MEDITERRANEAN TURKEY SKILLET



Mediterranean Turkey Skillet image

Use turkey, beef, or a mix in this mediterranean flavored skillet meal. It's perfect if you are growing a variety of herbs in your backyard.

4 tbsp grape seed oil
4 large potatoes (diced)
1 onion (diced)
1 tbsp minced garlic
14.5 oz diced tomatoes
1 lb ground turkey
1 tablespoon smoked paprika
Salt and pepper to taste
1 tbsp lime juice
2 tbsp fresh mint (chiffonade)
1/4 cup fresh parsley (chiffonade)
1/4 cup feta cheese

Steps:

  • Boil potatoes until soft then transfer to heated skillet with 1 tbsp oil and cook over medium/high heat until golden brown.
  • In another skillet, sauté onion and garlic in remaining oil over medium/low heat until softened. Stir in diced tomatoes. Add ground turkey, breaking up into small pieces. Cook turkey until slightly browned. Stir in paprika, salt, pepper and lime juice.
  • Gently fold in crisped potatoes, mint and parsley. Serve topped with crumbled feta cheese.

2 medium zucchini, quartered lengthwise and cut into 1/2-inch slices
1 medium onion, chopped
2 banana peppers, seeded and chopped
3 garlic cloves, minced
1/2 teaspoon dried oregano
1 can (15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 tablespoon balsamic vinegar
1/2 teaspoon salt

Steps:

  • In a large skillet, heat oil over medium-high heat. Add turkey, zucchini, onion, peppers, garlic and oregano; cook 10-12 minutes or until turkey is no longer pink and vegetables are tender, breaking up turkey into crumbles; drain.
