A tangy, ooey gooey omelet sure to please the pampered palette. I like to use Dubliner Irish cheese instead of Parmesan if I can get it.

2 eggs
1 ½ teaspoons prepared horseradish
1 teaspoon salt-free herb seasoning blend
½ cup shredded Cheddar cheese
¼ cup freshly grated Parmesan cheese

Steps:

  • In a medium bowl, whisk together the eggs and herb seasoning blend.
  • Place a lightly greased skillet over medium-high heat. When hot, pour the egg mixture in, and turn the skillet to coat evenly. Cook until almost done, then flip over. Spread the top with horseradish and sprinkle with Cheddar and Parmesan cheeses. Continue to cook until the bottom is no longer raw. Fold in half and transfer to a plate for serving.

3 tablespoons milk
2 slices cooked bacon, crumbled
1/4 cup sausage, cooked and crumbled
2 slices cooked ham, chopped
1 teaspoon dried diced onion
1/8 green bell pepper, chopped
dash pepper
dash salt
1/4 to 1/2 cup mozzarella cheese, shredded
1/4 cup Cheddar cheese
1/2 tomato, diced
Parmesan cheese

Steps:

  • Beat eggs and milk in a bowl with a wire whisk. Add bacon, sausage, ham, onion, pepper, salt, and green pepper.Heat an 8-inch nonstick skillet over medium-high heat. When warm, spray with cooking spray. Pour egg mixture into the warm skillet and cover. Cook 6 minutes or until egg mixture is set but the top is still moist. Sprinkle shredded mozzarella and cheddar cheese evenly onto half of omelet. Using a spatula, fold egg mixture in half over the cheese and cover again. Cook for an additional 5 minutes. Turn out onto plate and top with fresh tomatoes and parmesan cheese.

  • In a small-medium skillet, melt the butter on medium heat. Pour all of the egg mixture into the skillet and reduce heat to low. Let the omelette cook until only the middle is still slightly undercooked. The secret to minimal mess is letting the omelette cook long enough. Make sure the edges are firm and you see it begin to bubble in the middle.
  • Add the shredded cheddar cheese, ham and chives to one half of the omelette. Using a wide spatula gently lift the plain half of the omelette and fold it over the meat and cheese. Let the omelette cook for a few minutes. You can use your spatula to peel up the omelette flap to see if the cheese is melting.
  • Once the omelette is cooked, tilt your pan and use your spatula to slide the omelette out onto a plate. Garnish with sour cream and fresh tomatoes or parsley.
