. Add remaining ingredients to pasta mixture; mix lightly.
  • Refrigerate at least 1 hour before serving. Sprinkle with reserved cheese just before serving.

2-1/2 cups cubed French bread
1 tablespoon olive oil
1 garlic clove, minced
1 jar (7-1/2 ounces) marinated quartered artichoke hearts, drained
1 cup roasted sweet red peppers, thinly sliced
1 medium cucumber, peeled and thinly sliced
1 celery rib, sliced
1 can (2-1/4 ounces) sliced ripe olives, drained
1/3 cup thinly sliced red onion
1/2 cup balsamic vinaigrette
1 bunch romaine, torn
1/4 teaspoon coarsely ground pepper
Shaved Parmesan cheese, optional

Steps:

  • Place cubed bread on an ungreased 15x10x1-in. baking pan. Combine oil and garlic; drizzle over bread and toss to coat. Bake at 400° for 6-8 minutes or until golden brown, stirring once. Set aside., In a large bowl, combine the artichokes, red peppers, cucumber, celery, olives and onion; add vinaigrette and toss to coat. Just before serving, place romaine in another bowl. Add artichoke mixture and croutons; toss to coat. Sprinkle with pepper; top with cheese if desired.

2 medium tomatoes, seeded and chopped

1 small green pepper, chopped
8 radishes, sliced
1/3 cup green onion, chopped
1/4 cup kalamata olive, pitted
1/4 cup pimento stuffed olive
2 tablespoons fresh parsley, chopped
1/2 cup olive oil
1 garlic clove, crushed
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon oregano

Steps:

  • Cook the rotini according to the package directions; drain. Rinse with cold water; drain well.
  • Combine the rotini and the next 9 ingredients (through parsley) in a large bowl; toss gently.
  • Combine olive oil, garlic, lemon juice, salt, pepper, and oregano in a jar. Cover tightly and shake vigorously. Pour the dressing over the rotini mixture; toss gently to combine. Cover and chill thoroughly.

  • Cook the Rotini pasta in boiling water according to the package instructions to al dante (which is about 1 or 2 minutes before it's cooked all the way to soft.) When ready, drain.
  • While the pasta is cooking, heat 1 tbsp extra virgin olive oil in a large cast iron. Add the butternut squash. Cook on medium-high heat, stirring occasionally, until the butternut squash is cooked through. Season with a little salt. Transfer the butternut squash to a dish and set aside for now.
  • Now, if needed, add 1 tbsp extra virgin olive oil to the same cast iron skillet. Make sure the oil is hot. Now add the brussels sprouts, cut side down, and cook on medium-high heat for 3-4 minutes. Turn the brussels sproutss over on the other side and cook for another 5 minutes until nicely browned and tender. Sprinkle with salt. Transfer to the same dish with the butternut squash for the moment.
  • Now make the sauce in the same cast iron skillet. Melt the butter over medium-high heat, swirling occasionally, until the butter is browned and releases a nice nutty aroma. Remove the skillet from heat briefly and add the shallots, marjarom, and garlic. Stir until fragrant (less than 1 minute). Return to medium heat and add the olive oil and lemon juice. Stir in the lemon zest and a pinch of salt. Keep the sauce in the cast iron skillet on medium heat.
