4 spreadable cheese wedges ((eg. laughing cow cheese))
1 pound deli sliced chicken breast
4 leaves lettuce
1 cucumber ((sliced thin lengthwise))
1 tomato (sliced)

Steps:

  • Cover each tortilla with a wedge of spreadable cheese. Layer sliced chicken breast, lettuce, cucumber slices, tomatoes on each tortilla.
  • Roll up, and cut into 1 inch slices.

2 store-bought rotisserie chicken breasts, finely shredded to yield 2 cups meat
1 1/2 cups arugula, chopped
1 cup mascarpone, at room temperature (8 ounces)
1/4 cup honey
1/4 cup whole grain mustard
Zest of 1 large lemon
Kosher salt and freshly ground black pepper
Two 12-by-9-inch whole wheat or plain Lavash breads

Steps:

  • Mix the chicken, arugula, cheese, honey, mustard and lemon zest in a medium bowl until smooth. Sprinkle with salt and pepper.
  • Divide the mixture in half and spread over the breads, leaving a 1/2-inch border. Starting at the longest edge, tightly roll up the breads like a jelly roll. Cut each sandwich into eight 1 1/2-inch-thick pieces using a serrated knife and serve.

8 boneless skinless chicken breasts
6 ounces sliced ham
8 ounces smoked bacon
4 eggs beaten
3 diced pickles (dill, sweet, or sours, your preference)
1/2 cup butter
3 tablespoons flour
2 cups chicken stock
2 tablespoons chopped tarragon

Steps:

  • Place chicken in between plastic wrap and pound out until 1/4-inch thick. Place 1 slice of ham and 1 slice of bacon onto each breast of chicken. Lightly scramble the eggs and let cool. Divide eggs evenly over chicken and spread out. Top with diced pickles and roll into pinwheels. Once chicken is rolled, tie with string to secure. Heat the butter in a saute pan and brown chicken rolls. Remove chicken rolls from the pan and set aside. Add flour to the same saute pan, and cook until light brown. Add the chicken stock, making sure to stir out any lumps. Return chicken to pan and place in a preheated 350 degree oven for 1 hour. Remove from oven and sprinkle with chopped tarragon. Slice each breast into 4 pieces and serve with 2 tablespoons of sauce.

This is a different twist on a pinwheel than what I'm use to. It is very good! I had them at a New Year's party and asked for the recipe...here it is. :)

3 boneless skinless chicken breasts
4 large whole wheat tortillas
1 cup chicken broth
1/2 cup fat-free cream cheese with garden vegetables, softened
1/2 teaspoon garlic pepper seasoning
1/4 teaspoon cayenne pepper (optional)
1 1/3 cups coleslaw mix
1/3 cup green bell pepper, chopped

Steps:

  • Combine chicken and broth in large nonstick skillet.
  • Bring to a boil.
  • Cover; reduce heat.
  • Simmer 8 to 10 minutes or until chicken is done.
  • Drain; cool slightly.
  • Shred chicken or cut into thin strips.
  • Spread each tortilla with cream cheese to within 1/2 inch of edges.
  • Sprinkle evenly with garlic pepper and cayenne.
  • Top evenly with chicken, slaw mix and chopped pepper.
  • Press lightly to flatten.
  • Roll tightly.
  • Wrap each roll in plastic wrap.
  • Refrigerate until ready to serve.
  • Remove plastic wrap from rolls and cut each into 6 pieces.
  • Use wooden picks for serving.
  • Serve with salsa on the side.
  • Refrigerate leftovers.

1 cup finely chopped cooked chicken
1/2 cup chopped lettuce
1/2 cup shredded reduced-fat sharp cheddar cheese
1/3 cup chopped green onion
1/3 cup minced red bell pepper
4 ounces light cream cheese, softened
2 tablespoons low-fat sour cream
1 tablespoon hot red pepper jelly
3 (9 inch) flour tortillas

Steps:

  • In medium bowl, combine chicken, lettuce, cheddar cheese, green onions and red pepper.
  • Set aside.
  • In small bowl, beat together cream cheese, sour cream, and red pepper jelly on low speed of electric mixer.
  • Spread 1/3 cream cheese mixture over one side of tortilla.
  • Sprinkle with 1/3 chicken mixture, leaving 1/2 inch border at top just covered with cream cheese mixture (so you can seal it closed.) Roll up tightly, jelly roll style.
  • Wrap tortilla roll in plastic wrap.
  • Repeat with remaining tortillas and filling.
  • Refrigerate for 2 hours.
  • Trim off the ends and cut each roll into 8 slices, serve cold.

4 boneless skinless chicken breast halves
1/8 teaspoon plus 1/2 teaspoon dried basil, divided
1/8 teaspoon salt
1/8 teaspoon garlic salt
1/8 teaspoon pepper
4 thin sliced deli ham
2 teaspoons lemon juice
Paprika
ORANGE SPREAD:
1/2 cup mayonnaise
1 teaspoon grated orange zest
1 teaspoon orange juice

Steps:

  • Flatten chicken to 1/4-in. thickness. Combine 1/8 teaspoon basil, salt, garlic salt and pepper; sprinkle over chicken. Top each with a ham slice. , Roll up jelly-roll style; place seam side down in a greased 11x7-in. baking dish. Drizzle with lemon juice and sprinkle with paprika. Bake, uncovered, at 350° for 30 minutes or until chicken juices run clear. Cover and refrigerate., Meanwhile, for orange spread, in a small bowl combine the mayonnaise, orange zest, orange juice and remaining basil. Cover and refrigerate until serving. ⅔ cup pesto sauce
8 oz chicken, cooked, shredded
½ cup shredded parmesan cheese
kosher salt, to taste
2 eggs, beaten
fresh parsley, chopped, for garnish

Steps:

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Roll out the puff pastry sheets on a lightly floured surface to a 9x12-inch (23x30 cm) rectangles.
  • Spread the pesto sauce over the sheets using a spatula or spoon. Top with the shredded chicken, Parmesan, and salt.
  • Starting from a short end, carefully roll up the puff pastry to form logs.
  • Slice the logs into ½-inch (1 cm) rounds and arrange them on the prepared baking sheet, spacing 1 inch (2 cm) apart. Brush with egg wash.
